About this Cook
I'm a young married professional living in Seattle, WA. I've loved to cook since I was a teenager, and my husband is very happy about that! I make nearly everything from scratch. I enjoy making fast meals, but will spend a little extra time when I have it and when the recipe makes it worthwhile. I like to cook healthy foods, but never skimp on the flavor.
My favorite things to cook
Grilled chicken, grilled corn on the cob, lasagna, meatloaf and meatballs, garlic mashed potatoes, spicy honey carrots, chicken enchiladas, chili, coffee cakes, chocolate chip cookies, any kind of casserole... pretty much anything.
My favorite family cooking traditions
My grandmother used to put onion soup mix in any kind of hamburger-based dish, and I continue with that tradition today. She also used to add chicken gumbo soup to her sloppy joes, which is a great way to stretch your dollar (and it tastes good, too).
My cooking triumphs
My chili is technically "award winning." Friends and family have told me they have dreams about my food, which they call "Liz Food."
My cooking tragedies
I've never been able to make corn pudding like my mother-in-law. I'll just keep trying until I get it right!

Thanksgiving-Style Turkey Meatloaf
Good with some substitutions... chicken instead of turkey, half an onion instead of a whole one (yikes, that would be lots of onion!!), sweetened dried cranberries instead of fresh, and no sauce. I'll make it again and keep tweaking the seasonings.

Waffles I
I make this recipe almost every weekend. I prep about a dozen waffles and put them in the fridge. Then I grab 2-3 on the way out the door and heat them up for 45-60 seconds in the microwave for a fast and delicious breakfast. I love this recipe because it's so versatile. I regularly add fruit and mini chocolate chips. Favorite additions include 2 mashed bananas + mini semisweet chocolate chips OR half a can of pumpkin puree and a couple spoonfuls of brown sugar. So easy!!

Sweet Potato Casserole II
Made this following the recipe exactly--and it was amazing!! We brought this dish to an "orphan Thanksgiving" pot luck with about 14 friends, and this was by far the most popular dish at the event. This tasted like pie! We will definitely make this one again.
