Chicken Enchilada Dip

Everyone at the party was RAVING about this appetizer! I had a can of diced jalapenos so I used that in place of the fresh jalapeno and can of diced chiles. It made for a spicier dip, but it wasn't over the top spicy. I used the suggestion from Naples of adding a dollop of sour cream (I did three, as my pan was regtangular) and sprinkled with chopped green onion. Not only did it taste great, it looked pretty too! So quick and easy to throw together, I'll keep this one handy! Served with a bag of tortilla strip chips. Yum...

Low Fat Buttermilk Ranch Dressing

Perfect recipe for us! I skipped the chives (didn't have them) and used dried dill, but otherwise stuck to the recipe. I go through phases where I'm reminded by how appalled I am by all the extra junk in bottled dressings and I'm pleased at how quickly this from-scratch dressing comes together!

Spring Lime Tea Cookies

Light, cakey...refreshing! Not something I normally look for (I prefer a chewy, chocolatey cookie) but I wanted to use up a couple limes I had on hand. They are pretty and a perfect summery treat to share with coworkers. I had some toasted coconut leftover from a different recipe, so I added a sprinkling of it to some of the cookies. What a beauty! I love the extra texture and flavor... these won't last long!

Chipotle Smashed Potatoes

Mmm! I don't eat potatoes often (perhaps because growing up it was always "meat n potatoes", and still today Sunday dinners with the family include them) but decided to buy some cute baby reds from the farmers market. I like the skins, so I didn't peel them, or cube, just boiled. I skipped the garlic since I didn't think I'd like it in this raw and didn't feel like cooking it. Added a shredded cheese blend and milk...skipped the mayo and cilantro. Loved the flavor and textural components: smoky and just spicy enough, creamy with the right amount of chunky texture, cheesy and flavorful. Bacon would certainly be a great addition, maybe with some sliced scallion and it would be reminscent of a loaded baked potato. Yum!

Muffin Frittatas

Yum! Even though I just ate eggs for dinner, I sampled part of one of these muffins that I made to take to work for breakfast... I'm already looking forward to tomorrow! I didn't have zucchini so I just used another bell pepper and used green onion since it added a nice color and mellow flavor. Scaled back the cheese so I don't turn into a fatty :) - for six of these, I added fresh dill, per Naples recommendation, and I'm glad I did! My bf can have the 6 without. :) They're cute AND so yummy!

Oatmeal Craisin Cookies

Good flavor, nice texture...the delightful crunch when you bite into it, then a nice chewiness that lasts til the end... yum. Just a tad on the flat side for my liking, otherwise good.

Lemon Fried Rice

Magic! I love when I happen upon a dish that just fits the meal perfectly and I can throw it together with what I have on hand and in a whim, when I realize I should serve something besides just shrimp. :) I didn't have parsley but didn't miss it this time around. A perfect balance of flavors; I loved the fresh zing of the lemon and how nicely it complemented the other flavors. As mentioned, I served this with a spicy shrimp...again, balancing the zip of the shrimp sauce. My bf said this is one to keep around!!

Golden Yam Brownies

Mmm... I could get myself in trouble with these. I'm not sure about the excitement of having veggies in this; I'd have to eat the entire pan to get close to a serving of veggies! I've had this recipe hanging around for awhile. I haven't made it because I usually just love to eat sweet potatoes for dinner...but I bought one and didn't have a specific recipe in mind. Anyow: yum! I would agree with several others that they are a tad greasy. I'd reduce the butter by about 1/3. I would probably cut out 1/4 of each of the sugars, but still use the glaze. The glaze is yummy! My bf suggested a brown sugar glaze next time. If only these were truly health food... :)

Spinach Stuffed Chicken Breast

A delicious recipe to use as a base; came together very quickly. I tweaked slightly... I sauteed the garlic in a skillet, which is where I then wilted the spinach and mixed the sour cream and (Monterrey Jack) cheese. I chose to cook the bacon in a skillet, rather than in the oven. My bacon was frozen, so it would've taken a bit longer...especially since I prefer to par-cook the bacon before wrapping it around the chicken so it gets crispier when baking. I also topped with a couple slices of tomatoes, which I love roasted. The only recommendation I'd have is to season the chicken a bit more. I used a smokehouse seasoning but it needed a bit more. Loved how easy it was; served with corn on the cob for an easy dinner.

