Pork Chops with Blackberry Port Sauce   I love pork chops. I love fruit with pork chops. The most common fruit accompaniment for pork is apple, but I  wanted to try something a little different. I considered apricots (I love them too), but thought they are too sweet. After… MORE

Cookies for Breakfast!   On Sunday, I was following my regular meal planning routine. I usually start by going through the grocery store ads and using what's on sale to help inspire me. I didn't find much. I stewed and started flipping through cookbooks and the piles of recipes… MORE

Braised Beef Provencale   I recently used herbs de Provence for the first time and fell in love with the flavor. So, of course, I began looking for other ways to work it into meals. This was a great dish for it. The roast beef, braised with fennel, tomato, carrots and onion,… MORE

Mushroom-Turkey Roulade with Cranberry Sauce Roulade comes from French and means "to roll." Most often, it is some kind of meat surrounding vegetables or cheese. For this dish, I wanted to use turkey breast. That meant the stuffing had to be something that would not overpower the… MORE

Sriracha Brisket with Pecorino Potatoes   There are few things I love more than a good slow-smoked beef brisket. For a "major" birthday a few years ago, Nancy told me she just wanted to hold a big party and invite all our friends to come. Her wish is my command (I am a… MORE

Bien Mardi Gras with Gumbo   My son, Quinn, is studying French in High School. Tonight, the Monticello High School French Club held a wonderful Mardis Gras pot luck. His French teacher, Madame Bryant, asked that we bring a gumbo. I had never made a gumbo before. I made as healthy MORE

What's better than a buger? A Chipotle-Salsa Burger!   When I was starting my weight loss journey, I was worried about having to give up the food I love. I have to admit that high on that list was a juicy burger (thus the need for the weight loss). One of the things I loved about MORE

About Me
I love food! But I let that love get the best of me and my weight ballooned to more than 300 pounds. My wife and I joined Weight Watchers and, over a three-year period, I lost 100 pounds. However, I refused to give up on the foods I love, from Alfredo to cheeseburgers. I set out to find ways to eat almost anything I wanted, but to prepare it in a healthy way. Now, I'm sharing my love of food and cooking with others interested in living a healthy lifestyle.
