Rhubarb Cheesecake

FABULOUS recipe!!! Delicious and very simple to make. I did add about a teaspoon of vanilla to the cream cheese mixture as well as a couple pinches of freshly ground nutmeg. Will definitely be making this one again!!

Bolognese Stuffed Bell Peppers

Excellent recipe! I'm sure it would have been luscious as written, but since I'm not a huge fan of marinara sauce, in place of the marinara I added 1 T chopped fresh basil, 1 heaping t. chopped fresh oregano, 1 T chopped fresh parsley and 1 can of petite diced tomatoes, drained. This recipe was simple and delicious! Thanks for sharing KASM75!!! Will definitely make this again!

Fried Onion Rings

This recipe was GREAT! I made a few small changes. I used O'Doul's instead of real beer, I added about 1 1/2 t. Old Bay Seasoning along with the salt and pepper. And last, but not least, after coating the onion rings with the batter, I dipped them in panko bread crumbs. WOW!! Extra crunchy and beautiful golden brown! Left my camera at work, so took a pic with my phone but can't figure out how to send it to the computer from the phone. Will post a pic as soon as I get that taken care of. :-) Thanks for sharing this recipe...it is wonderful!

Baked Coconut Shrimp

GREAT recipe!! I thought these were fabulous! The only change I made was to use curry powder (about 1 1/2 tsps.) instead of cayenne. Just because I like curry. :-) I was in a bit of a hurry, so I used some pre-made "Sweet Chili Sauce" from my local market. It was really great! I also sprayed the prepared shrimp with cooking spray prior to baking, just to be sure they'd be crunchy. Thanks for this recipe! I'll use it OFTEN!

Spaghetti with White Clam Sauce

Not being a huge marinara fan, I nearly always choose white clam sauce for my pasta. So, I've tried lots of different ones. I was very disappointed with this particular recipe. (Sorry!) I thought it used WAY too much olive oil. (1/2 cup!) The sauce was very thin and watery, even though I later tried to doctor it up by adding a slosh of heavy cream. The flavor of the sauce was pretty good. But it was much too thin and watery and oily for my taste. Not a fan of this recipe, wanted something more rich and creamy. Just my personal preference. :-)

Creamy Caramel Flan

This flan was very simple to prepare, but it was just a little too thick for my taste. I was wanting more of a "custard-like" consistency, but this turned out pretty solid and sticky. It still had great flavor and since it was so easy, I'll probably make it again while I keep looking for the perfect recipe that is more like a custard-y.

Iced Pumpkin Cookies

These cookies turned out WONDERFUL! I just drizzled the icing over the top of the cookies instead of spreading it. These are fantastic because they're not too sweet. My 16 year-old daughter cllaed them "rich and delicious"!!

Coconut Custard (Zucchini) Pie

I was a bit skeptical once I mixed the ingredients and prepared to pour the mixture into the pie shell. But this pie was AMAZING!!! Absolutely delicious, and nope.....not even my picky teenager could tell the pie had zucchini in it! I'll definitely make this again!!
