Pumpkin Snickerdoodles

a 5-star recipe for a delicious, lightly-spiced cake-like cookie! Perfect pairing for coffee! I agree the pumpkin wasn't overly prominent in this cookie, but the subtle flavor was actually preferred. I wouldn't add more pumpkin if you want more pumpkin flavor; try adding pumpkin spice? Maybe roll in spice/sugar mixture? Next time I want to try this with brown sugar instead of white to see if that changes the flavor or texture... also, I didn't have wheat flour on hand so I just used all AP. 8 minutes was a perfect bake time at 400' for me. Simply lovely!

Toasted Pumpkin Seeds

I've found out that pumpkin seeds just don't do it for me... flavor-wise, these are pretty good. I found myself wanting a little spice or smokiness (perhaps a smoked paprika...which I happen to be out of...). My boyfriend is enjoying them though, as-is. Next time we'll try for a spicy-sweet combo. *I stirred every 20 minutes, setting a timer to remind me. They were done in about an hour, with no issues of burnt seeds.

Basic Flaky Pie Crust

I'm struggling with the rating, as I DID get a really flaky pie crust for my pumpkin pie using this recipe. It was SUPER easy to throw together and rolling it out was a cinch! But, following the recipe and just using shortening resulted in a rather flavorless pie crust... I'll try again with half butter next time, as I think that will help tremendously. And I also found that it would've been nice to have it make a little more dough... to do nice, pretty edges, but I found that it was a little short. Again, I'll give it another shot before I give up because it really was wonderfully tender and flaky!

Frosted Walnut Brownie Pie

So easy, my non-baker boyfriend made these for my birthday... and I've found them to be a super quick recipe to use at work when someone wants brownies (I'm a pastry chef at a restaurant...sometimes the cooks ask for a "snack"). At work we use valrhona cocoa and local butter, which makes them aMaZiNg! I'm not much of a fan of frosting on brownies so I haven't tried that part... frosting isn't necessary when you have a richly delicious and fudgy brownie!

Zesty Slow Cooker Chicken Barbecue

Probably one of the easiest recipes out there (aside from just dumping a bottle of BBQ sauce in with the chicken) for a quick prep... I enjoyed the tang of the salad dressing. I think I'd skip the sugar next time, as the BBQ sauce has enough sweetness...

Blackened Shrimp Stroganoff

This recipe was quite intriguing to me over a year ago and I *FINALLY* made it! I happened to have everything on hand except the mushrooms, so I stopped and picked some up for this quick dinner. Result: We really enjoyed this! I wouldn't change a thing about this recipe! The Cajun seasoning gave just the right kick, a perfect amount of saucy-ness...loved the flavor and color the red bell peppers added (if you must, tomato could be a good substitute). The capers are a must - it elevates the dish and, in a strange way, made it seem more special. :) I wouldn't hesitate to make this again!

Whole Wheat Honey Bread

Hearty, healthy, delicious bread! This is great if you're looking for those three attributes... it's not for everyone, as it's pretty dense. I wanted homemade bread (I've been on a bread-making kick the last few months) that was nutritious and this fit the bill! It reminds me of Brownberry or even Ezekiel bread. I made this by hand and found it to be quite sticky...so much honey! Excuse me while I go slice myself another piece... :)

Grandma's Secret Pie Crust

I was a little irritated when I realized I had to make my pie crust by hand, as it's usually so quick to do in a food processor, but I'm in the middle of moving and it was packed. HOWEVER, this was so simple! And the results were amazing! I ran a little short on the shortening, so I subbed in lard for 1/3 of it. I've had this thing of lard in my pantry for far too long--my mom swore it made the best pie crust, but I don't make many pies... and now I was able to use it. Blabbering but Wow this was so easy, so flaky, so tender... I think I may have a new go-to recipe! Used as the pastry for Mrs. Siggs Pumpkin Pie. I am so proud of this pie!!--Update 1/30: Used crust recipe to make savory pop tarts (egg, bacon, cheese). Worked like a charm!

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

This recipe was phenomenal! I loved the flavors! Tomatillos are great - but I don't find enough recipes to use them often. Very easy to make - I did everything on the stovetop, but I could see adapting it to use a crockpot. --First time, we ate this over plain Basmati rice and really enjoyed it like that. Then we ate if for dinner in tortillas, taco style... what a hit that was! This would be a great crowd-pleasing recipe, especially in the wintertime!

Real N'awlins Muffuletta

Reeeeeeally tasty! I made this for a catering event that had a bit of a theme... and this fit perfectly for New Orleans! The flavors are incredible together - but it's a bit messy!! I love the presentation but it's so hard to eat! Oh well, it was a hit!

Carrot Cheesecake Muffins

I say 2 stars, but my coworkers seemed to enjoy them. I just did NOT care for the clump of cream cheese in the middle of a perfectly good muffin. I thought I would enjoy them--with the sugar and zest--but I wasn't happy with the end result. I love the black-bottom cupcakes with the cream cheese, so I thought I'd REALLY love these... but it wasn't a keeper for me.

Rhubarb Muffins

These were good! I liked how moist and flavorful they were. I will say when I was scooping the batter into the cupcake liners, it seemed like there was almost too much rhubarb - but then when I ate them, it seemed like there should've been more... so I'll probably increase the fruit next time. I loved the simple, subtle flavor the nutmeg gave these muffins and I'm sure the brown sugar helped round out the flavors too. I could definitely seeing this recipe used for a number of other fruits!

Healthy Banana Cookies

I made a half batch - they may be healthy, but everything in moderation... I kept eating them because "they're healthy"! They're good - but I could see that they're not for everyone. My bf wasn't a fan...they just weren't appealing to him. If you're a health nut or just want a treat that's a little more nutritious than a cookie, this is a great match!

Easy Banana Brownies

These are tasty! I was surprised how much I loved them and couldn't stop eating them! Perfect for anyone who loves the chocolate-banana combo. They were great right out of the oven. The next day, they were pretty moist on the tops... like where it gets kinda sticky and messy when you pick it up to eat it...? But I didn't care, they tasted yummy!

Amish White Bread

While it wasn't the most beautiful-shaped loaf of bread I've ever made, the taste and texture knocked this one out of the park! I knew it would be good, as it's very similiar to another recipe I just tried for wheat bread... this is light and fluffy and tender and...sweet. I didn't pay attention to the sweetness until my boyfriend pointed it out. And that's after reducing the sugar! (I halved this, and used about 3T??). Can't wait to make it again! BF said I better not lose this one!

Basic Corn Muffins

WOW! Sure, they're basic in that they have your typical ingredients of a standard corn muffin, but this is super quick and easy and yields great results! My *ONLY* complaint is that it says spray or line the muffin tin... well, I chose to line and I should've sprayed too...so a good chunck of the muffin bases got stuck, darn it! I followed Doug's tip of using buttermilk, only because I ran out of milk and had powdered buttermilk on hand. Light and tender - wonderful with honey and butter!

Bean, Bacon and Pepper Soup

Wow! A pretty quick, delicious meal we enjoyed after a busy day of packing... it was easy to throw together with things I had on hand and am trying to use up. I halved the recipe and it made about 3 servings as a main dish (served simply with homemade cornbread muffins). I realize now I forgot the bay leaf and omitted the sugar. I also used white navy beans, as it's what I had in my pantry. I followed the direction of Naples and only pureed about half the mixture, as I prefer to have some of the texture of the beans and veggies. YUM!!
