Erin's Cheesy Broccoli Soup

Super delicious! I already had some broccoli and cauliflower on hand that I had roasted in the oven, so I did this a bit differently. First started with just a few tablespoons of butter which I melted. Then stirred in two tablespoons of flour and stirred for a few minutes. Then added the milk...stirred some more. Once milk was warm, stirred in cream cheese. When smooth, added the broccoli and cauliflower which I chopped up pretty fine using my food processor. Then added chicken broth. Skipped the cheddar cheese because I thought it was super deliciou without.

Salmon Tango

My husband fishes for salmon, so we have salmon for dinner often. I've tried lots of recipes and this is among the best. I did not have lemon and white wine, so skipped those ingredients but added some sliced garlic. It turned out fantastic!

Lemon Icebox Pie III

Made this as a quick dessert for a summer BBQ. I am a terrible baker, so I love any dessert that uses store bought crust and has a no fail filling. I made this the night before and it held up really well.

Spicy Tarragon Yogurt Chicken

Love, love, love this recipe. Chef John thank you so much for this dish. Just the right amount of spice and so, so tender. I serve these as a sandwich with garlic aioli and fresh greens. Mmmmmmm.

Great way to use up chicken and peppers (after I've loaded up at Costco). Healthy, fresh, easy. The leftovers make a great filling for a pita bread sandwich.

Hot Italian Giardiniera

I made this for a BBQ we were hosting where we cooked up Italian Sausages. I prepared the recipe according to the directions (minus most of the hot peppers). I didn't want it to be too crunchy. So I cooked the relish in a saute pan for about 5 minutes prior to serving so it would soften just a bit.

Vietnamese Fresh Spring Rolls

Easy to make once you get the hang of working with the wraps. They soften up pretty quickly. Also, these don't keep that well (roll wrap gets hard). So either eat them all right away. Or wrap them in the fridge in a damp paper towel and saran wrap.

Red, White, and Booze Ice Pops

Wow! These are incredibly delicious (just be sure to keep them away from the kids). I made these for a birthday bbq last weekend and my guests went absolutely crazy for them. They take a bit of time to prepare and freeze, so be sure to give yourself a day or so ahead of time if you are going to make these for a party.

Glazed Doughnut Strawberry Shortcake

Seriously?! This idea is genius!!!! So long spongy shortcake....hello amazingly delicious glazed donut...squishy sweet donut meets fresh juicy strawberries and creamy whipped cream...all in a single sized portion. I am definitely making these again for Father's Day. What Dad wouldn't feel like a million bucks after devouring one (or two, or three...) of these?

This was easy to make and my guest really enjoyed snacking on it during the game. I think I might try using sun dried tomatoes next time as an alternative to fresh since they will likely pack in more power. I think adding some chopped up pepperoni might be good too.

RITZ "Everything" Bites with Lox and Schmear

These were really easy to make. I used traditional smoked salmon rather than lox and they turned out great. I prepare a plate, put it on the table and when I walked back 5 minutes later the plate was completely empty...my guests devoured every bite. I ended up having extra schmear left over that I used as a bagel spread the next morning. Oh..and I didn't have sun dried tomatoes so I just left those out.

Chef John's Baked Lemon Pepper Salmon

My husband is an avid salmon fisherman -- so we are lucky to be able to eat salmon frequently in my house. I have tried many different ways to cook up salmon -- and I can honestly say this is no one of my family's absolute favorites. The flavor was incredible. I strongly recommend this recipe -- quick, easy, delicious...and oh yeah...probably pretty good for you too. Thanks Chef John!

Pile High Snack Stadium

Some folks in my office made this -- and it's nothing short of amazing (and delicious). I am huge salty snack fan -- so this appetizer spread was a dream come true for me. This takes a bit of time to make, but we divided up the task of making the spreads and sandwiches among a number of folks (potluck style), so it came together (and disappeared...) pretty quickly. You can find containers to hold the chips and Ritz crackers at any office supply store.

RITZ Steakhouse Bites

Wow! These are amazing. I prepared these for a wedding shower I was hosting -- they guys went crazy for these appetizers. I was looking to save money (and time) so I used rare roast beef sliced from my supermarket deli instead of the beef tenderloin.
