Thai Chicken with Basil Stir Fry

Reviewed: May 12, 2012
Made homemade coconut milk (fresh coconut shredded (1 cup) and 3 cup hot water). Added the chicken with the onions and had to substitute regulard white mushrooms instead of shitake since I didn't have any. I also chopped up some celery-- just because I had some extra to use and added them with the onions.

Thai Shrimp Burgers

Reviewed: Apr. 19, 2012
These were quick to make and tasty. They had some trouble remaining in tact as a burger, but that is probably due to the fact we didn't refridgerate as directed. We put them on 100% wheat Greek Pita Flatbread which was delicious! A little more veggies like some fresh spinach and slices of onion and maybe tomato would've improved it a bit.

Thai Pork Satay

Reviewed: Apr. 19, 2012
Marinated in a foodsaver bag for several days in the marinating ingredients. The chestnuts were hard to skewer. I didn't have a red pepper, so I only used a green pepper. There was not enough marinade to heat up, so I made the marinade again, minus the green onions. It had good flavor. We ate it with some leftover Thai Noodle that we made the night before (recipe found on allrecipes.com).

Chicken Penne with Asparagus, Sun-dried Tomatoes, and Artichoke Hearts

Reviewed: Apr. 15, 2012
It seemed like it would have all the ingredients for a tasty dish, but lacked a little extra something-spice. We cut up chicken the night before (when we had too much for another receipe). We seasoned it with basil, garlic pepper and onion powder. We then vacuum sealed it overnight. We followed the rest of the recipe except the cooking times- I didn't want my asparagus overcooked and mushy, so I didn't cook it as long. To add some additional flavor we also added some feta cheese.

Jamaican Jerk Chicken

Reviewed: Apr. 5, 2012
Seemed like quite a lot of trouble for just an okay chicken.

Spicy Chipotle Shrimp Wheat Tacos

Reviewed: Apr. 5, 2012
Amazing, but hotter than I was expecting because my husband wanted to add the chiles from the adoba sauce. Added avocado and served on wheat tortillas.

Delicious Tomato Cucumber Salad

Reviewed: Apr. 5, 2012
My husband wasn't too thrilled about trying this recipe, but was pleasantly surprised after we followed some advice of another reviewer and added some of our own ingredients. He actually said it was really delicious! I really enjoyed it. A nice fresh salad. I served it with Spicy Chipolte Shrimp Wheat Tacos. They actually paired quite nicely!

Chipotle Shrimp Tacos

Reviewed: Apr. 4, 2012
Husband thought this was going to be just another shrimp taco, but he raved about how good these were. I used less bacon, used red onion, used only one pepper from the adobe sauce, but milked the peppers. We used whole wheat tortillas and added avocado slices. We also made the tomato cucumber salad which tasted great on the taco as well as the side dish.

Meatloaf Cordon Bleu

I liked but I used less crumbs. I would add barbecue sauce to the top.

Kung Wow Chicken

added more veggies and some celery. I also doubled all the sauce--it was probably too much. Very good.

Spinach Chicken Enchiladas

Reviewed: Mar. 17, 2012
I replaced the nutmeg with cumin and added chili powder. I liked that there was spinach in it, but I used fresh. I cut the spinach into small pieces and added it to the chicken, stirred and removed from heat. I used wheat tortillas. My husband likes my normal enchiladas better. I used skim milk and low fat cheese and sour cream. Too much milk too soup.

Caramelised Soy Pork Tenderloin Recipe - Food.com - 102361

The pork was tasty. I think maybe it was slightly overcooked. My husband cooked them, so they were a little bit spicier than I thought they would be.

Asparagus and Cashews

Reviewed: Mar. 13, 2012
The cashews, sesame oil and ginger nicely complemented the asparagus. Definitely one to have on a regular basis. No changes to the recipe.

Honey-Ginger Crusted Chicken

Reviewed: Mar. 10, 2012
When preparing this recipe, I doubled the ingredients and to save time used already cooked rotisserie chicken from the frozen food section. I dredged the chicken in the honey, OJ and ginger and then dredged in the dry ingredients. I also squoze 1/2 a lemon into the liquid mixture. Flavorful and delicious.

Kai Kang Dang (Chicken Curry with Coconut Milk)

Hubby liked it. If he had more curry even though he doubled the recipe amount would have possibly earned it five stars.

I made way too much for the family. They tasted good, but I probably over-Ninjaed the chicken.

Red Beans and Rice Burgers

Reviewed: Mar. 7, 2012
There didn't seem to be anything to bind these together to make them stay into a patty. I thought they tasted OK, but the hubby said he had to drowned his in ketchup and tomato. I will probably not make this again.

Really delicious. I did add feta cheese and put them on a wheat PITA. I used spinach instead of lettuce.
