Buttermilk Strawberry Shortcake

Quick, easy, tender and ever-so-lightly sweetened shortcakes that were a perfect way to use up some ingredients I had in the fridge! I wouldn't skip the cream/sugar on top--it makes them so pretty and I love the crunch from the sugar! I halved the recipe and still ended up with 8 good-sized shortcakes! I'd make this recipe again in a heartbeat. I shared with my sister and she and her hubby enjoyed them just as much!

Salmon with Pineapple Tomato Salsa

I was a tad bit hesitant about making this for dinner tonight since I was using fresh Alaskan Copper River Salmon and didn't want to risk "screwing up" a great piece of fish. :) However, I realized as long as I cooked the fish properly, I could leave off the salsa if we didn't like it. Mostly, I was unsure about the soy sauce, but decided I really liked it after it sat in the fridge for 20 min or so... especially since we usually add a drizzle of soy sauce to our plain rice anyways. Rather than heat the house or uncover the grill, I chose to cook on the stove. That said, I hope everyone knows to watch the cooking time... 30-40 min could be too long at 375' !! --To enjoy this even more, I eyeballed vs. measuring ingredients. :) Overall, we enjoyed the dish! Death by Chocolate Mousse

This easy recipe worked very well for me - I wanted an egg-free mousse to pipe into dessert shot glasses for a wedding reception. 3 batches of this yielded enough for 150 3-oz shot glasses... a lovely presentation when topped with whipped cream and garnished with mini chocolate beads! What a hit! Since I had extra chocolate/cream, I made a pie to take to dinner with the fam. Unfortunately it only got to sit for 4 hours--I think it could've used the extra 2 hours and it would've set up even better. BUT it tasted darn good! I used a graham cracker crust, since it's what I had on hand, baking for about 10 minutes. A perfect go-to recipe for egg-free chocolate mousse!

Brownies with Peanut Butter Fudge Frosting

I made half the recipe to top a 9x13 pan of the Mmmm Better Brownies on this site and it was PLENTY!! Great flavor, went over very well with coworkers. I "jazzed" them up a bit with some chopped up Butterfingers just for fun. No complaints here!

Mmm-Mmm Better Brownies

Doubling this recipe was a gooooood idea! These came together SO fast when I wanted to make a scratch brownie recipe and I didn't have enough butter to do it (...I rarely run out of butter, so of course I'd get a brownie craving...) but this recipe is great! The top wasn't very pretty--it doesn't have the glossy sheen you can get from other brownies, but they make up for it in taste! I used a peanut butter frosting recipe from here (from the brownies with peanut butter frosting recipe) and added some chopped butterfinger, neither of which were necessary except I wanted to jazz them up for work. They didn't cut particularly cleanly, but who cares... they are fudgy and yummy!

Grilled Salmon I

SUPER simple and REALLY great flavor! I let it hang in the marinade for about an hour then grilled it. Of course, watch the grilling time because each piece of fish will be a different thickness, so it will take more/less time (mine took less). Perfect main dish for our dinner! The flavors were all great together--I wouldn't change a thing! This is a keeper!

Queso Blanco (Mexican White Cheese)

We love this! It's very close to some of our favorite queso blanco at Mexican restaurants in the area. I'm so happy I can make it from home now! I'd suggest at least quadrupling the batch :)

Cinnamon Cranraisin Bread

Awesome, awesome good. Loved all the flavors; pillowy soft, delicious! I don't have a bread machine...which worked swell in my favor: instead of just mixing in the craisins, I took the opportunity to create a beautiful swirl by rolling the dough out after the first rise, then sprinkling with brown sugar, cinnamon, and craisins...rolled up and sealed. Since I doubled the recipe, I did the swirl to the 2nd loaf but left out the craisins and added some butter with the sugar and cinnamon... InSaNe good. They baked perfectly in 35 minutes. I DO have to clean my oven now, as the swirl oozed a bit and made a mess, but it was worth it :)

Cheese Biscuits

In the words of Ina "how easy is that?!" SO easy and quite tasty! I used a smoked gouda and mozzarella (sounds weird I know) but it was awesome, so I don't care! My boyfriend got a kick out of the crescent roll shape--so much more fun than the typical round biscuit. :) We have a winner!

