Famous Amos Chocolate Chip Cookies

No, they don't taste like famous amos cookies, but that really doesn't matter here. What we have with this recipe is a uniquely tasty chocolate chip cookie! At first I wasn't sure how much I like it, as my favorite cookie is chewy. Some reviewers have described these as dry and crumbly... I'd say tender and melt-in-your-mouth is more accurate. Sure, it crumbles a bit but it's not due to dryness. That could be attributed to overbaking, which I noticed I did to one sheet of cookies. Err on the side of under-baking and you'll be quite pleased with this non-traditional chocolate chip cookie!

Butterscotch Bread

A very pretty quick bread-it baked perfectly and didn't have me second-guessing if I should keep it in a little longer (you may be able to relate...) I enjoyed it most fresh from the oven. My bf thought it was much better with butter... which is likely because it's really not very sweet so he wanted more flavor? I'm thinking my use of half whole wheat flour may have contributed to the dryness it seemed to have relatively quickly (a day or so later). I also added a handful of butterscotch chips, which sank to the bottom, darn it! It was a nice recipe to try, but I think I'll find another recipe next time!

Poppy Seed Mini Muffins

These are cute lil' nuggets! Two things I'll note right away: they are muffins--not cupcakes--so they are NOT very sweet. They are poppy seed muffins that happen to have lemon extract; do not expect a zippy lemon flavor unless you decide to add zest...which I did because I wanted to use some lemons before they get tossed. I didn't have sour cream so I used plain yogurt...it worked fine but I think sour cream would've made them more moist. Also..."mini" is relative. I have smaller pans than my mom's mini muffin pans, so keep this in mind when you're baking yours! Mine were done in 8 minutes exactly and made 48. I wanted a little sweet and more lemon pucker so I made a quick glaze with the lemon juice, zest, and powdered sugar. Can't wait to share with my coworkers!

Italian Peas

"How to make frozen peas taste even better" --this is the way to do it! I really don't know how I didn't have garlic around, so I subbed a little good quality garlic powder...though I know it's not the same. I like frozen peas and usually have them in the freezer for a quick veg side, so next time I'll use the garlic--yum! I did not want to open a can of chicken stock for this so I used a quick splash of water.

Maple Salmon

Lightly flavored, delicious, and so quick and easy! Perhaps I'll make it again when my taste buds are back to normal (darn cold...). My "I don't like salmon" boyfriend even enjoyed this! I didn't have garlic (not sure how that happened) so I subbed in a little sprinkle of good quality garlic powder. Our salmon was a little thinner, so it cooked in about 15 minutes... lovely dish!

Rigatoni Florentine

Super quick and easy and 100% modifiable based on what you have around and need to use up. For me, I chose medium shells for my bf and will serve over leftover quinoa for me. Skipped the chicken. Traded evaporated milk for the heavy cream (had some to use up). And forgot the mozz but will top it on my bf's for his lunch tomorrow. I love garlic, so I appreciated what it added to my jar of Classico sauce (which I enjoy on it's own, the garlic just amped up the flavor). Adding the cream (milk) changes this from a traditional spaghetti/sauce. And how simply brilliant to chop the spinach... hello, why don't I do that more often?? :) Looking forward to a tasty lunch tomorrow!!

Oat Waffles

A good, solid waffle recipe - no complaints! I subbed whole wheat flour, as I didn't want to mess with processing oats into a flour. Not much more to say - just appreciated a healthier recipe option when my bf requested waffles this morning.

White Chocolate Orange Cookies

Perfectly pretty, wonderfully delicious! I loved the orange undertones of the cookie - I don't think it's intended to be the prominent flavor, though, if you're a huge fan of the orange/choc combo, you could consider adding orange extract. BUT I wouldn't. :) I used macademia nuts, as I had them and thought they'd work very well with this recipe. A great new go-to recipe. What a gem!

Chocolate Covered Cherry Cookies II

Overall, a good cookie. Certainly a pretty presentation! We did 2 versions: one with the cherry baked on top, the other with the cherry added after baking. A mellower flavor baked on, but not nearly as pretty. I loved how bright the cherry was when it wasn't baked, but some people might not love the flavor as much...so it's all a matter of preference. Also, we used a half cherry on each. And there is WAY more icing than you need... which can be used for other treats (ice cream topping?!?).

