Spicy Garlic and Pepper Shrimp

I altered the recipe for four servings. I substituted the veggie oil with olive oil and reduced the amount to four tablespoons. I added two tablespoons of fresh minced ginger which I added with the garlic during cooking. As suggested by another, I added some frozen mixed veggies-broc, caul, carrots, snow peas. I steamed them in their bag in the microwave and added them at the end. I also reduced the red peppers to one teaspoon. My hubby added more peppers to his plate as desired. Also served with a side of long grained brown rice. A meal we will have again.

Delicious Tomato Cucumber Salad

My husband wasn't too thrilled about trying this recipe, but was pleasantly surprised after we followed some advice of another reviewer and added some of our own ingredients. He actually said it was really delicious! I really enjoyed it. A nice fresh salad. I served it with Spicy Chipolte Shrimp Wheat Tacos. They actually paired quite nicely!

Tomato Cucumber Salad

Chipotle Shrimp Tacos

Husband thought this was going to be just another shrimp taco, but he raved about how good these were. I used less bacon, used red onion, used only one pepper from the adobe sauce,but milked the peppers. We used whole wheat tortillas and added avocado slices. We also made the tomato cucumber salad which tasted great on the taco as well as the side dish.

Asparagus and Cashews

The cashews, sesame oil and ginger nicely complemented the asparagus. Definitely one to have on a regular basis. No changes to the recipe.

Honey-Ginger Crusted Chicken

When preparing this recipe, I doubled the ingredients and to save time used already cooked rotisserie chicken from the frozen food section. I dredged the chicken in the honey, OJ and ginger and then dredged in the dry ingredients. I also squoze 1/2 a lemon into the liquid mixture. Flavorful and delicious.

Amazing, but hotter than I was expecting because my husband wanted to add the chiles from the adoba sauce. Added avocado and served on wheat tortillas.

David's Yellow Cake

I used this recipe in a boston cream cheesecake recipe that calls for a boxed yellowcake mix. I found this absolutely delicious! I only used half, so with the other half of the mix, I added some corn starch and baking soda in hopes of ensuring my cupcakes formed a dome. They didn't. I added coconut and cut up mandarin oranges. I then topped them with homemade butter cream frosting with real fresh squeezed mandarin juice and orange flavoring. They were great!

Fajita-Ranch Chicken Wraps

This was tasty. I did add some black beans that I heated separately and fresh mushrooms that I added to the chicken and onions for longer cooking. Also tried grape seed oil instead of the oil the recipe called for-no change to the flavor detected. Also used whole wheat wraps.

Grilled Asian Ginger Pork Chops

These were absolutely delicious! We were able to marinate them overnight. I also cooked some read onions with them in my pan as we were unable to grill them. Also served with a side of long grained brown rice.

Asian Beef with Snow Peas

Was a good recipe. I don't personally like peas too much, which is the reason for the lower star. My husband likes them and enjoyed the dish. I took the advice of another reviewer and doubled the "sauce".

Thai Shrimp Burgers

These were quick to make and tasty. They had some trouble remaining in tact as a burger, but that is probably due to the fact we didn't refridgerate as directed. We put them on 100% wheat Greek Pita Flatbread which was delicious! A little more veggies like some fresh spinach and slices of onion and maybe tomato would've improved it a bit.

Spinach Chicken Enchiladas

I replaced the nutmeg with cumin and added chili powder. I liked that there was spinach in it, but I used fresh. I cut the spinach into small pieces and added it to the chicken, stirred and removed from heat. I used wheat tortillas. My husband likes my normal enchiladas better. I used skim milk and low fat cheese and sour cream. Too much milk too soup.
