Pumpkin Cake II

A perfect pumpkin cake recipe! I followed this recipe, omitting the nuts and baking into cupcakes. The cupcakes were perfect and beautiful and tasty as they were, but I decorated them with a simple cream cheese frosting. I received a lot of great feedback from coworkers about how moist and yummy they were. I loved the true pumpkin flavor of these, with just a hint of cinnamon flavor coming through - not complicated with extra spices. A full batch easily made over 30 cupcakes.

Mexican Chicken Corn Chowder

While I modified this a little bit to use what I had on hand, I found this to be a perfectly flavorful, delicious, and comforting soup - perfect for lunch after spending the morning raking leaves! I used canned stock, since I prefer to use less sodium. And chose evaporated milk over half/half, since I had that on hand too. My tomatoes were from leftover homemade marinara sauce from the freezer and it worked beautifully. A little extra frozen whole kernal corn, and I was set! --I tend to try all sorts of new recipes; my boyfriend requested I stick with this one (or at least remember it). :)

Mexican Blackened Corn

Hopefully the timing doesn't scare people off from making this! I just noticed it says 1.25 hrs!! I didn't notice that and it certainly didn't take that long to make! I happened to have some extra bacon from Sunday brunch, so that helped... BUT! multi-task! You don't have to wait for the bacon to finish before starting the rest of the dish! I used the recipe as more of a guide... skipped the red bell and replaced with diced chiles (extras from the other night); skipped the beer (wasn't necessary and I doubted I'd enjoy it since I'm not a fan of beer); skipped the cheese since I didn't want to use it (there was enough cheese on the enchiladas I served with the corn). If you keep your heat high enough and occassionaly stir the kernals, this tasty side dish should NOT take 20 minutes! The bacon was nice, but not critical. Give this a shot and tweak to what you have on hand or to your flavor preferences!

Chewy No Bake Granola Bars

I've found this on several blogs lately and it's our go to recipe for quick and easy granola bars. I have found we like 1/4-1/3 cup brown sugar to be better, as they are too sweet otherwise. Also, you have to press these in pretty darn good so they stick together. AND the best way to make them stay firm is to refrigerate...otherwise they do tend to break easily, which I don't mind but my bf doesn't care for crumbling bars. :) It's fun to mix up the nuts/fruit/chocolate, or eliminate all together.

Beans, Greens and Garlic Soup

JUST what I needed tonight! I didn't have to go to the store, didn't have to do much prep, didn't have to do much thinkin to throw this together and have a delicious dinner tonight (and lunch tomorrow and the next day and the next day...). It's just me this week, so this couldn't have been a more perfect meal (the other half prefers meat, which I could easily add some cooked chicken to this...). I followed Naples substitution and added swiss chard since it's what I had on hand. Excuse me while I got eat my dinner... :)

Crispy Turnip 'Fries'

I really wasn't expecting to like these so much! Even my bf was a fan! I didn't really measure anything and I chose olive oil over veg. My turnips were from mom's garden and were much smaller so I just used my noggin to figure out how to cut them and how long to bake them. Great combo of seasonings and easy prep make this a winner in my book!

Shrimp Lemon Pepper Linguini

Loved how quickly this came together for a simple and delicious weeknight meal! I had a box of shells open, so I just used those. Otherwise, followed the directions and ended up with a perfectly flavored dinner tonight! I loved the light lemon flavor and the freshness from the herbs (though, I'd use a good quality dried herb in a pinch). This will be a go-to for a quick dinner, and is certainly worthy of being served to guests!

Crab and Pea Salad

Can't get much easier - and tastier!! - for such little effort! I let the oven do the work to cook the bacon while I pulled the other ingredients together. I can hardly wait til lunch tomorrow! I decided to use less bacon (crazy, I know) but I wanted to make sure the REAL crab flavor came through more than the bacon. Excellent!

Tomato Basil Salmon

*Simple. *Excellent. Used fresh basil and skipped the olive oil. With just five ingredients, it's important to use the freshest, best quality ingredients... Superb. Served with a garden fresh salad and warm, freshly-baked biscuits, this salmon recipe turned a regular Monday night dinner into something special!

Baked Chicken Nuggets

A nice start, but lacks in the flavor dept. Swapping buttermilk for the butter worked well for a lower fat (and cheaper, and less messy/greasy) option. Perhaps with the right dunkers (marinara, etc), this would be better. Also opted to bake on a cooling rack so the bottoms could get crispy instead of soggy.

