Tangy Slow Cooker Pork Roast

The flavors of this are delicious. I added garlic chili sauce and Worcestershire sauce and instead of water used beef broth. I added new potatoes under the roast and carrots on the side. Really good and tender but I just can't seem to get used to the consistency of the pork in the crockpot. When it is shredded it is great but sliced is not my favorite.

Janet's Rich Banana Bread

FANTASTIC!! Perfect banana bread.My son used to hate it now he LOVES it. I mash the bananas and add mini chocolate chips. I also double the recipe and keep a loaf in the freezer.

Vietnamese Fresh Spring Rolls

This tasted just like our favorite Vietnamese resteraunt. I also added carrots and cucumber for crunch. I used regular basil but think the thai basil has a much better flavorWe had a few issues with the rice paper wrapper but figured it out. It was a fun family dinner. The sauce with crunchy peanut butter and hoisin sauce was great!

Split Pea Soup

This is a wonderful recipe!. I sauteed the onions and garlic in olive oil and added the carrots and celery in for a bit. I added them into the soup and it added a wonderful flavor! I used 2 bay leafs, majoram and thyme to taste. I did not add salt as the ham was salty. I also boiled the ham bone in chicken broth for about 1.5 hours and removed and chopped. It was delicious soup!

Sweet Potato-Turkey Meatloaf

THis was very good! I also microwaved my potato and added about 1 to 1.5 cups italian brea crumbs. I like to make my meatloaf in 9x12 pan so all the side and top get browned. Less mushy. I added the sauce to the top to cook but it needed more. Next time I will add additional sauce to the loaf about 15 minutes before it is done. My DH and I also added Franks Hot Wing sauce to our portions at the table and it was REALLY YUMMY! If you like a little kick, try it!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

This was fantastic!! I only put a dash of chili powder in the rub and a dash of tobasco in the sauce. I let my roast marinate 24 hours. I baked it in my oven at 300 for 1 1/2 hours. I basted it when there was 20 minutes left and flipped it over and basted the other side. There was LOTS of sauce but I loved it. I made spanish rice but next time I think I will make brown rice because it will be so good with the sauce! The whole family loved it- even the kids!

Shredded Beef for Tacos

This was a delicious recipe. The meat was very tender. I had a defrosted roast and cooked it all day in the crock pot with El pato and wine. I think I will try salsa next time as it was very "smokey" from the chipotle in the hot sauce. I will definately make again!
