Pineapple Sheet Cake II

This cake is delicious. However, the texture is sort of rubbery. I've made similar cakes with the same result. I'll continue to hunt for a basic pineapple cake with a texture I like. I didn't make the frosting, so cannot comment on that, but I imagine the combo is excellent.

Orange Pecan French Toast

This is a very good, very easy recipe. It is also very sweet. I'll try it again with less sugar next time. I used French bread, cream instead of milk, the zest and the juice of two oranges, and four whole eggs, because that's what I had on hand. All in all, a great, simple recipe if you're wanting a sweet dish in the morning.

Carrot Cake With Cream Cheese Icing

A great cake! I made six cupcakes (1/2 cup size, baked)) and six mini Bundt-style cakes (one cup size, baked). The cupcakes baked for 22 minutes in a dark non-stick pan; the cast-iron mini-Bundt pan cakes baked for 30 minutes, both at 325F. The cake was tender, moist, and flavorful. I did sub in 1/2 cup applesauce for 1/2 cup oil, and decreased to the sugar to 1 cup. I used an icing of 1 cup confectioner's sugar, 1/2 tsp orange zest and 2-3 tablespoons of orange juice (to desired consistency). I did not make the frosting, but I imagine it will be good, also. I will definitely be making this again soon.

Mixed Veggie Casserole(Erlene's)-serve chilled

This is a very good casserole. I must be honest; I don't like frozen mixed vegetables and don't like loads of mayonnase, and used this only to get rid of the bag in my freezer. I made a half-recipe in a Pyrex 7x11 and used the Ritz Roasted Vegetable crackers. This browned very quickly under the broiler. I had to test it when I pulled it out, and ended up eating half the pan right then. Chilled is also good. Next time I may sub in some sour cream for half the mayonnaise, or use some creamecheese thinned with mayonnaise and bake this for a warm vegetable dish. This will definitely be a recipe I try again. An easy, yummy candy to make during the holidays. Don't make too many-the pretzels aren't quite as crisp and yummy if you have leftovers. But they are still good!

Cream Cheese Pickles

Very good. I used the refrigerated Claussen pickles to be certain the pickles were crunchy. The Buddig packaged meats are too small; I bought thinly sliced roast beef and ham at the deli and made half with the ham, half with roast beef. Great if your coworkers are on the Atkins diet!

Bec's Oven-Baked Fajitas

Easy, adaptable and tasty. More heat can be added by using fresh jalapenos and hot sauce if desired., or lime and cilantro if that is the taste you are craving. This is great for a family as seasoned. Leftovers can be used for Chicken Tortilla Soup.

Banana Oatmeal Bread

This has a wonderful taste and texture. I did add a rounded 1/2 tsp of cinnamon, subbed dried cranberries for the raisins (I didn't have raisins), used butter instead of shortening, and added a handful of pecans. Next time, I'll try adding some wheat germ and bran and reducing the shortening and sugar, possibly adding some applesauce instead. A great breakfast bread spread with peanut butter.

Quick Pickled Jalapeno Rings

Five-star for ease and taste. The initial taste is good, the jalapenos hot with a slight pickling. I'm hoping these will taste quite pickled in 4 weeks. I doubled the recipe and got two pints. I also made a jar of hot pickled green beans with the juice of the jalapeno mixture.