Chiarello's Chicken and Pastina Soup

A perfect soup for any time of year! I picked up some chard at the farmers market and wanted to find a healthy dish to make with it. I came across this recipe and loved it for a nice light summer dinner! I didn't measure; just chopped and cooked. Following the great tip from Naples, I added the diced chard stems with the mirepoix...no need to be wasteful! I didn't add the full 2# of chicken, because I didn't want to :) and I subbed a 15oz can of diced tomatoes for the crushed, as it's what I had on hand and wouldn't want to open a can for just a cup anyways. I used farfalle because I didn't want to buy pasta just for this. A lovely recipe that has great flavor! I served with fresh fruit and a garlic-herb bread. Happy, satisfied bellies! (Until my boyfriend jokingly asks "what's for dinner?" when he's hungry again in an hour or so.) :)

Pumpkin Chocolate Chip Muffins

I REALLY wanted to like these! It's the middle of summer and I was craving pumpkin...what a let down. As I made these, I was surprised by how little fat was in these. Well, that comes with a lack of good flavor and tenderness. These fell very flat. More pumpkin and moisture. Also, the baking time is WAY off for the temp. I checked these at 17 minutes and, while they looked beautiful, the bottoms were a tad burnt. As an avid, experienced baker (and eater!) this recipe needs some serious tweaking. The only saving grace were the morsels of chocolate...

Buster Bar Ice Cream Dessert

While I haven't eaten this as a whole, I tasted each of the components and it's going to be amazing! (I made it for a dessert menu special at work and couldn't cut into it quite yet.) The fudge sauce is KILLER!! Paired with a tasty oreo crust and delicious vanilla bean ice cream, how could this not be an awesome treat?! A great treat for a hot summer day! This fudge sauce is a keeper!

Buster Bar Dessert

While I haven't eaten this as a whole, I tasted each of the components and it's going to be amazing! (I made it for a dessert menu special at work and couldn't cut into it quite yet.) The fudge sauce is KILLER!! Paired with a tasty oreo crust and delicious vanilla bean ice cream, how could this not be an awesome treat?! I used dry roasted nuts since I didn't have Spanish nuts on hand, and I think it will work, though I know Spanish peanuts is more traditional for this Dairy Queen dessert replica. A great treat for a hot summer day! This fudge sauce is a keeper!

Alyson's Broccoli Salad

I love this combo! The bacon is a must... it really does make everything better! And I prefer using golden raisins. For the onion, I'd recommend dicing vs. chopping (smaller is better). Perfect side item for picnics!

Cowboy Oatmeal Cookies

My coworkers are going NUTS over these! And normally, I just eat cookies the day I make them and I'm not interested the next day since they aren't as amazing as fresh outta the oven. Not with these! Yum! I added some M&Ms and a few fun-size Milky Way bars I chopped up (trying to use up some junk that's sitting around). The Milky Way takes these over the top and pairs nicely with the butterscotch. I was pleasantly surprised by these - I expected flatter, possibly greasy cookies, but they're the perfect balance of chewy with a slight crunch when you bite into it. I'm enjoying one now as I write this! This recipe is a keeper!

Coconut Orange Cupcakes

Maybe it's because I'm a coconut fanatic, but these are awesome-good. A quick note before I go on: they are more like a muffin than a cupcake, as some others have commented. They are a bit heavier and not as sweet as a cupcake... However, I love the light citrusy flavor they have and the coconut topping takes them over the top. I decided to use sugar in the raw for the topping and it worked out nicely. My batch: I only was able to get 16 cupcakes and they baked in about 18 minutes. And I skipped the mandarin oranges... just didn't feel like adding them. I'd make these again in a heartbeat. My coworkers are loving them! (PS: my crappy photo from my phone does not do these babies justice!)

Orange Citrus Vinaigrette

I was looking for a light dressing for my salad tonight and this worked great! Mixed greens, blueberries, peaches, tomato, scallion, fresh basil (yes, a hodge-podge as it's just me tonight!)...topped with this vinaigrette-it was a nice FRESH and light addition! I skipped the cilantro since I didn't have it and didn't want it in here even if I did have it. Also was lazy and didn't feel like mincing garlic, though not entirely necessary, I'm sure it would've been a fine addition.

Baked Slow Cooker Chicken

Ridiculously moist and easy chicken recipe. I don't know where the golden brown and baked part come into play here, but it was delicious... I made it last night, let it cook on low for about 8 hours. I was going to take it out of the crock pot to let it rest before i separated meat/bones, but it all just fell apart as i picked it up! So tender... if I wasn't using this for chicken salad sandwiches, I probably would've cooked it a little less so it held together more, but it worked well for the recipe I'll use it for. I also put veggies in the bottom of the cooker as well as the cavity (why use tinfoil when you can add more flavor). And I ended up using a lot more spices (just used some blends I have on hand and want to use up). Should be great!

Sweet Cottage Cheese and Bananas

While forcing myself to eat the cottage cheese my boyfriend left me with when he went on a 2-week trip for work, I am trying to find recipes to use up the stuff. I like it enough, but there's just so much of it... I prefer my yogurt! I found myself looking at this recipe while eating cottage cheese with a sliced banana of a small spoonful of strawberry jam. I think I prefer the sweetness and flavor of the jam to the honey, but the combo is a nice idea...perhaps I'll try it with toast, as someone suggested!
