Tasty Barbecued Asparagus

This was an easy, tasty recipe. I followed it as posted, except I used home-made foil "pans" to hold the asparagus and basted a couple of times. Added garlic powder as another reviewer recommended.

Salmon Avocado Salad

I really liked this one. I used cut up regular tomatoes rather than grape tomatoes, red-wine vinegar rather than white, and dispensed with the jalapeno pepper. I would caution that the salmon may get overcooked at 15 minutes, so check it earlier. The mixture had a surprisingly melded, almost woodsy flavor. Looking back, I do wish I had put in that jalapeno pepper, but it was great as it was!

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This was deservedly a real hit at the potluck dinner. I followed the recipe exactly, except that I put more avocado (the one I used was smallish, so I used a whole one). People wished I had more dressing, but all seemed to like it. I sure did! Specifically, I was complimented on how the avocado and the feta cheese added key flavors.

Blackberry Cobbler

I came in second place in the Tallahassee Women Lawyer's Dessert Competition today, with this; and I am a man! hahaha... Melt butter on stove top, add 1 tsp vanilla to the batter, put 4 cups of berries (will use a half cup more next time) evenly on top of melted butter, sprinkle a little sugar on berries, pour on the lumpy batter (not too stirred), and check for done after 45 min. May refrig and reheat next day at 350 F. for half hour or so. These are a compilation of ideas from others. I won second place!!

This is SO good! I cooked my eggplant on the gas grill, charring the skin on high heat (rotating the eggplant every now and then) and then wrapping in foil to cook 30 min or so on medium. I saved all the juice in the foil, for the blender. This stuff gets better as it ages a few days in the refrigerator, in my opinion.

Linguini with Broccoli and Red Peppers

This is a pretty good basic recipe. I was glad to find it and enjoyed it. But it is not very flavorful to me. I was happy to have some left overs, so I am going to add a bit more olive oil and some sun dried tomato pesto to it. Perhaps I didn't add enough pepper... and maybe I overcooked the broccoli.

Raisin Broccoli Salad

Substituted red onion for pepper, veganaise for mayo, and omitted the carrots. Less sugar. Toasted the walnuts. Mmmmmmmm........ good~

Bacon Broccoli & Raisin Salad

Substituted veganaise with balsamic vinegar and a bit of sugar, for slaw dressing, omitted the bacon, substituted roasted chopped walnuts for pecans. Very good!
