Basic Corn Muffins

WOW! Sure, they're basic in that they have your typical ingredients of a standard corn muffin, but this is super quick and easy and yields great results! My *ONLY* complaint is that it says spray or line the muffin tin... well, I chose to line and I should've sprayed too...so a good chunck of the muffin bases got stuck, darn it! I followed Doug's tip of using buttermilk, only because I ran out of milk and had powdered buttermilk on hand. Light and tender - wonderful with honey and butter!

Bean, Bacon and Pepper Soup

Wow! A pretty quick, delicious meal we enjoyed after a busy day of packing... it was easy to throw together with things I had on hand and am trying to use up. I halved the recipe and it made about 3 servings as a main dish (served simply with homemade cornbread muffins). I realize now I forgot the bay leaf and omitted the sugar. I also used white navy beans, as it's what I had in my pantry. I followed the direction of Naples and only pureed about half the mixture, as I prefer to have some of the texture of the beans and veggies. YUM!!

Basil Chicken over Angel Hair

We had delicious local tomatoes that were looking to be used up, along with the last of my fresh basil plants... this was perfect! I skipped adding the chicken and used whole wheat linguini to use up an open box of pasta...but otherwise followed the recipe. I loved it! Light and delicious - loved the little boost of flavor the hot pepper sauce added. This is a keeper for a quick go-to meal!

Golden Egg Bread

We love this bread! Delicious on it's own, with butter, as a sandwich, for French toast... amazing French toast! Will be in the regular rotation of bread-making for when I need a tried-n-true recipe!

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

Aside from underestimating the spice-factor of this, I really enjoyed this dish! I modified the method slightly... didn't feel like dirtying extra dishes, and my small food processor is packed (moving soon!), so I just mixed the chipotle/salsa mix in a bowl and brushed on the base of the dish, laid the fish on it, then spread the remaining mix on the fish. I topped with the Lime tortilla chips (YUM!) and baked at 400 for about 15 minute. I didn't feel like having a runnier sauce, so I skipped the milk. To serve, I plated some jasmine rice, topped with the fish, added a little shredded lettuce and sliced onions...with the sauce on the side. Yum! Quick and delish!

Tomato Dill Soup

Yummy! A great recipe for some end-of-summer local tomatoes! I looove dill, so that was a delicious addition for me. I wasn't really sure about the "condensed" chicken broth, so I used regular...between that and the fact I didn't measure, I ended up with a soup that was slightly more watery than I would like, but it's still so tasty I don't really care. A little dollop of sour cream will add a nice touch of richness and tang that we like with our soup, so we're looking forward to a delicious soup with homemade bread for lunch tomorrow!!

Honey Wheat Bread II

I just made this and I can't stop cutting another slice. I don't get it. It's incredibly soft and fluffy and amazing. WE HAVE A WINNER! My bf agrees it's probably one of the best bread recipes I've made. I skipped the veg oil and used EVOO instead. I can't wait to try this again to see if I just got lucky, or if it's really a stand-out recipe! Can't wait to eat it with my Tomato Dill Soup tomorrow for lunch!! **Notes: I didn't knead it long in my KA mixer, as it was too heavy and dense, so I kneaded by hand for another 5-8 minutes. I was surprised at how quickly it rose, but likely due to all the other baking/cooking going on. Sliced beautifully!

Before this even had a chance to simmer, I tasted the broth so I could start thinking about what I might need to add to enhance the flavor... to my surprise, it was already delicious! No measuring for me. And I hate having a measely 1/2cup or so of beans hanging around, so I tossed in the whole can. I just realized I didn't add the green beans...oops! I would've done frozen if I added them anyways. --My *ONLY* criticism, something I should've trusted my instinct on, was the carrots. I knew I should've either chopped them smaller or cooked them longer. I ended up letting this simmer for awhile longer to cook the carrots more. Since I had already added the pasta at that point, the pasta ended up a little too soft... bummer! The flavor is so irresistable I found myself sampling the bowls I had portioned out for lunches... mmm! Looking forward to lunch tomorrow! **Tip: add the dried pasta toward the end of simmering and you can skip the extra step of cooking the pasta. Just be careful you don't cook too long!

Spicy Chicken Breasts

No complaints on this simple chicken dish! I like finding "create-your-own" spice blends, since I don't buy many pre-made seasonings. This fit the bill and was especially great because it's basic spices I have on hand all the time. **Served over a salad.

Apple Chutney Chops

I loved this! A perfect dish to kick of the Autumn season! I did have to play with this a little bit because I didn't remember I was out of honey until I already had the chopped fruit in the pot... I subbed (pure) maple syrup for the honey and, cutting this in half, I used one honeycrisp apple and one pear. I measured nothing, just a glug here, a pinch or two there... it was wonderful! Perfect medly of flavors - the curry wasn't overpowering at all, the ginger gave just enough of its heat. And I just realized I forgot the mustard. Oops! To give the pork a bit more flavor, I used a seasoning salt and a little sprinkle of allspice. Instead of the veg oil, I used a small pat of butter. Lovely... simple... delish!

