Classic Rice Pilaf

Awesome! Has become a favorite in our home. Just served it to the kids and grandkids, and everyone raved. My grandson even asked for seconds. You can add just about anything to this. I throw in pieces of broccoli, carrots, mushrooms and celery and it's fantastic. I deviate a little from the directions in that I add the rice to the butter/oil mixture while it's still in the saucepan, then scrape that into the casserole dish. I then boil the broth mixture and any vegetables I'm adding in that same pan, and pour that into the rice mix. Turns out great every time. Thanks Chef John!

Chicken & Sausage Gumbo Creole

Awesome!!!! Thank you so much for sharing this recipe. This was one of the best things I have eaten in a long time. Fantastic flavor! Let me start by saying that I'm not a great cook, I have VERY simple and picky tastes in food, my guts won't do anything spicy, I have never eaten gumbo, and honestly, I didn't even really know what it was. But looking for something new, I checked out the ingredients and knew I could like it. And let me also say that I HATE when people review recipes after they have altered it beyond recognition, so I hope I have not crossed that line. But I did read a lot of the reviews, and decided to make the minor changes folks suggested. I used red pepper instead of green (I happened to have one on hand), I eliminated the hot sauce and added a sprinkle of cayenne pepper instead (since I'm a spicy wimp I actually think I could do without it altogether), I added one can of black beans, used fresh mushrooms instead of canned, doubled the salt, soy sauce and Worcestershire sauce, and added two sliced Aidell Cajun Style Andouille sausages. Another one of my major dislikes: casings on sausage make me want to vomit, so I peeled them off before I sliced them. :-) I also cannot stomach giant chunks of cooked tomatoes, which remind me of blood clots. :-) I used S&W "diced" tomatoes with green chilies, thinking "diced" meant about 1/4" cubes, but they turned out to be chunks the size of my nose. Next time those suckers get chopped into little pieces!

Chicken Breasts in Caper Cream Sauce

Excellent!! Really tasty. I'm a rookie cook, and followed the recipe as noted, with two exceptions: I added garlic to the butter when frying the chicken, and used heavy whipping cream. It was delicious! Thanks for posting!!!

Chicken Scallopini

Excellent recipe! I'm an amateur cook, and followed everything to the letter. I might prefer a TAD less lemon juice, but that's just me. It was still incredibly flavorful and complex. If this was served to me at a restaurant, I'd be coming back for more. I have very simple tastes, and served it over mashed potatoes, along with sauteed Italian broccoli. This is DEF a keeper. Thank you!
