Easy Elegant Skillet Chicken Supreme

Loved the chicken. Me and youngest kid loved the sauce too, but the other 2 family members ranged from OK to hate it. Maybe I'll mess around with the sauce next time.

Cheeseburger Soup I

This was very good, but lacked something for us. I used homemade chicken stock combined with organic chicken broth. My stock is not very salty. Once I added salt and pepper, this turned out great. I used 3/4 cup cream and 3/4 cup milk to get an ultra creamy taste.

My boys (3 & 6 yrs old) ate this OK, but it is far from their favorite. At a glance, the ingredients suggest a healthy breakfast / snack bar - but it is lacking in something.

Raspberry Oat Bars

This was yummy. I used some whole grain flour and some oat bran, so it was crumbly - but yummy. I also used 100% fruit spread, to limit the sugar. Both young boys liked it so much. My 3 yr old calls it cake! ;)

Turkey Pot Pie I

This was very labor intensive for a moderately experienced cook. But it was WELL worth it. I went around the table and asked each to rate the recipe and the only one who seemed not pleased was my 2 year old. Now I just wish I had the turkey leftovers at my house ;).

Cheese Sauce

Creamy Peanut Butter Fudge

Good - but not the best. This makes a TON of fudge. The thing I like best about this one is that I can use a sugar substitute for the white sugar, bringing the calories down and lowering the effect to glycemic response. Many other peanut butter fudge recipes don't call for white sugar, so it's not an option.

Easiest Peanut Butter Fudge

Beware - I cannot rate the recipe as written, but with the adjustments below it is 5 stars and then some. I think it would have been too sweet and not peanut buttery enough as written.- 2 c brown sugar- 1 c peanut butter- 3 c conf sugar

Buckeye Balls II

Absolutely yummy. I took them to a family Christmas party and even the "non-sweets" people loved them. I did reduce the sugar to just over 2.5 cups and I replaced the shortening with 1/4 piece of parrafin (like my mom used to do).

Cheesy Catfish

Italian-Style Spaghetti Squash

Not bad - not bad at all. I used spaghetti sauce (easier) and omitted the zuchini. I added It. Sausage for a protien source. My only problem is that the strands were still a little crunchy. Is that OK, or should I have cooked it longer?

Surprise South Beach Mashed 'Potatoes'

I read the reviews and still didn't know what to expect, so tried this. I like cauliflower, but this was simply a bland mushy version of it. I even added Mrs. Dash. I'll stick to the steamed version with light butter spray.

Easy Cheesy Chicken I

My husband is not one to praise food, so when he says to my 4 year old son, "Try the chicken, it's really good!" - I have to give the recipe 5 stars. I don't usually like chicken breasts because they tend to be dry and even tough sometimes, depending on the chicken. But these turned out very tender. And the combination of soups and sour cream made a really nice gravy for mashed potatoes.
