Sometimes, you just want a nice piece of meat. It was just going to be the three of us for Christmas dinner this year so ham and turkey were out. We played with some other ideas--Cornish hens, standing rib roast, lobster--but none of it was really grabbing us. Then, I came across a recipe… MORE

I have made what I think is an incredible discovery. You may already know about it: Whole wheat pastry flour. In trying to find lighter, healthier versions of the food I love, I have incorporated more whole grains. Unfortunately, a little goes a long way and too much can dry things out.… MORE

Holiday time can be incredibly difficult if you are trying to lose weight, or even if you are trying to maintain a healthy lifestyle. Cookie exchanges, well-meaning friends bringing by that plate of fudge, the co-worker giving out chocolates as Christmas gifts. Not to mention those office… MORE

What the heck are paillards? I asked the exact same question when I saw a version of this recipe in the December issue of Bon Appetit. So, I looked it up. Paillards are scallops of veal or chicken pounded thin and then grilled or sauteed rapidly. I know, a fancy word for a simple thing, but… MORE

You all know I have a thing about red sauce. I swear, I'd eat shoe leather if it were covered with a good marinara! But I'd much prefer a good eggplant Parmesan! You wouldn't know this version is lightened up because it is so loaded with flavors and textures. Eggplant for this dish is… MORE

Hey everyone! My apologies for taking so long to post. I have been traveling for work. I had planned to continue posting nightly. As you have seen, I didn't quite keep up with my hopes. Better late than never, here's a recipe, adapted from one by the Food Network Kitchens. I lightened… MORE

Since starting this blog, I have developed a routine. At some point during the day, I make my final decision on what I'm going to cook and post it to various places, letting anyone who might be interested know. I get home from work and start cooking. After dinner and clean-up, I write and… MORE

About Me
I love food! But I let that love get the best of me and my weight ballooned to more than 300 pounds. My wife and I joined Weight Watchers and, over a three-year period, I lost 100 pounds. However, I refused to give up on the foods I love, from Alfredo to cheeseburgers. I set out to find ways to eat almost anything I wanted, but to prepare it in a healthy way. Now, I'm sharing my love of food and cooking with others interested in living a healthy lifestyle.
