LOVED it. It baked beautifully and I really enjoyed the light orange flavors... yum! Delicious and perfect with a vanilla buttercream.

Braised Balsamic Chicken

Wonderful! We really enjoyed the flavors. I cooked the onions for a bit before I added the chicken, which I liked...more caramelized onions. I ended up using some leftover pasta sauce that we needed to use up, instead of the canned tomato. I don't feel like that drastically changed the recipe in a way that I would not be justified in reviewing the recipe... plus it's a nice tip for someone else who may be in the same position! Cooking for two can be annoying... lots of little leftovers of everything :)

Bananas 'N' Cream Bundt Cake

Loved it! I subbed margarine for shortening, but only because I had that on hand from a vegan recipe I was making. I omitted the nuts so more people at work could enjoy, but I think they would've been yummy in here! Certainly nothing extra needed to top this off...except maybe a dab of butter :) It baked beautifully in about 55-60 minutes, for me. Lovely recipe!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

"THe best fish taco i've ever had" says the boyfriend. It really was delicious. I was tempted to add more seasoning to the fish, but didn't (glad I didn't). Tempted to skip the sour cream sauce (really glad I didn't). If you taste it on it's own, the sauce may seem a little out of place... but it pairs so nicely with the salsa - I wouldn't skip it ever! And about the salsa, I added some red onion, mainly for color but also flavor. It was ok. I added some lime juice and salt and pepper...ba-bam! It was so good, I had to get rid of the spoon so I'd stop eating it before the fish was ready! Skipped the cilantro because BF doesn't like it, but I didn't miss it. I am looking forward to making them again!! This was a real winner!

No Bake Lime Mousse Torte

Incredibly creamy, tart, and delicious! I cannot begin to tell you the look on people's faces when they enjoy this dessert - I used it as a dessert special in the restaurant where I work, and it's been going over amazingly well. People rave! I use a tad more cream to make it a little lighter. And the only comment I'd make is to chop up the zest if you end up with longer strings...it's unappealing otherwise. I also should say I stuck with graham cracker crumbs, since some people have an aversion to gingersnaps (I personally love them and think they'd go perfectly with this recipe!) I tell people it's like if key lime pie and cheesecake had a baby...that's this dessert. Amazing!

Striped Delight

Oh, how I wish I had a photo of this! I made it twice: once to test the recipe, a second time to use it as a dessert special for St Patricks Day. The first time: I subbed real whipped cream for cool whip, used more cookies for the base, added creme de menthe to the cream cheese layer. Second time: again, subbed real whipped cream and made a chocolate mousse instead of the pudding, added mint extract to the cream cheese layer and tinted it green. It went over really well at the restaurant! Disguised as a rather modest dessert, this really hit a home run with everyone!

Caramelized Bacon Twists

These certainly TASTED delicious!! However, getting the twists to actually stay twisted was more challenging than it ought to be... I wonder if this had something to do with me using thick-cut bacon? Either way, it was fun. We ended up using them for two things at a bacon-themed dinner party: stir-sticks for a bacon cocktail, and as a creative element for our dessert shooters (maple-bacon-chocolate mousse). So fun!

A good, basic recipe... good flavors. I have used the recommended sauce combo (preserves, bbq) and a homemade sauce... both worked just fine. It's BBQ meatballs!

Caramel Macchiato Cheesecake

People are raving about this as I write this review! I brought this in to work today and everyone is LOVING it. I followed the recipe, but changed the method... since I didn't want to do a water bath but I didn't want to risk it cracking, I decided to bake it at 300'. Worked like a charm. It took longer (about 75 minutes). I turned off the oven, shoved a potholder in the door to keep it cracked open, and let it cool. Set it in the fridge overnight, and voila! =) I made a caramel sauce to go with it and it looks great! **In the future, I might try using a smaller pan or adding more cream cheese to make it taller... and I might add more coffee. but it's wonderful as-is!! Glad I finally made it!!

