Avocado Asian Black Bean Salad

Reviewed: May 13, 2010
This is one of the tastiest black bean salads I've made - a nice subtle flavor change from the usual. I'd recommend using lime juice instead of lemon.

Margie's Sour Cream Pork Chops

Reviewed: May 13, 2010
MMMM tasty sauce! I used cider vinegar, and used sage instead of savory as that was the closest substitution I could come up with (out of necessity). Both times I've made this, I've just prepared it on the stovetop to keep the kitchen cool. Brown the pork and then simmer in the sauce until cooked through - served with couscous and dried cranberry pilaf.

Creamed Spinach III

Reviewed: May 8, 2010
Even though I tweaked the method of preparing this, I used virtually the same ingredients, so I'm giving the recipe a 5 for taste... My quicker method was to saute the coarsely chopped fresh spinach in the butter until wilted. Next I sprinkled on the flour and mixed well. Nutmeg, salt, pepper, and a little garlic powder were followed by 2% milk. Simmer for a few minutes before serving.

Baked Honey Mustard Chicken

Reviewed: May 8, 2010
I mixed up the sauce and used it as a marinade for ICF chicken breasts. Baked at 350 for 45 minutes (covered with foil for 30 minutes)

Chinese Pepper Steak

Reviewed: May 6, 2010
This recipe immediately went into my recipe box! Will definitely make it again. My dinner plans changed so the meat marinated for 24+ hours and was very delicious - I would recommend marinating at least a few hours or overnight. I only used red & yellow bell pepper and green onions because I had no fresh tomato. Added garlic and crushed red pepper for extra kick.

Avocado Ranch Salad Dressing

Reviewed: May 2, 2010
Beautiful color and tasty salad dressing. Subbed 2% milk for the buttermilk and added more than 1 tblsp to make a nice salad dressing consistency. Only other thing I changed was to use cider vinegar instead of white.

Apple Banana Smoothie

Reviewed: Apr. 29, 2010
Definitely a good source of fruit in the day's diet! Didn't have a Gala apple - only a Granny Smith and that was very good in it too. I did add several ice cubes because the banana wasn't completely frozen and also a small amount of vanilla because in my opinion everything tastes better with a little extra vanilla.

Lemon Pudding Cake I

Reviewed: Apr. 29, 2010
Lemon Pudding Cake has been a favorite in my family, too. Decided to try a different recipe this time with slightly different ingredient proportions. Was very pleased with this cake, the cake part was extremely light and fluffy and while there was sauce on the bottom, it wasn't as much as I was used to. However, I'll probably make this recipe again. We liked it and our guests seemed to like it too!

Honey Mustard Dressing I

Reviewed: Apr. 24, 2010
I liked this a lot...the soy sauce gives it just enough of a different flavor to stand out from others...I used Dijon Mustard and put together a salad of romaine lettuce, halved red grapes, garlic croutons and cashews. An odd combination, I know, but it worked well!

Kelli's Fried Green Zucchini

Reviewed: Apr. 23, 2010
I halved this recipe for a wonderful snack. I dipped a few pieces of the zucchini in the egg and then shook in a plastic bag to coat with the bread crumb mix.

Rhubarb Sauce II

Reviewed: Apr. 23, 2010
I added vanilla at the end of cooking as suggested by other reviews... vanilla makes any dessert sauce better! A delicious (and quick!) spring dessert served over angel food cake with a whipped cream garnish...

Mom's Paprika Chicken with Potatoes

Reviewed: Apr. 22, 2010
Easy, tasty, healthy. To speed up the cooking a bit, I did pre-cook the potatoes and carrots (medium sized chunks) in water about 10 minutes and then saved the cooking water to add to the skillet as needed. Also pre-seasoned the chicken before browning, then added more seasoning to the skillet after adding the veggies. A definite keeper recipe!

Peanut Butter Chicken

Reviewed: Apr. 12, 2010
Started with poached chicken, so sauteed the onion and simmered the tomatoes first before adding the chunks of chicken and peanut butter. I read all of the previous reviews and decided to add some more flavors - soy sauce, brown sugar, lime juice, and a little Thai Sweet Chili Sauce. No mushrooms - and served over brown rice. Fresh chopped cilantro would have been a great garnish!

Lemon Barbeque Meatloaf

Reviewed: Apr. 7, 2010
Used 2% milk instead of water and went very easy when adding the cloves (just a dash). No other changes and it was very moist and tasty. The topping sauce is excellent. Definitely high on my list of favorite meatloaf recipes...

Spinach Salad with Warm Bacon-Mustard Dressing

Reviewed: Apr. 4, 2010
This made a really good lunch salad for me. I love the dressing - although I did make a couple of changes because I used bacon grease instead of olive oil and cider vinegar instead of white wine vinegar. Instead of mushrooms I used cubed cooked potato and mixed everything together in the skillet, slightly wilting the spinach. The potato gave it a slight taste similarity to German Potato Salad.

Orange Island Chicken

Reviewed: Apr. 3, 2010
I went with the previous reviewer's comments of adding some sweetener to the marinade and used several tsps of dark brown sugar. Also used fresh grated ginger. I briefly sauteed sweet potato chunks in the same skillet I used to brown the chicken, and then finished roasting them in the oven. Perfect accompaniment with the orange flavored chicken. Delicious meal.

Italian Sausage With Spaghetti

Reviewed: Apr. 1, 2010
A pasta sauce this good should have a fancier name! No fresh mushrooms on hand - but they will be for sure next time. I used 2% milk so added a slurry of about 1 tsp flour to thicken it up a bit.

Mindy's Pork Tacos

Reviewed: Mar. 31, 2010
I recently ate a pork chalupa at a local restaurant and enjoyed it so much so I was very anxious to try this recipe. I started with a leftover boneless pork chop that I sliced thin and sauteed with onion. Added some oregano, garlic, and a tiny bit of balsamic vinegar. I layered the meat mixture on a corn tortilla, added cheese and made a quesadilla. EXCELLENT way to give leftover pork a completely new flavor.

Cream of Spinach Soup

Reviewed: Mar. 29, 2010
Even though I made this using very different steps, I used the same ingredients and so am rating this a 5 for taste. I had fresh spinach to use, so sauteed it briefly in the butter. Sprinkled the flour on top and mixed well, cooking for a minute or so. Then added the milk, chicken granules, onion powder, and a little nutmeg. Served the blended soup with a garnish of sour cream. Tasty.

Pasta with Mushroom and Zucchini Sauce

Reviewed: Mar. 25, 2010
I grated the zucchini and sliced the onions and mushrooms and added red bell pepper. 2% milk with an added tblsp of butter made this plenty creamy for me. Thyme, salt, and black pepper and a garnish of chives made for a very tasty pasta sauce.
