Chicken Enchiladas IV

Delicious! Best chicken enchiladas I've ever made. But I made a few changes: I sauted onion with shredded rotisseri chicken breasts, 1 small can of corn, lots of cilantro and my homemade taco seasoning. Then I added the remaing ingredients from the recipe. Four tortillas tasted much better than corn and instead of salsa, I used homemade enchilada sauce.

Great Green Salad

Absolutely delicious! This is one of my favorite salads from this site. The only change I made was 1 tsp of Dijon instead of 1 Tbsp, just a preference.

Chinese Chicken Fried Rice I

Very easy and simple recipe. I made a few alterations: brown rice instead of white, shrimp instead of chicken and 1 tsp of fresh ginger. Very good!

Chicken Stir-Fry

Delicious! Even my kids had this dish. But I also added: 2 cloves minced garlic, 1 Tbsp ginger, 1 red bell pepper and 1/4 cup cashew nuts (I rinsed to lower the sodium in this dish). Served with brown rice. I will make it again for sure!

Baked Teriyaki Chicken

This chicken was very easy and tasty. I also used chicken breast and used lite soy sauce just like some reviewers did. It turned out better that expected.

Brazilian Carrot Cake

Good cake but I was disappointed that just like the other reviwer, the icing was absorbed, it looked weird but it tasted good. I'm also from Brazil and it has been probably over 10 years since I haven't had this cake.

Spinach and Strawberry Salad

Very good salad, but a little too much sugar. Next time I will use splenda. 3/03/09 UPDATE: Fantastic! This was my second time making this salad, but this time was excellent. I halved the recipe and used only 1 Tbsp of sugar and olive oil instead of vegetable oil. Also, I made the dressing a few hours before dinner and kept in the refrigerator, so the flavors blended really well.

Sweet Cottage Cheese and Bananas

My kids loved this dish. I used fresh garlic, my homemade tomato sauce, and reduced fat cheese. I will make it again, but it needs more sauce. Thanks for sharing this recipe!

Yogurt Cake

I love pound cake, but I'm always concerned about all the fat and the sugar. This cake was really good, I only used 1 cup of sugar, 3/4 cup of butter, fat free plain yogurt and vanilla extract. My husband and the kids also enjoyed it. I will definitely make it again!

Vegetable Shepherd's Pie

This is a good recipe. When I first looked at this recipe, I was a little affraid of how would come out, but the combination of flavors is pretty good. I used real garlic on the mashed potatoes instead of powder and since I only had 1 carrot at home, I also added 1 small zuchini, I guess you can just be creative and add different veggetables for a change. I will make it again.
