Cream Filled Cupcakes

Yummy! Aside from using half-n-half and milk instead of water and milk, I followed the cake recipe and enjoyed it. I had leftover homemade whipped cream to use for the middles (which is why I chose this recipe, to use it up), since it was basically the same thing I thought we'd be good...and yes! Indeed. I was chatting with a friend while filling these so I wasn't paying attn to how much cream went in... wish I would've gotten the filling farther into the cupcakes, as I filled mine from the top (who wants a whole in the bottom). Then dipped the tops in chocolate ganache, which hid the holes perfectly. They were a hit!

Dad's Double Whole Grain Pancakes

I really liked these! Quartered the recipe and ended up with 5 pancakes which was perfect. Use all whole wheat flour and you'll be fine - instead of just adding water, I used 1% milk (why not, right?!), skipped the butter, and added vanilla. Served with honey butter and homemade rhubarb compote. What a yummy start to the morning!

Spaghetti with Garlic and Basil

Not a huge fan of the raw garlic - would be 5-stars if instructed to saute...even for a few minutes. Other than that, this is awesome for a quick*simple*fast pasta dish.

Country Crunch Pancakes

I opted to pour the batter, then sprinkle the topping on just one side of the pancake which worked well... I'm not sure it's necessary to do both sides and I'm pretty sure the topping would burn before they were ready to flip. A pleasant twist on traditional pancakes!

Banana Rum Biscotti

Made as directed... I think they'd be better if they were baked until they were dry throughout, not soft on the inside. That made it seem like they weren't baked correctly and it made them seem stale after just a day. Would try again, baking longer and maybe adding a nice drizzle of melted chocolate.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

We really enjoyed this! BF gives 4.25 stars =) I used Borsin cheese instead of cream cheese because I needed to use it up - and I used fresh basil because I have it in my herb garden, and whole wheat pasta. The flavors blended really well together and made for a nice, relatively healthy dinner that came together easily!

5-stars, per my Aussie friend. I had never heard of these but saw a photo posted and was intrigued. A close friend of mine from Australia was the recipient of these treats and he said they were spot-on. They brought back memories from being a little kid, hanging out with grandma & grandpa and getting these as treats. **The store I stopped at for coconut only had sweetened so I just toasted it a little bit in the oven to dry it out a tad and lose a little sweetness. Worked like a charm, as a substitute. **FILL with the jelly as other recommend!! That was the first question he excitedly asked me =) So sweet to see a 30-year old guy get excited about these little cakes!

Sauteed Swiss Chard with Parmesan Cheese

Beautiful dish - great flavors. I used a sweet onion because it's what I had and it worked well. I used Parm shavings and just a couple squirts of lemon juice and it was wonderful. As I do with lots of leftovers, I threw them on top of a salad with other toppings and called it lunch. Great!

Roasted Beet Wedges

Exactly as written, comes out exactly as promised =) ...delicious, sweet, and tender. I had never added rosemary to my beets before, but since I have plenty in my herb garden I decided to use this recipe. Very nice!

Santa Fe Cheesecake

Love everything about it. Well, add in some taco seasoning, then it's an amazing recipe. I think it may have been bland without the seasoning, so I'm glad I added it. I used the Taco Seasoning I recipe from this site using good quality spices, which I think helps. Used maybe a tablespoon or two? Use your judgement to suit your preference. The yellow bell would've been a nice color but I used orange since I had it and I added tomato. Fun to make your own. Didn't find an issue with the crust--some people said it was chewy or whatever... it was a hit and I look forward to making again! 16 is probably a good guess for how many it serves--took to party with 8 people and it was about half gone (with other food served, of course).

Strawberry Satin Pie

OMG-good. Amazing. This came together SO wonderfully, it was hard to resiste eating the whole darn thing. A must-try recipe... can only imagine how much more incredible this would be using berries from the farmers market... I think I see another pie in my near future =)

Orange Cranberry Oatmeal

A nice change from plain oatmeal & yogurt that I usually eat. I omitted the oranges since I didn't want to open a can just for this (I made this single-serving). Easy to throw together since I had everything on hand. I stirred in some plain yogurt to make it creamier and found it didn't need the brown sugar then. Also toasted the nuts in the microwave while this cooked. --The orange flavor is definitely understated, but I actually prefer that.

Chocolate Crinkles II

Tasty, chocolatey, chewy cookies. I loved how they were almost brownie-like. So easy to throw together - I popped the container in the freezer for about 2 hours and it worked just fine. Very pleased - great any time but I think it will be nice for Christmastime.

Lemon Macaroon Tartlets

Yum! A little putzy getting the tins filled and pressed in, but it was worth it. So yummy! Perfectly sweet, wonderfully chewy, delicious. I made "Microwave Lemon Curd" to fill these tart shells and couldn't be more pleased! Pop one in your mouth and it's like magic! I'd serve with a dollop of whipped cream if I was serving to guests but skipped that step this time around. Wow... wondering what else I can fill the shells with... =)

Shrimp Garden Salad

I enjoyed the combination of flavors - I didn't have celery so I didn't add it and I used fresh-frozen shrimp that I sauteed quickly with some yummy smoked paprika. I was going to just do a veggie salad but remembered saving this recipe--I LOVE what the shrimp added to this salad. DEEElish!

Microwave Lemon Curd

Wow. Impressive! I think this is great if you have lots of things going on in the kitchen... just a little stir every time the microwave beeps at you, rather than keeping an eye on the stove. I'm really impressed with how easy this came together and that it actually worked! Yum...

Peanut Butter Chip Chocolate Cookies

Yum! I was happy with these - wonderfully chewy and perfectly moist! I made them relatively small, which I probably wouldn't do again with the amount of chips in the recipe... I wanted to enjoy a bit more chocolately cookie goodness! But, to me, this still deserves 5 stars.

Cinnamon Oatmeal Cookies

These cookies really do stand out from the rest! I absolutely love the mild molasses flavor you can taste if you pay attention to it. So awesomely chewy... not too crazy with tons of oatmeal. It's really an awesome cookie! I wish mine were a tad thicker, but I can play around with that and add more flour/BS/BP. And I can't wait to play around with this recipe again--they are just THAT awesome. Really?? Only 20 reviews?? Such a shame! =) I think I'll go have another... while there still are some left!
