Sour Cream Spice Cake

I wanted a spice cake - not a pear spice cake, not a pumpkin spice cake... or all the other variations out there. I almost tried a couple others with more ratings, but I am really glad to have found this recipe and give it a shot! What a wonderful cake!! I didn't find it to be dense at all; folding in the egg whites makes for a lighter, fluffier cake. After storing in the refrigerator (bf prefers it chilled), it does firm up a bit but that's expected. Great spice flavors really shine through--and are nicely complemented by the cream cheese frosting I decided to make instead of the one provided as part of the recipe (personal preferences). Give this recipe a shot!! You won't be let down!

Marinated Scallops Wrapped in Bacon

Delish flavors from the marinade and the smokiness from the bacon make these delicate scallops absolutely succulent! Everything I've read and experienced with marinating seafood, an hour is far too long. Instead, I allowed my scallops & shrimp to marinate long enough for the oven to preheat and the bacon to bake for the first 8 min... long enough. Although my thick slices of bacon did not crisp up like I prefer, its flavors certainly did wonders for both the scallops and shrimp I used in this recipe. I did not find the sugar to be necessary, as it's plenty sweet and so much flavor already...but add it if you wish, it certainly doesn't hurt! Yum! Good recipe find!

Orange-Glazed Asparagus

Although I ended up overcooking the asparagus, this recipe was fabulous! I love the idea to use orange juice to create a delicious glaze for an already tasty veggie. Everyone at the dinner party thought it was a great new way to play with flavors and create a wonderful side dish...and in such a short amount of time!

Grandma's Gingersnap Cookies

Great recipe - excellent selection of ingredients and easy-to-follow recipe instructions. Baking for just under 10 minutes produced a deliciously moist and chewy cookie. I'm very pleased with the results! Note: the cookies puff up in the oven, then flatten, so do not be surprised. I am going to read up more on this to see what can be done to keep them puffy. Also, regarding the shortening, I used butter. I've learned in my culinary class that the term is sometimes used interchangably--it's just the fat that's needed in the recipe and can be refering to butter or shortening (Crisco). I prefer butter, so that's what I use!

Banana Muffins with a Crunch

Giving credit where it's due, this is identical to the Barefoot Contessa (Ina Garten) recipe. With that, I will say the recipe is exceptional. While I didn't get the crown I like to see on the muffins, the taste and texture is very appealing and delicious. I forgot to add fresh banana chunks, but it still turned out great! I decided to use some leftover caramel and ganache toppings to make the tops a little prettier and use up the toppings. Yum! Great crunch and texture with the granola, walnuts, and coconut!

Adam's Dirt Cookies

Nothing wowed me about these cookies, which turned out rather greasy. I was hoping they would pack a bigger Oreo bunch, but was disappointed. I'd rather make a better quality cookie with ingredients that stand out more. Presentation and idea was fun but the taste didn't deliver.

Baked Kale Chips

YUM! SO tasty! I love these so much more than chips for munching! Next time I'll remove stems and leave whole, then brush each with olive oil and test spraying some with Pam... following the recipe you get some soggier pieces so I'm hoping to avoid that. But they are still so tasty! --As far as seasoning, salt is great. I might try shaking some seasoning on AFTER baking next time (kind of like how they don't season fries until AFTER baking/frying). I'm so glad I tried this! The wonderful flavor of kale is great in this snack food!

Poppy Seed Bread with Glaze

Very moist quick bread, with a sweet and tasty glaze. I enjoyed the recipe, following everything except the butter extract (didn't have and didn't want to buy). I did kind of miss the lemon flavor...poppyseeds and lemon just go hand-in-hand!! But overall, good recipe for a quickbread that went over quite well with the coworkers.

Sauteed Apples

Very easy recipe to follow--found that it cooked a longer than 7 minutes but not a big deal. The flavor is a perfect blend of sugar & cinnamon, with a touch of richness from the butter. Yum! This recipe would be great to use for any combination of recipes (pancakes, oatmeal, ice cream, dessert-in-itself!). Can't wait to make again! I think I may even try with pears...(one that i cut into and wasn't quite ripe enough would be perfect)

These are perfectly tender and fluffy every time, just as written! I like to add vanilla or other spices, depending on the season and my mood. Can't go wrong with this recipe!!

