Old Fashioned Fudge

This is a recipe my family made in the 1950's and 60's. It has great texture, much better than more modern fudge recipes, but is less predictable. Let the mixture cool slowly in the pan without stirring until you can let your hand rest comfortably on the bottom of the pan for 10-15 seconds, then proceed with beating the mixture as recommended. Have your pan prepped and ready to pour-the change from glossy to non-glossy is subtle; it may take a few tries to get the timing perfect.

Sausage and Sun-Dried Tomato Quiche

DH loved it. I used the Basic Flaky Pie Crust recipe for the crust. Substituted chopped onion for the shallots. Used dried tomato in a package-no oil-and snipped it very fine with kitchen scissors. Used a mix of colby and mozzerella grated cheese because that's what I had. Baked at 350F for 50 minutes in a French White quiche dish, let it set for 10 minutes. Used mild sausage; it was very good.

Chicken Biscuit Pie

Simple and good. I used leftover turkey and added poultry seasoning. Baked at 450F for 15 minutes, then left the mixture for another 15 minutes in the hot oven with the oven off and the door open before serving. The biscuits were cooked through. Will double the recipe next time.

Bat Wings

Good. These don't stand out at first bite, but draw you back for more. I may try a little seasoning salt in the mix next time. I'll try marinating them first next time and maybe reduce the sauce so that it's thicker. I used frozen wings, and ended up with more sauce than I started with. Definitely worth a try if you have kids.

Soft Oatmeal Cookies

Easy, good but not the best recipe for raisin-less oatmeal cookies. I'll try these again sometime and see if I just didn't get it right the first time. It might be the cinnamon, but we usually love cinnamon. Also way too salty. Thanks for the recipe.

Chocolate Maraschino Cherry Cake

Instant Strawberry Ice Cream

Baked Pork Steak with apples and onions

A nice change from creamed or grilled pork steak. We don't care for the Worchestershire sauce in this. The apples add a touch of sweetness-next time I'll bake and extra apple or two with this.

Strawberry Spinach Salad I

Excellent, easy salad. I halved the sugar as many reviewers recommended. We served buffet-style, so I gave diners a choice of quartered strawberries, mandarin orange segments or both. Was well-liked by all.

Beef Stew V

A good, basic beef stew recipe. I browned the meat in flour and placed it in a 5-quart crockpot. I used beef broth (1 can) rather than water and beef boullion, 3 stalks celery rather than six per personal taste. The ingredients filled the crockpot to the rim and were cooked for 8 hours on low. The stew was rated five by the family, but by personal taste we'll replace the wine with additional beef broth and add a can of Rotel tomatoes next time. The broth seemed thin while cooking, but thickened up well as it cooled.

Chilled Strawberry Angel Food Dessert

A lovely cool dessert that doesn't require baking. I found the dessert a little heavy; will try it with one package of cream cheese, as others have suggested. Easy to make, can be low-cal, low-fat if you so choose.

Skillet Beef and Macaroni

Great quick recipe; the kids like it best the second day. I usually omit the green pepper (per kids' tastes) and occasionally add corn. We like it best, reheated in the oven with grated cheese on top. I never used a recipe for this, but this IS the recipe I've made for over 35 years.

Orange Balls II

This is a recipe from our childhoods-DH & I both remember these as Christmas cookies, but they make a great, cool, very sweet treat in the summer, too. I use confectioners sugar and/or finely chopped pecans to roll them and chill the mixture, then use a small cookie scoop to form the balls.

Fresco Salsa

Very good, very fresh-tasting. We used half an onion (a large one) and a green pepper, for lack of a red and yellow one. We used Aneheim peppers, which added just a light touch of heat. Good as-is, but with potential for many different tastes from this point.
