No-Cook Eggnog Ice Cream

This is very simple and quick to make, but I think it's extremely sweet. That's to be expected with sweetened condensed milk, I suppose.

Sexy Fish Stew

I love the elegant simplicity of this dish--it tastes like I spent all day preparing it, but it was quite simple and quick to put together. I think I would prefer a more mild fish than rockfish next time, though that may be personal preference. There is so much great flavor in the broth and veggies that rockfish overpowers the dish.

Chicken and Veggie Meatloaf

Good with some substitutions... chicken instead of turkey, half an onion instead of a whole one (yikes, that would be lots of onion!!), sweetened dried cranberries instead of fresh, and no sauce. I'll make it again and keep tweaking the seasonings.

Thanksgiving-Style Turkey Meatloaf

Good with some substitutions... chicken instead of turkey, half an onion instead of a whole one (yikes, that would be lots of onion!!), sweetened dried cranberries instead of fresh, and no sauce. I'll make it again and keep tweaking the seasonings.

Banana Chocolate Chip Waffles

I make this recipe almost every weekend. I prep about a dozen waffles and put them in the fridge. Then I grab 2-3 on the way out the door and heat them up for 45-60 seconds in the microwave for a fast and delicious breakfast. I love this recipe because it's so versatile. I regularly add fruit and mini chocolate chips. Favorite additions include 2 mashed bananas + mini semisweet chocolate chips OR half a can of pumpkin puree and a couple spoonfuls of brown sugar. So easy!!

Waffles I

Made this following the recipe exactly--and it was amazing!! We brought this dish to an "orphan Thanksgiving" pot luck with about 14 friends, and this was by far the most popular dish at the event. This tasted like pie! We will definitely make this one again.

Curried Coconut Chicken

This was very good over jasmine rice. My partner LOVED it and said it's one of his new favorite dishes. I'd never cooked a curried dish before, so I was a little worried about messing it up, but it would honestly be pretty difficult to make a mistake here. This is already a pretty healthy dish, but I did slim it down a bit by using light organic coconut milk. It came out great!

Shaker Pork Sandwiches

I made a double batch of this for our housewarming party and everyone raved about this pork. Since then, my partner has requested that I make this on a couple of occasions. I pair this with a spicy, vinegar-y slaw made with cabbage, sweet peppers, onions, and carrots. Putting the slaw on top of the pork really makes an amazing sandwich!

Honey Mustard Grilled Chicken

I can't even count how many times I've used this recipe. Every single time, it's amazing. It seems strange to add steak sauce to the marinade, but it really works. This isn't like any pre-made marinade/grilling sauce you can buy in the store. This is a completely different taste--a much better taste!

Cincinnati Chili I

Cincinnati chili has never been my thing, but my partner LOVES it. I've tried a few recipes, and this is the only one I enjoy. I made it exactly as written and it was quite good. I definitely recommend following the direction to refrigerate overnight and reheat again the next day. We ate some right after cooking and it was OK, but the next day when we reheated the sauce, it was SO much better!

Oma's Rhubarb Cake

I've made this recipe exactly as it's written multiple times. Every time, it's a HUGE hit. Everyone's always surprised to learn there's no butter or oil in the batter, because the cake is incredibly moist. The rhubarb bakes down into the cake, making it nice and tart, and the crumb topping cuts the tartness just enough. This is a great dessert, especially when paired with vanilla ice cream or frozen yogurt, but when we bring a pan of this to the lake, everyone wants a slice for breakfast, too!

Smooth Sweet Tea

This is an excellent recipe, but I had to tone down the sweetness a bit for my own tastes. I double this recipe and only use 1/2 cup of sugar. Obviously this is better calorie-wise, as well. For those wondering what sort of tea works best, I find that a nice organic chai works amazingly well.

Strawberry/Rhubarb Crumb Pie

This was quite delicious, but I had to cut the sugar to 3/4 cup--otherwise it was way too sweet for my tastes. It also took a lot longer to bake than the recipe instructs--it took about 65 minutes. It was a huge hit at work, though!