Cookies 'n Cream Cake

Yes, tastes kinda like an oreo...the flavors are like the artificial taste of chocolate and cream you expect from an Oreo. The cake looks lovely--I used a bundt pan for easier serving at work (no plate really required). Using Naples recipe for frosting worked really well (no worries with egg whites). I frosted the entire cake then decorated the top with some crushed Oreos (red filling-Christmas collection) and M&Ms for added color (birthday cake...wanted it to look more festive). --Personally, I don't LOVE this cake, but it's a nice change, creative idea, looks cool. =)

Three-Layer Gelatin Salad

Perhaps I shouldn't be rating this recipe... I used it as more of a guide and it turned out great! I used my choice of flavors and added fruit--in place of the cream cheese, I used orange sherbet that I wanted to use up. Fun recipe - easy directions. I had great new cake molds to make these in for a pretty presentation--I love that I thought ahead to use a red jello first for the bow (I usually think of it after the fact) =) Give it a shot!

Best Brownies

Wonderful brownies! Turned out beautiful! Although they lost when I put them up against another brownie recipe (used melted chocolate instead of cocoa powder), they are still an exceptionally wonderful and easy to make brownie treat! I skipped the frosting, since the taste test was for just a brownie... it doesn't need anything extra on top! YUM!

Chocolate Chip Sprinkle Cookies

I thought it looked like a lot of butter... it was. I ended up with rather greasy cookies. Overall the taste is pretty good, but they are too greasy for my liking. Ultimately, I think my coworkers will enjoy them (chocolate-check. treats-check.) I did enjoy the texture the rice krispies added though!

Honey-Lime Granola with Almonds

I wanted to like this--a lot--but it just doesn't have any kind of wow factor. The lime is too subtle, which was surprising to me since there is so much flavor in the concentrate, juice, and zest. I may try again, but it will be awhile before I make it through this batch...

French Dip Sandwiches

So comforting, warm, and tasty... other than cooking in my slow-cooker, I followed the recipe and enjoyed a deliciously meaty sandwich. I didn't love the au jus, so I ended up putting some cheese on it and broiling for a few minutes. The bread was nice and toasty... yum. =)

Spinach Brownies

I love veggies and I LOVE brownies... and so naturally, spinach brownies, gotta be good, right?! =) I love trying new recipes so I added this to my recipe box. Easy and tasty! I used frozen chopped spinach (thaw/drain), sauteed the onions in olive oil, used half the butter called for, and added a piece of crumbled/cooked bacon. The bacon added nice saltiness and flavor that salt alone cannot accomplish...a little color too! Using half the butter, I felt it was sufficient...I didn't want to deal with the greasiness many others said they experienced. --Overall, fun, tasty recipe that reminded me of quiche.

Chicken with Tomatillos and Poblanos

5 stars if eaten with black beans & bacon (from this site) and rice...as suggested by Naples. What a hit it is when those two are combined with this recipe!! Leftovers were fabulous - and then I added some to Cottage Cheese Chicken Enchiladas and it REALLY enhanced the yum-factor of that recipe! Overall, a satisifying concoction that really complements other recipes!

Mandarin Chicken Pasta Salad

Excellent! Reminded me of the chopped salad at Noodles & Co. I followed the recipe and scored BIG flavors that really complemented each other very nicely. I loved the orange juice in the dressing--a nice citrusy twist on a standard Asian salad. -I completely forgot to pick up spinach and didn't feel like going out into the cold winter weather to pick it up... while I would have enjoyed the addition, it certainly did not make me feel like anything was missing. **Leftovers were great the next day too!

Caribbean Chicken Salad

I had high hopes for this one! I think it could use a little work... mainly on the dressing, as the mustard flavor was quite intense. I may play around with different seasoning ingredients for the salsa, but appreciated the freshness both the salsa and pineapple provided. I forgot to pick up chips for this, but I am unconvinced that would've done much toward liking this anymore overall...I did add some chopped macademia nuts I had on hand, which was nice. --Better luck next time?