My Mom's Swedish Pancakes

Oops! I just realized I didn't read all of step 4. BUT these turned out great! I was looking for a quick and easy meal tonight; I had eggs on the brain but wasn't up for digging out the waffle iron or making French toast. Since I had a variety of fun things to fill/top these with, I went with this recipe. I don't know the technical differences between crepes or other recipes like this, but that's basically what I got and it was perfect! SUPER quick, SUPER easy, VERY tasty. I added a healthy splash of vanilla and whipped up the mixture in the blender. Filled with a variety of things: preserves (a peach-mango-orange variety), Nutella, PB, ginger butter (some jarred stuff from Williams-Sonoma...weird), and pure maple syrup. I love the preserves, my boyfriend was a fan of good ol' maple syrup. Thanks for the fun dinner, Marianne!

Spinach Greens

How could this NOT get five stars?! I suppose I could knock it for the unnecessary sugar and salt... which I chose to omit. Isn't bacon salty enough? And why sugar--bacon has enough carmelization when browned. I used three slices of thick-cut bacon and measured nothing else. I opted to sop up as much grease as I could with a couple papertowels (I didn't wipe it clean, just let it soak up, as I did want SOME ,just not ALL the grease). This is so flavorful from the bacon, I can't imagine anyone not liking it! Bacon makes everything better!

Pork Medallions with Cherry Sauce

Simple, elegant, delish! This was a wonderful dinner to prepare mid-week that was quick and flavorful...not to mention pretty on the plate when I sliced on a sharp diagonal and placed on a bed of wilted spinach. **In place of tenderloin, I used pork chops we had in the freezer and used a white onion in place of the shallot, which was just fine for us. I loved the reduced balsamic sauce with the tart cherries... I could eat that by itself! This recipe would work well with chicken too.

Pollo Fajitas

VERY unique - I briefly skimmed a few reviews and read things about how it wasn't like your typical Mexican fajitas you get at a chain or local restaurants. It's true. It's different, but we enjoyed it. It's the kind of food you eat a little more slowly, enjoying each unique bite...flavors you hadn't combined before, mingling in your mouth...I can't say this will be up there on the list to make again and I wouldn't serve it up to guests as "fajitas" but it's always fun to try something new!

Apple Pie Muffins

While my muffins won't showcase a perfectly-domed top like a bakery-perfect muffin, the flavor makes up for any visual "imperfections" this little nugget of deliciousness may have! I couldn't decided if I wanted to putz around with a recipe (cuz you know how hard it is to peel and dice apples...right... such laziness!), but I'm so glad I did and I really enjoyed making this recipe and look forward to sharing with my coworkers! Even the extra time spent making (almost) perfectly even dices of the apples! This recipe really needs to tinkering, though I've been tempted to do a light powdered sugar drizzle to pretty it up, but I don't want to mess with perfection. :) I'm even thinking I'll skip the usual Tupperware and take them on a cake pedestal!!

Oat-Rageous Chocolate Chip Cookies

A little gem of a cookie - baked up perfectly: slightly crisp, yet chewy. As I peeked through the window of my oven during the first batch, I thought I might have to flatten them slightly on the next batch to make sure they bake through. Well, after a few minutes on the cooling rack, they deflated and I was left with a cute little cookie that was baked perfectly! Rather than chocolate chips, I added butterscotch chips since my bf doesn't like chocolate... Though it seems the cookie has an identity crisis (PB? Oatmeal? Chocolate chip???), it was a hit! :)

Chicken Breasts in Caper Cream Sauce

ooooh, this was fantastic! I thought this recipe would be a great way to use up some walleye, so I swapped that in place of the chicken (though, I'm sure chicken is great too). This was a snap to put together with things I had on hand; the fish was perfectly seasoned; the sauce was creamy and so flavorful. I was proud to serve this for dinner for me and my boyfriend, and I think it would make an impressive entree for guests too!

Spinach and Rice Alfredo

Nothing to add or take away form this recipe! It was delicious and simple, just as it was written! I was tempted to add more parmesan, but found that the 1/4 cup was perfect... I was tempted to use regular black peppercorns but went with the white, and I found I appreciated what that contributed too! A great side to go with the delicious chicken breasts in caper cream sauce, also on this site.