Broccoli with Roasted Red Peppers

Rather than bothering with the steam basket (already had two burners going), I used the microwave to steam the broccoli in about 2.5 min. Once the red pepper mixture was ready, I added the broccoli and let it cook a little longer (I liked the charred parts). It seemed a tad boring, so I put some shredded cheese on top...which melted nicely and added more flavor. I will say it was a beautiful dish!

Roasted Tomato Salsa I

A great starting place - the time for broiling was quite a bit off for me, but not a big deal, I just made sure each veg was nicely charred before taking them out. A quick churn in the food processor made quick, easy work vs. all the chopping required with fresh salsa! I threw in a chipotle in adobo for some heat and extra smokey flavor. Use your judgement on the salt, pepper, cumin, and lime juice... yours may need more or less than the recipe calls for.

Pineapple Fried Rice II

I loosely followed the recipe, when it came to measurements. I used shredded chicken instead of ham, since it's what I had. Overall, decent... but lacked SoMeThInG. I kept wanting to add something but wasn't sure what... guess that means I'll just search for a different recipe! It certainly worked fine for a really quick late-evening dinner.

Taco Turkey Wraps

Why reserve this for a party when it makes a perfectly decent and QUICK lunch option? :) This was great to eat before running some Saturday errands... I added some finely diced red onion, tomato, and shredded lettuce since we had it around to use up. I'm sure this would be a hit at parties, showers, etc. too!

Stir-Fried Shrimp with Snow Peas and Ginger

Pretty darn bland. And I'm not sure doubling the sauce would've done anything for this dish. Sesame oil didn't even bring the flavor. I was surprised. I had a mix of veggies from the produce section that had snow peas, broccoli, carrot shreds...I even added more carrots and some onion to get the right amount of veggies... The fact I love veggies was pretty much the only saving grace.

Easy Key Lime Pie I

Tart and tasty... great pie for the sunny spring day we have today! I chose to make my own graham cracker crust --which I parbaked--and threw in the zest of my limes (approx 1T). I was reading other recipes and decided to use just 4 yolks and was happy with the results. Topped with some freshly whipped cream to even out the tart, puckery flavor, this pie was perfect!

Double Tomato Bruschetta

Now that I've come online to review this recipe I made over the weekend, I realized I never topped with cheese and broiled! We simply enjoyed this on slices of fresh baguette... when hunger strikes, I forget to finish a recipe when it's "Good enough" as it is :) In fact, I'm not sure if I would've liked it as much with the cheese. We had really good, fresh ingredients (namely, the tomatoes, basil, and bread) to make this and loved every bite.

Too Much Chocolate Cake

This recipe is ALL over the blogging world... and now I know why! I typically make my cakes from scratch, but found that doesn't always yield the perfect results when I need to make the cake in the Pampered Chef Batter Bowl for barbie cakes. So, I broke down and make this recipe after my sister had great success with it. Deliciously moist and wonderful - baked up beautifully! I baked at 350 for about 75 minutes for the batter bowl cakes, then used the recipe again in two 8" round pans. This gave me a couple extra inches to plunge the (plastic-wrapped) barbie into the cake without taking drastic measures like chopping offer her legs (as some people have reportedly done...really). So, two barbie cakes used 3 batches of this recipe. A keeper. At least for Barbie cakes.

Smokey Chipotle Meatloaf

Awesome flavors... I'm not sure if it was the red meat (I don't prepare beef very often) or just how GOOD this was, but my boyfriend sure was a fan of dinner tonight! I loosely followed the recipe--which I cut in half--not precisely measuring anything. After shaping into two loaves on a sheet pan, I baked them until they were done (about 45 min). We loved everything about the smokey, not-too-spicy flavor! I wouldn't change a thing about the ingredients in this recipe! Served with Creamy Skillet Corn (from AR) and a spinach salad. Good stuff!