Insanely Amazing Jalapeno Cheese Dip

I took a recipe that could've been extremely simple to make and made it a tad more time-consuming... I bought fresh jalapenos and roasted them in the oven... removed the skins and membranes, then diced them up... I haven't a clue if it made a difference in the recipe, but this was sure a fun and delicious dip that went over well! Will keep on hand for future parties! Also, I was using a 3-in-1 buffet crockpot to hold a few things so I just baked this in a casserole dish and then transferred it in the crockpot to hold warm. Worked perfectly!

Beer Spice Cake

Moist and full of spice! This cake was good - not outstanding. My boyfriend asked if there were bananas in it... he thought it tasted more like a heavily-spiced banana bread, vs just a regular spice cake. He is enjoying it - topped with a velvety cream cheese frosting. Not a recipe I'll go back to often, unless SPICE is the name of the game!

Pumpkin Chip Cupcakes

Rating just the cake: these are delicously moist, but lacking in flavor. Since they turned out so beautiful, with their perfectly puffed tops, and so moist... I will give them 4 stars. Pump up the flavor and you'll easily have a 5-star treat that isn't overly sweet. I appreciated that the cake itself wasn't very sweet - adding the frosting would've made it a perfect level of sweetness if that's what you're going for. I just wanted a plain, delicious pumpkin cupcake with chocolate chips. More cinnamon, nutmeg, and pumpkin pie spice would get it there. I guess I'll hang onto this recipe for another shot!

Vanilla - Chocolate Powdered Sugar Frosting

Loving this recipe... I added some butter flavoring and I'm not sure if that took it over the top, but my boyfriend is a big fan (he says it's just a little different but somehow it's soo good). I will take that as a winner =) I bake almost nonstop, so he's had his share of taste-testing and providing feedback. I whipped this for several minutes and am excited to use it tomorrow to decorate some cupcakes and cakes!! Hoping it pipes as swell as it tastes!

Caesar Salad Supreme

My boyfriend really, really enjoyed this recipe! I thought it tasted wonderful too... but his vote counts more than mine =) I skipped the anchovies and meant to add anchovy paste but forgot... will add next time to give it a more "authentic" caesar flavor... but overall it was a wonderful recipe! Quick and easy!

Aussie Chicken

Yum! While I've never had this at Outback, my boyfriend has. He said it's not the same but it's still really good... I enjoyed it too. Served with some rye bread I had made and stored in the freezer (perfect!) and a homemade caesar salad (used Caesar Salad Supreme recipe from here) and we had a nice dinner in. =) I'd recommend using a mild seasoning salt--or even just S&P. I think that made a difference in the flavor... the stuff I used had a stronger that likely impacted this dish overall. Still, no complaints =)

Carrot Rice

This worked really well as a last-minute addition to our Asian-theme dinner (potstickers). I sliced the onion, just as rings, and I would've sliced them smaller had I thought it through a bit more... long circles of onions didn't go well with the size/shapes of everything else... I subbed cashews, simply because I prefer them over peanuts, and I used jasmine rice. I think the only other thing I'd recommend is using less water so the rice doesn't get as gummy/soft. I prefer the rice to stand up a bit more... but that's just nit-picky. A nice recipe!

Apple Walnut Salad with Cranberry Vinaigrette

Loved it! Apples are just coming into season so it was a fun way to celebrate the fall season =) The dressing complemented the other flavors very well - I used a white balsamic raspberry-blush vinegar (or something like that...) because I had it. We loved it! I think a little goat cheese would be a great addition for next time!

Buttermilk Oatmeal Muffins

I was so pleased with this recipe! The buttermilk does wonders to produce a great tasting, moist muffin. I also like the brown sugar--providing a deeper flavor than white sugar.

Carrot Banana Bread

I barely let this cool before I took a piece to try... the smells oozing out of the oven made me so anxious to try a bite! It was SO good. I loved the flavor. I made some cream cheese frosting to drizzle on the top - that made it taste like carrot cake! I will say the carrot cake flavor seemed to be less later in the day, you start to notice the banana more. But it's still a delcious bread, nonetheless! Pecans are perfect for this, so don't leave them out! I toasted quickly before adding them to the recipe.
