Banana Crepes

These crepes are the best!!! I took the advice of a few of the reviewers. I began by starting with the bananas first. I allowed them to cook while I prepared the crepes. I used a blender to make a smooth batter, and I also doubled the ingredients for the sauce. This is a definite keeper!!!

Mom's Cornbread Stuffing with Pork Sausage

My mother used to make her cornbread stuffing this way when I was growing up, and it's the best way I know to make cornbread stuffing. I start off by baking a small pan of cornbread by mixing one cup each of cornmeal and flour with 2 tsp. baking powder, and water. Once cooled, the cornbread is crumbled into a large mixing bowl along with the sauteed onions, chopped bell peppers, and celery. In addition to the pork sausage, we cook the turkey neck, gizzards, and the turkey heart in a small pot with 3 cups of water. The cooked meat is removed from the neck bone and chopped along with the cooked gizzard and heart, all of which is then added to the cornbread mixture. The remaining broth is added to moisten the stuffing with additional water as needed.

Four Cheese Macaroni

I made this Mac & Cheese for a potluck lunch at work and my coworkers loved it. The recipe was followed exactly as written, which resulted in a nice and cheesy M&C. I will definitely be using this recipe again and again. Thanks for sharing!

Great recipe! Extra garlic and parsley was added along with white wine, bread crumbs, and freshly grated Parmesan cheese. My family and I absolutely loved this dish!

These were really good! They were quick and simple to make. The only change I made was that I used vanilla extract instead of anise. The dough was very easy to work with. I dipped the bottoms of half the batch in melted chocolate. My hubby preferred them without the chocolate, but these are good with or without. Thanks for sharing.

The dough was very easy to work with. I dipped the bottoms of half the batch in melted chocolate. My hubby preferred them without the chocolate, but these are good with or without. Excellent recipe! I followed the advice of some of the other reviewers and opted to spice it up a bit. I replaced the French vanilla flavored powdered non-dairy creamer with 2 tsp vanilla extract, and I used only 2 cups of white sugar. I also added 2 tsp of ground cardamon instead of 1 tsp; 1 tsp of ground allspice, 1 tsp nutmeg, and 1/8 tsp white pepper. This made such a smooth and delicious cup of tea with the perfect blend of flavors--what a treat! Thanks so much for sharing.

Cajun Crawfish and Shrimp Etouffe

This dish was a hit with my family. I followed the recipe as written, except that I substituted pre-cooked chicken for the crawfish and added three bay leafs and about a half cup of okra. This recipe is a keeper. Thank you for sharing.

Mom's Coleslaw

I made this coleslaw for a potluck lunch at work and it turned out very well. I followed the recipe as written, but I also added 1/2 cup of raisins, which is the way coleslaw is usually made here in the Virgin Islands. It was enjoyed by all.

Double Layer Pumpkin Cheesecake

Great recipe! I made this for Thanksgiving and added a pinch of ground cloves and a teaspoon of vanilla extract to the pumpkin mixture. I used a gingersnap crust. This cheese cake had the perfect blend of spices and awesome flavor.
