This recipe was fabulous. I'm EXTREMELY picky about what pork I'll eat, this is by far the best I've had in at least 10 years. The flavor went all the way to the center, and yet wasn't overpowering. The clove flavor was great. I might have used a bit more spices than the recipe called for, but it turned out great. Nothing but rave reviews from the family.
I've found that, shredded, this meat is perfect for the addition of NC vinegar/pepper based bbq sauce. We enjoy the pork loin as is the first night, and I shred up the remaining and toss with home made NC bbq sauce (vinegar, garlic, red pepper, clove) and have sandwiches the next day. I would give this recipe 6 stars if I could.
