Crustless Cranberry Pie

Reviewed: Nov. 7, 2013
My 89 year old mother won't let a Thanksgiving go by without having this pie! I made it for the last two years & everyone loves it!!! I sometimes make it without nuts for some family members preferences, but when I use nuts I use pecans. I'm going to take one of the other reviewer's suggestion & add orange zest next time

Zucchini Pie

I am the author of the recipe, and just realized there is an incorrect amount of chopped onion...it should read 1 Cup chopped onion.

Bill's Sausage Gravy

Reviewed: Apr. 10, 2011
This is close to my usual sausage gravy, with a two/three changes. 1) I do not remove the sausage...just sprinkle the flour, and whisk for a few minutes....but do not allow it to start to brown. 2) I use evaporated fat free milk. Started doing this to make it easier for camping, and found it improved the entire dish. This will also lower the calories. 3) For an everyday/week-end gravy I use turkey breakfast sausage. It make it more healthy, and allows us to enjoy more frequently. For special occasions -- maple is the way to go!

Baked Orange Chicken Breasts

Reviewed: Jan. 27, 2011
I've tried a variation of this recipe, but added 1-1/2 TBSP sweet hot red chili sauce (found in Asian section of markets), and used chopped green onions for color & difference in flavor.

Spicy Mango Sweet Potato Chicken

Reviewed: Aug. 8, 2010
Made this as written, except used frozen mango cubes. I may have also used a bit more tobasco...didn't exactly measure. However, the end product was wonderful! Served with brown rice and with a frozen "stir fry" vegetable medly along side. I will make this many times, especially since I know the frozen mango works well. It is so easy to have that in the freezer, instead on depending on availability of fresh mangos.

Molded Rhubarb Salad

Reviewed: Apr. 5, 2010
This is a quick way to get the strawberry rhubarb sauce flavor very similar to what my grandmother used to serve. I used frozen rhubarb, and sugar free jello to reduce the sugar, and it was still a huge hit at Easter dinner.

Fish Roll-Ups

Reviewed: Feb. 22, 2010
This was a huge success! I did add diced celery to the stuffing, used fake crab, since that was what I had on hand, and made 1-1/2 a recipe of the stuffing to the same amount of fish. I also used reduced fat crackers and a 50/50 blend of butter with healthy spread. This will be made often!!

Sweet And Sour Glazed Chicken

Reviewed: Sep. 11, 2009
I've been doing this for years, and have also used it for turkey breasts, in the slow cooker! Sometimes I add pineapple tidbits, green/red/yellow peppers & celery to the sauce. Have also used the "Light" version of the dressing, & it came out great

Mom's Oatmeal Blueberry Pancakes

Reviewed: May 12, 2008
I used quick cooking oats, and the batter was still very runny, even after allowing to sit about 10 minutes. I added buttermilk pancake mix. Next time I would add the blueberries in the pan....if there is a next time.