PHILLY Caramel Cheesecake Bars

3 days later and I'm STILL getting people RAVING about these - no joke. I accidentally deleted the photos I took, but I chose to swirl the homemade caramel sauce into the bars. This resulted in some minor "cracking" at the edges from the caramel swirls but what it did for the flavor certainly made up for it! I chose to use all cracker crumbs instead of pecans. These were very substantial--a thicker than normal cheesecake portion--which made for an even prettier bar! YUM! Crowd-pleaser!

King Crab Appetizers

I made these VERY last minute (as in, I decided to make these when I had just 5 minutes to make and get out the door...) So I skipped the tartlet/baking and simply served the filling with gourmet crackers. That 5 minutes sure paid off! I skipped the Parm, simply because I didn't have the time to putz with grating it, but everything else was pretty spot on (didn't measure). The flavors all blended perfectly together - I may have added about 1.5x the crab called for next time, just so I could enjoy even more crab flavor.

Fresh Rhubarb Pie

This is the recipe Grandma always made, but she would often sub in two cups of halved strawberries. I only used 1 cup of sugar as even that seemed like a lot for this. During the last few minutes of baking, the topping bubbled over a bit, so I was SO glad I put a pan on the lowest rack to catch any drippings. Like Grandma's hand-written recipe says, I just kept it at 400 the entire time...baked beautifully in about 45 minutes.

Green Beans with Almonds and Caramelized Shallots

Modified slightly to accommodate what I had on hand, we really enjoyed this as a relatively quick and nutritious side dish tonight. I skipped the sugar (it's just to help speed the caramelizing process), used jarred roasted red pepper, and skipped the almonds since I had a lonely slice of cooked bacon to use up... I just chopped that and sprinkled on top. A nice way to dress up garden-fresh beans!

Salsa Chicken Burrito Filling

"Very flavorful" says the critic! We both loved this change of pace... normally I cook the chicken just with the taco seasoning (using recipe from this site--I make in bulk with good quality seasonins so we have on hand at all times!). While that has worked just fine, this recipe isn't much extra work to get a bigger mouthful of flavor! I skipped the garlic because I was lazy. I could definitely see adapting this for a crockpot and serving to a larger group. Looking forward to the leftovers!

Quick and Almost-Professional Buttercream Icing

Perfect! I made a batch of this to use for cake pops but found myself sampling it a few extra times... yum! I used vanilla bean and I loved how pretty and speckled this was! I don't know how far this would go for icing a cake, but it worked perfectly for 24cupcakes worth of cake pops.

Stewed Squash

A great recipe for farmers market-fresh veggies! I added minced garlic and used a seasoned salt for a little more flavor. Though I didn't find the TWO cups of water to be necessary, I did add a couple splashes to the pan to help the cooking along. I think since I had small, likely younger squash and zucchini, they didn't seem to release as much of their own liquid and it was taking awhile to cook, so the water helped that move along a little faster. :)

Lori's White Bread Cake

I chose this cake for it's simplicity, as I just needed a white cake to use for cake pops. As expected, it came together nicely and baked perfect little cupcakes for me to crumble up and use for my client order. Well... I had my boyfriend try them and he said they taste weird. A little bummed, I asked what he meant... oddly enough, he said it tasted like bread. I haven't told him the name of this recipe--I'm always trying new recipes and he often teases me about just sticking with a tried and true favorite--so I'd hate for him to tease me for making this "white bread" cake. :) It's true. It's not as light and tender as a cake ought to be. I made a different white cake recipe last night and did a side by side comparison... strikingly different. While I will not throw out this cake since my coworkers have indiscriminating tastes, I simply cannot and will not use this for a paying client.

Orange Slice Cookies I

These were fun! My dad loves orange slice candies, so I keep them around for when he stops over. I had this in my recipe box for awhile and finally got around to making these... yum! The cookie base was good - a light crisp when you bite into it then chewy. I loved the little bits of chewy orange scattered throughout! Not only did it look pretty, they tasted yummy! Dad got a kick out of them too. :)

Buttermilk Strawberry Shortcake

Quick, easy, tender and ever-so-lightly sweetened shortcakes that were a perfect way to use up some ingredients I had in the fridge! I wouldn't skip the cream/sugar on top--it makes them so pretty and I love the crunch from the sugar! I halved the recipe and still ended up with 8 good-sized shortcakes! I'd make this recipe again in a heartbeat. I shared with my sister and she and her hubby enjoyed them just as much!
