Quinoa Vegetable Medley

This was a good base recipe but the cooking times are very off in my opinion. I hate overcooked veggies. I would make the following changes. Cut down to 1 C of broth, the veggies create a lot of juices which were not completely absorbed by the time the quinoa was done. Let the quinoa simmer for 10 - 15 minutes before adding your mushrooms, zucchini, etc. I would also add the garbanzos at this time. I like adding a cup of quartered cherry tomatoes as well. Simmer for about 5 more minutes. Increase spinach to 3 or 4 cups and add at the end of cooking. The spinach will wilt from the heat of the dish. Adding a few shakes of crushed red pepper adds a nice little bit of heat too.

Jack-O-Lantern Burgers

These were a big hit at my Halloween Party.People loved the Jack-O-Lantern cheese slices. I used a different method to prepare the meat, very flavorful and juicy: 4lbs beef, 4 T Worchestershire sauce, 2 T soy sauce, 4 t garlic powder.

Annie's Fruit Salsa and Cinnamon Chips

I have to rate this more based upon client input than my own taste test. I tasted the salsa and chips separately, which were both good but I'm sure they're better together. I used square wontons instead of tortillas, sprayed each side with the butter spray, then dredged in the cinnamon sugar. I pressed the wonton squares into a mini cupcake pan and baked. Right before serving filled the cups with the salsa. I had people run up to me just to tell me how great they were.

Asparagus Frittata

I really enjoyed this recipe. It's the first time I have made a frittata. I love how healthy and yet flavorful this recipe is. I can imagine this recipe working out well with different veggies and meats as well. It's a great starting place.

Margaritas on the Rocks

These were pretty good. Definitely better than store bough mix but not quite perfect. I like a stiff drink but the alcohol taste was a little too much for my guests and for me as well. Will probably still look around for a best recipe.

Blackberry Cobbler II

Wow, soo good! This disappeared in a hurry! I also added cinnamon to both the dough and berry mix. I'm torn on the dough thing...I think it was great as is but extra dough wouldn't hurt...but I think 2x as much would be overdoing it.

White Chocolate Macadamia Cranberry Dreams

This was exactly what I was looking for! This is my favorite combination in a cookie and these were so delicious. The only change I made was to add more cranberries and white chocolate chips, probably about 1/2 C of each but you can estimate to your liking.

Appalachian Slaw

I was pleasantly surprised with this recipe. The ingredient list is so simple I didn't expect to enjoy it as much as I did. I am actually not a very big fan of coleslaws and am very picky as to how they're prepared. I couldn't get enough of this - I almost ate a whole bowl by itself. If I was going to change anything I would probably use less salt next time.

Vegan-Friendly Falafel

These were so good! I used canned garbanzo beans but otherwise kept ingredients the same. I prefer to bake vs. fry for health reasons, so they were baked at 375 until golden brown, about 20 minutes. I salted some zucchini til it was soft, rinsed and dried...then wrapped the falafels with the zucchini and some tomato chutney, tastiness!

Lean Steak and Mushroom Salad

Very tasty although I did alter the recipe a bit. I kind of combined this recipe and the Flat Iron Steak and Spinach Salad recipe from A/R. I'm not a big fan of raw mushrooms so I sauteed 1/2 sliced red onion, in about 1 T of olive oil until tender than added 1 sliced portobello and 1 1/2 sliced red bell pepper, and a splash of red wine and cooked until tender. I served this on top of some baby spinach, with the steak, parsley, tomatoes and dressing from this recipe. So satisfying!

Dijon-Tarragon Cream Chicken

This recipe is divine! I did make several adjustments though, but regardless the recipe is great. I actually did this with 2 halibut fillets instead of 4 chicken breasts. I used only 1 T of smart balance olive oil spread. I kept the proportions for the sauce the same. I deglazed with about 1/4 C of white wine and added 2 gloves of garlic, minced. Once the wine had reduced I added the cream (I used fat free 1/2 and 1/2) and tarragon. Then followed the rest of the recipe as described. I served with "Fast and Easy Spinach with Shallots" from A/R and a butternut squash puree. I was in heaven, soooo good!

Grilled Tuna Steaks with Grape and Caper Salsa

Yum Yum! This is the first time I've worked with tuna steaks and like others I overcooked em a bit but this was still really good. I loved the salsa, I kept eating it by itself. I served it alongside some grilled cheesy polenta, the combo was awesome!

Fresh Asparagus Soup

Love it, easy and great hot or chilled. I didn't have a problem with stringiness - not sure if people used too much of the tough ends of asparagus *hint: if you hold the asparagus spear by both ends an bend until it snaps, the bottom half where it snapped naturally should be discarded.* I also simmered the asparagus and onions, covered for about 15 minutes or until very soft. I added some fresh grated pepper, can't go wrong with that! Love it, will be making it often!

Spicy Bean Salsa

Addicting is right! Made for a party I was hosting and attending. I didn't think it was that spicy, and could maybe use some cayenne pepper...but then some people said that it was perfect as is and I shouldn't change a thing. All in all, very enjoyable!

Papaya Bruschetta

Catered a mixer with this recipe. They had a very small budget ad I was looking for a recipe which was low on cost but still impressive. Bruschetta usually fits the bill for those requirements but I wanted to do something a little different than the norm. This worked perfectly, guests loved it, great for summertime serving. I doubled the recipe but only used 5 tomatoes. I think if you used the full amount the flavor of the papaya would have been overwhelmed.

Healthy Garden Salad

Beer Braised Irish Stew and Colcannon

My only complaint about this was there wasn't enough!!! OMG this was sooo good! The meat was incredibly tender, it melted in my mouth. There was five of us and the whole thing totally disappeared! I also used guiness - no trouble with bitterness. I think this was better than corn beef and cabbage. I added a couple of tablespoons of sour cream to the colcannon to enhance the creaminess. Deliciousness!
