Pretzel Bread

FUN and SO easy to make! I used Red Star yeast and oil instead of butter (I started following this recipe after I started the pretzel roll recipe on Food & Wine's website...they used oil). I preferred the other recipes baking instructions: 450' for 10-12 minutes, so I stuck with that and was happy. I left the salt off some of the dough I shaped into knots and dipped those in melted butter and sprinkled with a Vietnamese Cinnamon & Sugar mixture...requested by my boyfriend. I had to force myself to stop eating these so we have some to go with our tomato soup for dinner!

Dark Chocolate Cake II

Great recipe--super easy! I used this recipe to make rocky road cupcakes. I put three mini-marshmallows on the top of each cupcake...I thought they might bake in and disappear (like they do with Disappearing marshmallow brownies recipe on this site) but to my happy surprise, they showed through. I topped with chocolate buttercream and a mix of mini marshamallows, chopped pecans, and mini chocolate chips. They were SO cute and quite tasty! I think I ended up with about 30 cupcakes, filling them 3/4 full. **I added instand espresso instead of brewed coffee, since I had that on hand.

Baked Shrimp with Feta and Tomato

What an easy, elegant meal! Fit for any night of the week--yet a wonderful recipe you could serve to guests! I followed the ingredients of the recipe--using fire roasted diced tomatoes. Such amazing flavor! I sauteed the shrimp about 1.5 minutes on each side...slightly undercooked. Then baked for 15 minutes; much longer and you risk overcooking the shrimp. Served on top of orzo with "Baked Zucchini Chips" and fresh fruit. Yum! It really is an impressive looking dish!

Supreme Strawberry Topping

Amazing. Simply cannot go wrong with this fast, easy, DELICIOUS topping! It would be the perfect topping for pretty much anything! I enjoyed it with pancakes--with a little thickening (cooking longer or cornstarch, perhaps), it would be wonderful on top of cheesecakes (otherwise, it would sort of pool and not be as pretty...but would still taste amazing...). Definitely make ahead of time to allow it to chill in the fridge. An easy go-to recipe!

Red Velvet Cupcakes

Mmm....yum. mmm... very moist and flavorful. this recipe has more cocoa powder than other recipes I've recently tried and you can definitely taste it. Most other recipes also call for two entire bottles of red food coloring, but this one proves to be a good, vibrant red color without the extra coloring. Saves me $3/bottle - definite perk! Mmm... did I mention these cupcakes are devilishly moist and delicious?!

Scrumptious Penuche Frosting

Ridiculously sweet, and really not my thing... but I made this to top cupcakes for a client...and she said it was delicious and perfect, so there you go! The instructions are well-written, which is helpful. I will add a tip: if you're icing LOTS of cupcakes (I did 4 dozen), part way through icing it will start to crystalize... simply stir in a bit more cream/milk to get the right consistency again and you're good to go!

Strawberry Coffee Cake

18,300+ people have been waiting FAR too long to try this recipe!! (That's how many people have it saved to date...). This recipe is insanely easy and produces delicious results I look forward to sharing with my coworkers tomorrow. I'm surprised how little butter there is in the cake... it's so moist and flavorful. My only slight modification is using some streusel mixture I had leftover in the freezer, which was the same minus pecans. Excuse me while I go sneak another sliver...

Caramel Brownies II

Amazing. I cannot believe how tasty these gooey and nutty brownies turned out. I love it! Rather simple recipe that anyone can make. Patience is key when melting the caramel...it took 15-20 minutes over very low heat, as I didn't want to risk ruining it. A big hit with the coworkers--I didn't, and wouldn't, change a thing!

MMMMM... Brownies

These really are wonderful brownies. The batter is super tasty =) I tried to sample a warm brownie, fresh out of the oven and I was so nervous they weren't baked long enough and they weren't going to taste very good. Patience, fellow brownie lovers! It will pay off! They are perfectly fudgie and so tasty! Give them an hour to cool and you'll be devouring them!

