Easy Vodka Sauce

Amazing!!! Love this recipe, it's just so easy. I halved the amount of butter and heavy cream, but still tasted rich. Served over whole wheat penne.

Turkey Veggie Meatloaf Cups

Absolutely delicious! I added some garlic powder to the turkey mixture. Also, I added 2 Tbsp of brown sugar and a dash of liquid smoke to the BBQ topping.

Vegan Red Lentil Soup

Sorry, but this soup just wasn't for me. I was going to rate 3 stars but since my husband said it was ok I'm giving 4 stars. I used organic chicken broth instead of water, other than that I followed the recipe exactly as is. I don't think I will be making this recipe again.

Apple Brownies

This is such a tasty and easy recipe! To me is more of a cake than a brownie, very, very moist. I reduced the sugar to ¾ cup and was enough for us, I don’t really like over sweet desserts. I also added ½ tsp vanilla extract and I didn’t add any walnuts because I didn’t have on hand. Next time I will use only half of the butter and some applesauce to cut on fat. Thank you BakerJim!

Aunt Jules' Balsalmic Chicken with Peppers

Excellent!!!! I was skeptical at first about the amount of balsamic vinegar called for this dish. Then, after I read a few reviewers and some people said that they doubled the sauce, I decided to give it a try. I browned the chicken first and set aside, then sautéed the onions, garlic and vegetables (I only had green/red bell peppers and onions on hand), then all other ingredients along with ½ cup of chicken broth and added everything in my crockpot for a couple of hours. Served over Basmati brown rice.

Turkey and Quinoa Meatloaf

Absolutely delicious! The whole family really enjoyed this dish. I didn’t add any hot sauce because I wanted this dish to be “kid friendly”, so I did add 1 1/2-Tbsp of BBQ sauce and a dash of liquid smoke flavoring instead. I also had to add 1/3 cup of Panko breadcrumbs because I thought it needed to be a little firmer. For the toping I made my own recipe: ¼ cup ketchup, 1 Tbsp brown sugar, 2 tsp Dijon mustard and 2 dashes liquid smoke flavoring. Thanks for sharing this great recipe Drew!!! 10/04/11: Drew, I was just printing your recipe to make it again and noticed that you are in Pembroke Pines, FL. Can't believe we are so close! I'm just all the way East from you, as I live very close to the beach. I make this recipe quite often, we all love it. Thanks again!

Refreshing Summertime Salad

Excellent salad! I didn’t have watermelon, so I only used mango. I omitted the feta cheese because I’m trying to cut on fat. The fresh mint gives a really nice taste. Thanks for sharing, I will definitely make it again!

This dish turned out great! I browned the chicken first, onions and garlic and added to the crockpot. You will have to add the chipotle peppers accordingly to your taste. I was afraid of making this dish too spice, so I only used 1 chipotle pepper and some of the adobo sauce, I’m glad I did it otherwise it would have been too spice for us. Once ready, I added some fresh cilantro.

Chicken Penne Italiano

Great recipe! I was looking for a chicken/pasta dish but I didn’t want anything too creamy and heavy full of calories. This was perfect because it’s light, all the ingredients blend well and it has lots of flavors. I didn’t have any bell peppers on hand, so I only used tomatoes. I think mushrooms would go really well too. Also, I used fresh basil instead of dried, this was a really nice addition to this dish.

This coffee cake turned out really moist and not so heavy as I expected to be. I used fat free cream cheese to cut on fat and used walnuts because that's what I had on hand. Other than that, I follow the recipe exactly as is.

Spicy Roasted Red Pepper and Feta Hummus

Delicious and so simple to make! To decrease the amount of fat, I used reduced fat feta cheese and halved the amount. I also omitted the fresh parsley because I didn't have any. With all these changes it was still very tasty. Thanks Valerie, this is a keeper!

Butternut Squash Soup II

Excellent soup! I used olive oil instead of butter to cut on fat. I also added some garlic, a dash of curry powder and only added 1 potato because I'm watching my carbohydrates intake. As suggested by other reviewers I baked the whole butternut squash at 375 degrees for 1 hour, it does make it so easy. It turned out so creamy and rich, but with no addition of any fat or dairy. I will definitely make this soup again. Thanks for sharing this great recipe, Maplebird!

Japanese Zucchini and Onions

Oh my, this is excellent!!! I was looking for a dish similar to the Kobe Steakhouse and I found this one, so delicious. I used low sodium soy sauce and omitted the teriyaki sauce as suggested by other reviewers, I'm glad I did because otherwise it would be too much sodium. Thanks for the recipe!

Very good but a little too tart! I halved the amount of cinnamon because I thought it was a little too much, just a preference. I would definitely reduce the amount of cranberries next time!

We really enjoyed this apple tart! Next time I will bake it at 325 for 50-60 minutes because my crust came out a little too well done, or maybe is just my oven. Other than that, this is a great and easy recipe!

As suggested by other reviewers, I scaled this recipe to 20 servings (5 small apples) and I reduced the amount of sugar, but it was still way too sweet. I will definitely make it again, but I will have to be careful with the sugar.

Pesto Grilled Cheese Sandwich

Wow, this sandwich came out so good! I bought a loaf of Panera Bread especially for this recipe, I used fresh mozzarella instead of Provolone and American cheeses and I made my own pesto sauce (Spinach Basil Pesto) from this site.

Absolutely delicious! I had saved this recipe as soon as it was published but just now had a chance to make it. I only used 3 cloves garlic and it was perfect to our taste. Thank you Dianne, this is definitely a keeper!
