Sausage Baked Ziti

Great recipe! Made some changes only in technique and type of ingredients. We used hot Italian sausage instead of mild and low fat cottage cheese instead of ricotta. Sauteed the onion until it was soft before adding the sausage. Added the garlic in the last five minutes so as to not burn it. Then added the tomato and basil sauce. We raise our own tomatoes so we used own own tomato and bail that we put up each year. Everything else was as written in the recipe. We will be making this again and again!

Eggplant Parmesan I

This is a great recipe! As it is written I give it 4 stars. With a little added ingredients I would give it 5. I could tell right off that the cheese filling would take the eggplant and sauce right to the top and it did! This recipe can stand on it own but I like mushrooms so I added some sauteed crimini mushrooms on top for an added meaty texture. Also, I sided with the egg wash and Italian bread crumbs before browning the eggplant. Oh yea, and I didn't sweat the eggplant as I purchased ripe young plants. The flavors were beautiful!

Stir Fry Tomato and Eggs

I was first taught this recipe when I was living in Tianjin China while on work assignment. The secret for truly authentic is to start the eggs on low temp and stir with chop sticks in order to get the long egg strains similar to egg drop soup. Take the eggs out and set aside. Turn up the heat to med-high, add a little more oil and then stir fry the tomatoes. Once done take off heat and add eggs back to wok to re temper and serve. Thanks for reminding me of this great authentic dish!

Summer Tomato Salad

Loved this simple blend of the romas and the cherry tomatoes. Due to the ripeness of our tomatoes this was very moist and did not need a "sauce". Added fresh mozzarella for a texture blend. It was very enjoyable!
