Awesome Sausage, Apple and Cranberry Stuffing

I absolutely love this stuffing!!! I've made it a few times for thanksgiving. I actually used to hate stuffing before trying this recipe. I usually omit the celery because I can't stand the stuff. This recipe is FANTASTIC!! I can't rave about it enough!

Amazingly Easy Irish Soda Bread

So moist and tasty! I served this with Beer Braised Irish Stew and Colcannon from this website. We used it to sop up the au jus from the stew. SO incredible!

Basic Cheese Polenta

Caramel Brownies II

OMG! These are so amazing! It actually didn't take me as long as some other people to melt the caramel. But I did use a large pan which distributes the heat over a larger area so maybe that's why it melted faster. I brought them to work and everybody said they were KILLER delicious!! I wouldn't change a thing!

Apple-Feta Tossed Salad

This is always a big hit whenever I serve it, many people ask for the recipe. I did alter it a bit, I added a 1/2 cup of dried cranberries and used poppyseed dressing instead of the dressing in the recipe. Very delicious!

Ratatouille

Most delish! Very easy to make, I followed the recipe. The only variation I made was that I added some low-fat shredded mozzarella in the last few minutes of cooking. I served it with some multigrain angel hair pasta and some fresh ground pepper. I may try adding some fresh basil in between layers next time.

Garden Pasta Salad

This was a huge hit! I served this at an event I was catering. I used tricolor tortellini instead to make it a more filling salad. I omitted the celery, I didn't think it texture would go with the other ingredients. I added sliced olives and opted for halved grape tomatoes. I also used less dressing as others suggested. Delicious! People came back for third and fourth helpings.

Cajun Baked Catfish

Mmmmm so tasty! I loved the seasoning! I made it exactly as is and I felt the proportions were perfect. Served with some baked sweet potatoes and steamed broccoli, healthy and delicious!

Slow Cooker Mashed Potatoes

Loved them. The slow cooker method made it so much easier to get a smooth consistency to the mashed potatoes. Plus when cooking Thanksgiving dinner it's nice to just stick these in the slow cooker and you have one less thing to worry about.

Braised Balsamic Chicken

I loved this! I couldn't get enough of it. I honestly literally drank the remaining sauce when I had eaten all the chicken and pasta. I served this over some multigrain angel hair pasta and steamed squash. The chicken was very moist, tender and flavorful.

White Chocolate Macadamia Cranberry Dreams

This was exactly what I was looking for! This is my favorite combination in a cookie and these were so delicious. The only change I made was to add more cranberries and white chocolate chips, probably about 1/2 C of each but you can estimate to your liking.

Roasted Sweet Potato Corn Chowder

Wow! Totally loved this! I added about 1/2 C cream at the end of cooking. I know some people didn't think there was enough liquid but I like the thickness of this chowder. I think it's perfect for a hearty warming chowder on a cold day.

Hawaiian Pork Hash

This was delicious!!! I made these for a party I was catering and people couldn't stop raving about them! I omitted the shrimp and doubled the pork due to some people's food allergies but they were still fabulous! Will definitely make again!

Creamy Broccoli Soup

This is fabulous!!! Very easy to make, a great way to get rid off excess broccoli. I love how the oregano and broccoli taste together. I actually used, 1% milk and 2% cheese to lower the fat and calorie content and it still maintained its thickness and is still very tasty. I'm a very picky eater so that's sayin' a lot!

Fresh Asparagus Soup

Love it, easy and great hot or chilled. I didn't have a problem with stringiness - not sure if people used too much of the tough ends of asparagus *hint: if you hold the asparagus spear by both ends an bend until it snaps, the bottom half where it snapped naturally should be discarded.* I also simmered the asparagus and onions, covered for about 15 minutes or until very soft. I added some fresh grated pepper, can't go wrong with that! Love it, will be making it often!
