Authentic Pad Thai with Shrimp

I made this recipe tonight after watching the video. It was great. Tasted just like take out from my favorite Thai Restauant. Don't worry if their seems to be too much sauce when you first add everything into the pan - the noodles will absorb much of the liquid after a few minutes of cooking.

Apple Crisp II

This apple crisp is delicious. My version didn't look as pretty as the above picture, but with a scoop of vanilla ice cream on top - who cares?!. I have never been successful at making apple pies, so I'm glad there are easy apple crisp recipes like this to make me look like a hero to my family. Thanks Diane!

Baked Bacon Jalapeno Wraps

These were surprisingly easy to make and were a huge hit at my Labor Day BBQ. Instead of grilling, I backed them in my convection oven at 375 for about 10 minutes per side (started with 'cheese side' down, then flipped after 10 minutes). When they were done, the bacon was crisp and the peppers were soft. I also used half a piece of bacon per pepper.

Slow Cooker Pulled Pork

This was really easy and really good. Can't go wrong with Pulled Pork. I like to make it a day ahead, then let in sit in the fridge overnight -- seems to bind the flavors really well.

Daisy Brand Sour Cream Chocolate Cake

This cake is amazing! Super moist. I am not a very good baker, however I am happy to say this recipe turned out great. I put the baked cakes into the freezer for 1/2 hour before frosting them -- it made frosting a bit easier.

These were really good! I didn't have shrimp, so I just used precooked salmon. I also didn't have bread crumbs, so I just added crushed Ritz crackers. We ate leftover as sandwiches (placed cake between a few pieces of bread).

Zippy Summer Shrimp

Lower Fat Banana Bread I

Made this over the weekend (had 4 very brown, very soft bananas sitting on the counter). This recipe turned out great -- you can't even tell it's lower in fat. Just as moist as other more fattening versions. I did add 1/2 teaspoon of vanilla to my batter.
