Vegan Split Pea Soup II

Very good. I'm not usually a fan of split peas. I prefer thicker soups, and plan to puree half the recipe next time. I'll try adding potatoes, too, but this is a good basic soup without changing a thing.

Oatmeal Chocolate Chip Cookies I

DH raved about these cookies as written. Personally, I'd like about half the amount of chocolate chips and find them too sweet, but it IS a cookie. This is the Toll House recipe with oats substituted for part of the flour. Great idea!

Sausage and Sun-Dried Tomato Quiche

DH loved it. I used the Basic Flaky Pie Crust recipe for the crust. Substituted chopped onion for the shallots. Used dried tomato in a package-no oil-and snipped it very fine with kitchen scissors. Used a mix of colby and mozzerella grated cheese because that's what I had. Baked at 350F for 50 minutes in a French White quiche dish, let it set for 10 minutes. Used mild sausage; it was very good.

Flourless Peanut Butter Cookies

Homemade Hamburger Buns

An easy recipe with great results. I made ten buns-six 4-inch and four six-inch. I subbed in about 3/4 cup of soy flour because I didn't have enough AP flour. Great hot with peanut butter and a drizzle of honey, and equally great as a bun for Homemade Black Bean Veggie Burgers.

Orange Jewel Cookies-Evelyn

My MIL's version of orange slice cookies. Good. DH loves them. The easiest way to cut up the orange slices (I dice them) is to use a lightly buttered knife and drop the pieces into part of the sugar (I measure out the sugar, then separate about 1/4 cup to drop the pieces into, either rolling or shaking to coat).

Fresco Salsa

Very good, very fresh-tasting. We used half an onion (a large one) and a green pepper, for lack of a red and yellow one. We used Aneheim peppers, which added just a light touch of heat. Good as-is, but with potential for many different tastes from this point.

Cranberry Orange Cookies

Very good. Not a crispy cookie, soft and flavorful, sweet with the occasional tang of a cranberry. I didn't use the frosting-I'm out of powdered sugar-but DH rates these a five and I agree.

Glazed Chicken Wings

Excellent! I used tenderloins thawed from frozen. I meant to drain the tenderloins and add more sauce half-way through but forgot. A light taste of the sauce permeatted the meat perfectly and the sauce was great with the oven-baked rice. Will definitely make this again-and hopefully try the wings, too.

Skillet Beef and Macaroni

Great quick recipe; the kids like it best the second day. I usually omit the green pepper (per kids' tastes) and occasionally add corn. We like it best, reheated in the oven with grated cheese on top. I never used a recipe for this, but this IS the recipe I've made for over 35 years.

The Best Rolled Sugar Cookies

Excellent recipe. I doubled the almond flavoring and let the dough chill overnight. I rolled them to 3/8" on parchment with a coating of powdered sugar. I chilled each sheet in the fridge after cutting out the shapes and baked them for nine minutes each, plus two minutes cooling time on the sheet. DH declared them winners, and he doesn't like sugar cookies. They did puff up a bit more than I'd like, but will loojk great frosted. This is an easy recipe that made 48 cutout cookies for me. Next time I may divide the dough and use lemon extract and vanilla extract so that we have several flavors from one recipe..

Granny Kat's Pumpkin Roll

I used parchment paper, which made rolling the cake easy. I didn't use all the filling, but more than half of it. Added maple extract, along with a little extra cinnamon and nutmeg, to the filling. Very sweet, but well received at work and at home.
