Balsamic Chicken and Fresh Mozzarella

My husband loved this dish! After marinating, I emptied the vinaigrette and used fresh dressing. I cooked it on the stove top for 15 minutes, then in the oven for another 25 minutes (I used thick filets). with 5 minutes left I put fresh mozzarella on the chicken and sauteed the tomato to soften it up. It's a keeper.

Basic Corn Muffins

It's simple, quick to make and delicious. Definitely a keeper. The only thing I added was 1tsp vanilla.

Extra-Yummy Fluffy Pancakes

These are SO GOOD! I've tried other pancake recipes to mix things up and I always come back to this one because it is consistently delicious. One change I make to it: I add more flour to make the total 1 2/3C flour. It helps thicken up the batter.

Chewy Cocoa Brownies

While this was an ok-tasting dessert, there is no way I would call this chewy or categorize it as a brownie. It was chocolate cake. It was a decent chocolate cake but a highly disappointing brownie. I won't make this again.

Fluffy Pancakes

These pancakes were just OK. Had no issues with the vinegar as some other posters mentioned. However, I did have to add in another 1/2 cup flour since the batter was so thin. I was expecting a heavier batter but it was not the case. It was fine with the additional flour. I also added in 1tsp vanilla which was a nice compliment to the flavor. Not sure I'd make these again though.

Lobster Bisque

I really enjoyed this! I also followed the advice of another poster and added more spice to give it some kick as well as 2-3 TBL of tomato paste for some color. In addition, I used 1C half & half as well as fat free half & half instead of milk. It was nice and creamy. Then I kinda "cheated" an added a couple cubed new potatoes (I know, it makes it more a chowder than a bisque but I really wanted it to have more texture). But I will definitely make this again.

Pumpkin Spice Cupcakes

These are the best pumpkin cupcakes I've made. I followed the recipe exactly as followed. I'm not sure why so many altered the recipe. The ONLY thing I changed is the baking time. I set the time at 20 minutes. They're perfect!

Sour Cream Coffee Cake

These are pretty good. I actually made them as muffins instead of a whole cake. I just had a little bit of difficulty with the cinnamon/sugar topping. Most of it came off as I ate it so it was a little messy. Otherwise it tasted great and was easy to make. Oh, and since I didn't have sour cream I used fat free Greek yogurt and that worked like a charm!

Swope Bread

This is definitely an easy bread to make. I love that there's no yeast in it - makes it mighty quick to make. Personally, I love the sweetness of it, but if you're not into it you could easily cut down on the sugar to maybe 2/3 cup. Still, it's delicious!

Baked Zucchini Chips

These were good and I'll make them again since they're pretty easy. I dipped the zucchini in flour first, then egg (I used Egg Beaters), then breadcrumbs. Then I re-dipped into the egg and coated a 2nd time. So they were completely covered. I did the same for sweet potato chips too. Both types were yummy!

Zucchini Souffle with Monterey Jack Cheese

I really liked this. The combination of flavors and textures works well. The only changes I made: added 1 sliced shallot, 2 tablespoons parmesan cheese and I substituted 1/3 cup flour with 2 teaspoons baking powder for the 1/4c biscuit mix I didn't have.

Cheese Souffles

Overall the souffles tasted fine (and looked good), but these were a lot of work and but I didn't love them enough to give 5 stars. I may need to experiment with some different flavors like adding a vegetable or something.

Cinnamon Rolls II

This took a long time to make. But perhaps it's the extra love required that makes them so darn good. I can't believe how delicious they are. My husband also gave his two thumbs up. Yummy and decadent. However, because of the work involved, I'll probably save this recipe for company or a holiday.

Pumpkin Chocolate Chip Muffins

Super yummy and super easy to make. The only thing I did differently was to melt the chocolate chips and add them to the muffin tops as a swirl. Everything else was the same and just delicious.

Chocolate Swirls

These were fair. Certainly not a loss, but I'm not sure I'd make them again. I have a different recipe for chocolate swirl cookies I like better, they come out a little fluffier. This recipe produced chewier cookies - I'm not sure I'd say there were like brownies, but not crispy or soft like cookies normally are. Taste-wise they're fine. The combo of flavors works.

Chocolate Chip Cream Cheese Muffins

These came out great. I was a little nervous at first since the dough seemed a bit on the "gummy" side, like it had too much flour, but the end result is almost perfect. The muffins are light, fluffy and have the right amount of chocolate in them. I'll make these again.

Pumpkin Streusel Muffins

Pretty much anything with pumpkin in it is gonna have me hooked. These were no exception. So good. And easy to make. I did make one change: I added 1/2 an egg and 1 tsp granulated sugar to the cream cheese. Once creamed together, I added a small dollop into the muffins before baking. It's a wonderful mix of flavors and textures. Just a good recipe all around.