BLT Burritos

Forget dirtying another bowl, I just built these into the wrap as I went. I am not a big mayo fan, but give me Ranch and I'm in heaven! I used some healthy (low carb, higher fiber) wrap, while my boyfriend stuck with the mayo and toasted white bread (...and just 4 measily, very thinly sliced tomato... Southern boy!!) :) Both of us really enjoyed our light dinner tonight. Can't go wrong with a classic!

Black Bean Soup with Bacon

I know some people will be irritated with my review, since I REALLY tinkered with this recipe big time! But... here goes! -I think a lot of flavor would be lost if I nuked everything, so I did this on the stove. Taking some comments from Naples review, I picked up a poblano to add to this...and what the heck, I thought, a small sweet potato would be yummy too! I added the poblano and potato with the mirepoix/holy trinity. Once the veg cooked down, I added beef stock (canned) and tomatoes... fresh from the farmers market which I diced. With all the extra veggies and since I was halving the recipe, I only added one can of black beans (which I put in after the tomatoes simmered a bit). Here's where it may get weird: I had about 1/2 cup refried beans leftover from a different recipe and stirred them in. You'd never guess they were in there... I swear, but it made for a thicker broth. I didn't puree anything. Let me tell you how awesome this turned out! :) If you've read this far, hopefully you'll give the recipe a shot, even if you find yourself tweaking it too! It's delish! Trust me when I tell you: it's fantastically delicious!

Taco Dip I

I made this recipe x10 to serve a crowd and it went over fantastically well! I used the Taco Seasoning recipe from this site, since it's much tastier than any prepackaged stuff I've purchased...more expensive since I used good quality spices to make it, but it does wonders! I used full-fat sour cream, as it's what they sell at CostCo, though I am OK with a light sour cream. I like the color of green peppers but prefer red/orange/yellow, so I used some of those instead. So everything wasn't orange and red, I added thinly sliced green onions. Beautiful and tasty!

Shoyu Chicken

I wanted to love this - all the flavors really sounded like they'd go together really well to create an extraordinary chicken dish and I marinated extra long (24hrs +) due to change in dinner plans. While it was good, it certainly wasn't great or memorable in any way. I thought adding all the brown sugar would make it too sweet and the soy sauce too salty, but it did end up balancing nicely. It just didn't excite the palate!

Peanut Butter Trail Bars

A better name would be trail mix/granola. I was a bit skeptical that there was enough "glue" to hold this together, and it turns out I should've trusted my instincts. Since I had everything on hand, I decided to give this a try instead of using my usual granola bar recipe by Ina Garten. I hoped I found a nice stand-in... The flavors were great (helped out by a yummy granola mix I picked up at the farmers market) but after chilling, MAYBE half of it was salvageable as actual bars... if you want to call randomly-sized shards of granola mix "bars." I'll maybe give it another shot some other time...when I have granola hanging around again.

Bacon for the Family or a Crowd

Perfect, no-mess way to cook bacon! We used this method every day in culinary school and they do this in other restaurants I've worked at. We've always just popped the bacon in the oven, regardless of the temp...just cook until done! At home, I like to flip it over about half way through to make sure it gets crispy.

My-Hop Pancakes

Yum! A great-tasting, fluffy pancake! A SIGNIFICANT note though: Don't leave the lumps--my fault for not SIFTING my flour, I guess, but we ended up with some clumps of flour. Gross! While we were eating, my boyfriend asked what was different about this recipe... as I listed the ingredients, I realized I forgot the sugar! Delicious without it! :)

Luau Punch

Ridiculously sweet, but that's punch! The flavors were great and worked perfectly for a tropical-themed wedding reception food spread. Everyone really enjoyed this! I used ginger ale and sierra mist for the soda, making a really nice flavor combo. My sister suggested mixing in a can of tropical OJ concentrate (like orange-pine-banana, etc) but those are more expensive and the bride wanted to keep it lower cost. However, if you were doing a small batch or two, the flavor-twist OJ would be a great idea! I made a batch to test this and then frost the remainder in a bundt pan to use as the ice ring...I tossed in a few maraschino cherries for some eye-catching colors. Beautiful and tasty.

Teriyaki Tuna Steaks

My boyfriend went from turning his nose up to albacore tuna...to enjoying it in this tasty marinade! I would've liked a bit more flavor...perhaps let it marinate longer than an hour. Maybe use fresh ginger next time too, to pack more punch. Overall though, this is a flavorful and delicious recipe!

Robbi's M&M Cookies

Beautiful in appearance; flat in flavor. Tasting the dough, I crossed my fingers that the cookies would be better. Normally, I make mysef sick on the dough :) not the case here. :( The cookies, while pretty and perfectly baked, lack any flavor...aside from the chocolatey treasures hidden throughout. I decided to look at some reviews of the best chocolate chip cookie recipes on AR (based on reviews) and found that it must come down to the shortening! I'd rather have slightly flatter cookies but FLAVORFUL cookies, so I'll tray again with butter. Maybe pop in the fridge for a bit before baking.