Coconut Orange Cupcakes

Maybe it's because I'm a coconut fanatic, but these are awesome-good. A quick note before I go on: they are more like a muffin than a cupcake, as some others have commented. They are a bit heavier and not as sweet as a cupcake... However, I love the light citrusy flavor they have and the coconut topping takes them over the top. I decided to use sugar in the raw for the topping and it worked out nicely. My batch: I only was able to get 16 cupcakes and they baked in about 18 minutes. And I skipped the mandarin oranges... just didn't feel like adding them. I'd make these again in a heartbeat. My coworkers are loving them! (PS: my crappy photo from my phone does not do these babies justice!)

Annie's Fruit Salsa and Cinnamon Chips

Fresh and wonderful! Excellent idea--a fun twist on traditional salsa. I had this in my recipe box for YEARS and finally made it yesterday... should NOT have waited! What a hit! I used granny smith apples, kiwi, strawberry, and some blueberries for color. I don't think you need all that extra sugar if your fruit it in season! The preserves are a must though! --I used whole grain pitas and that worked quite nicely. Carefully shook them in a ziplock bag to coat. --For presentation, I used the idea of baking a tortilla over a bowl for 15 minutes...then piled the chips in there. So fun! Will post photos!

Fluffy Peanut Butter Frosting

Excellent recipe! Whip for longer than you might want to--it's worth it! Add more liquid if necessary--recipes won't necessarily be exactly how you prefer them. I thought it worked out VERY well and went nicely on brownies topped with a mini-reeses. YUM!

Banana Pancakes I

Unbelievably delicious. I was excited to make these--and I am SO glad I did! The banana has incredible flavor in here. I did make modifications, using buckwheat flour in place of all-purpose. Added cinnamon and vanilla (a must-add for me to most things I make!) I halved the recipe, but I still used the whole egg. I sprinkled one with chopped walnuts and it was great--chocolate chips might be a nice touch. **I followed the recommendations of others and cooked a little slower to make sure they didn't seem mushy. They were perfection! Will post photos soon. YUM! Great for anyone who likes banana bread!

PHILADELPHIA® Fruit Pizza

Yum! Great flavors--I added vanilla bean to the cream cheese mixture. Also, did individual-sized by slicing cookie dough, placing in lined muffin pans and baking as directed. Worked wonderfully and was a great hit! Fruits I used were blueberries, kiwi, strawberry, and mandarin oranges. Will post photo. PS: I have made with orange marmalade in the past, which works as well as apricot. Gives such a nice sheen to enhance the appearance.

Chewy Jumbo Chocolate Chip Cookies

INCREDIBLE cookie! I am so, so pleased with how this turned out! Perfectly chewy and a little crunch... pack with chocolate chips and definitely add the walnuts if you can! Wow. This has been a huge hit--a new favorite chocolate chip cookie recipe! It reminds me of the expensive cookies you get at check-in at DoubleTree hotels! So excited to make again! **Pretty much same recipe as the Land O' Lakes recipe. It's a huge hit when I make with M&Ms **Update 4/26/13: Followed Naples review of reducing AP flour by 1/2 cup and added salt. These bake up SO beautifully as JUMBO cookies! I am excited to share with the neighbors :)

Southwest Stuffed Chicken

One word: wow. I can't believe how fabulous this recipe is! The flavors blend incredibly well and I LOVE the use of monterey jack cheese--it melts perfectly and tastes phenomenal. I used several toothpicks to hold this together to keep from oozing out--just be sure to pull them all out before serving. Don't wait to make this! A great, easy recipe!

Buster Bar Ice Cream Dessert

While I haven't eaten this as a whole, I tasted each of the components and it's going to be amazing! (I made it for a dessert menu special at work and couldn't cut into it quite yet.) The fudge sauce is KILLER!! Paired with a tasty oreo crust and delicious vanilla bean ice cream, how could this not be an awesome treat?! A great treat for a hot summer day! This fudge sauce is a keeper!

Orange Citrus Vinaigrette

I was looking for a light dressing for my salad tonight and this worked great! Mixed greens, blueberries, peaches, tomato, scallion, fresh basil (yes, a hodge-podge as it's just me tonight!)...topped with this vinaigrette-it was a nice FRESH and light addition! I skipped the cilantro since I didn't have it and didn't want it in here even if I did have it. Also was lazy and didn't feel like mincing garlic, though not entirely necessary, I'm sure it would've been a fine addition.
