Authentic Huevos Rancheros

Could be the green salsa, which I normally prefer, or the fact that I had to share one tortilla between 3 servings. i didn't love it, but would try again and follow recipe more closely/traditionally.

Cheesy Ham and Hash Brown Casserole

Every single person who ate this, raved about it. Took the advise of another commenter, and added salt and pepper and about 4 chopped up green onions. I thought it was very, very good...not magical, but very good. Everyone else seemed to think it was magically delicious. Will make this for brunches from now on. Great share. Thanks

Sweet Restaurant Slaw

Not bad! Not a huge cole slaw person, but it seemed to go well with NC BBQ. This was the best recipe I'd tried, my guests all complimented it! Would make again...I DID CUT SUGAR tho. I think that much sugar would ruin things.

Easiest Egg Nog

Easy, sure, but the raw eggs freak me out a little. I did try it tho, figuring the Jameson's we add would counter the salmonella...overall tho, I found it to be too thin and without the rich eggy flavor that makes egg nog. It is by no means bad, we're enjoying it now, but in the future would take the time to make the "cooked" version. Just not "it" for us.

Asian Avocado

This was ok. I can see where some may really enjoy the way the asian flavors compliment the buttery avocado. It was different and good, but not having too much experience with fresh ginger, I found it to be a little overwhelming. The salt in the soy was strong too...I added a little olive oil to cut the flavor down. Will probably make again, for a change from the norm...but not my fave.

Baked Scallops

Very good, very quick and easy prep. Only change was to add some crushed red pepper flakes. A squeeze of fresh lemon to plate would finish perfectly. Came out crunchy and flavors were great.

Holly's Hummus

Not impressed. Not sure what I did wrong, I made it exactly to the recipe, but I was underwhelmed. Don't find it "zesty" or "light". Maybe add'l lemon juice or some cayenne pepper would help things. Consistency was thick, and it lacked pizazz for me. :(

Awesome, as is. Don't have to change a thing (But I sometimes do, depending on mood.) Salt & Pepper. Worstershire. Fresh herbs. Practically perfect base recipe though. Always turn out great!

Chicken Pot Pie IX

Forgot the celery - subbed add'l celery seed and 1/4 tsp of celery salt, threw in some frozen corn and it was great! Made by the recipe the first time, and it was fabulous. Better than the ($30) pies from two of the local gourmet pie shops. Our fave so far.

To Die For Blueberry Muffins

These are perfect and work just as well with fresh raspberries, and I'd imagine any other berries. Sometimes put nuts in, sometimes not - sometimes don't do struesel...but they're always perfect and couldn't be easier/quicker to make.

Garlic and Onion Burgers

"OK". Italian seasoning gave burgers a "strong" taste. Might make again, but would reduce the amount of seasoning. Came out a bit dry. Probably won't make again.

Chicken Enchiladas II

This is awesome, as-is, but having made it so many times, I've added a few things to it. I've begun doubling the recipe (for leftovers :), at least doubling if not tripling the amount of green chilies for more tang, adding a can of black beans and, if available, fresh tomatoes from our garden.
