Low-Fat Blueberry Bran Muffins

It's Chili by George!!

Great Chili! My bf said it was the best chili he's ever had and isn't usually a big fan. I served it with fritos, shredded cheese, a dollop of sour cream, and green onions. Delicious!

BBQ Pork for Sandwiches

Great recipe! I agree with a lot of reviewers that Sweet Baby Ray's BBQ sauce is far better than any other bottle version I've tried! I'll never go back to any other brand!

White Chocolate Macadamia Cranberry Dreams

This was exactly what I was looking for! This is my favorite combination in a cookie and these were so delicious. The only change I made was to add more cranberries and white chocolate chips, probably about 1/2 C of each but you can estimate to your liking.

Cream Filled Cupcakes

Very tasty, pretty easy and creative. I agree with other people that you need to squeeze the pastry bag slowly and evenly to get a good amount of filling in. Everyone kept asking how I got the filling in the middle, I thought it was more amusing to keep them in the dark.

Peanut Butter Cup Cookies

These definately weren't bad. They are easy to make and tasty but I'm giving three stars because it didn't have an "oh my god" factor to me. The White Chocolate Macadamia Cranberry Dreams recipe on a/r has that factor in my opinion. I think the peanut butter cookie part washed out the effect of the peanut butter cup inserted in the middle. I think a sugar cookie base would have been better.

Blackened Chicken

This was quick, easy and tasty. The chicken came out SO moist and tender, I only needed to bake it for about 10 mins to finish cooking. I love spicy food but the cayenne was a little overpowering to me and blocked out a lot of the other flavors in my opinion so I may try toning it down a bit next time.

Asparagus Frittata

I really enjoyed this recipe. It's the first time I have made a frittata. I love how healthy and yet flavorful this recipe is. I can imagine this recipe working out well with different veggies and meats as well. It's a great starting place.

Spicy Sweet Potato Soup

This was pretty good and very filling. I thought the ginger was a little overpowering. If I were to make this again I would reduce it to only 1 T. One thing I didn't like was that this soup didn't keep well. I tried reheating it a couple days later and it was more like mush instead of soup. I would probably only make this soup again if I was serving it to enough people to finish it in one sitting.

Roasted Sweet Potato Corn Chowder

Wow! Totally loved this! I added about 1/2 C cream at the end of cooking. I know some people didn't think there was enough liquid but I like the thickness of this chowder. I think it's perfect for a hearty warming chowder on a cold day.

Awesome Sausage, Apple and Cranberry Stuffing

I absolutely love this stuffing!!! I've made it a few times for thanksgiving. I actually used to hate stuffing before trying this recipe. I usually omit the celery because I can't stand the stuff. This recipe is FANTASTIC!! I can't rave about it enough!

Tiramisu Layer Cake II

I was so proud of this cake when I made it. It looked gorgeous and tasted amazing. All the different layers looked beautiful! I will definitely be making this again. Next time I will try making two coffee layers instead of one and will double the amount of coffee/liquer mix that's poured on the cakes.

Spicy Basil Chicken

I thought this was excellent. I used 2 chopped serrano chile peppers instead of 3 as some people said it was too spicy. It was just perfect for me, a nice kick but not overpowering. Will definitely make again. It was a little salty so next time may use garlic powder instead.

Jenn's Out Of This World Spaghetti and Meatballs

This was very tasty but I did make some modifications. I only used about a tablespoon of sugar and 1 can of tomato paste. I stuck it in a crockpot and let it simmer overnight for about 7 hours. It did come out a bit oily so I may try buying leaner meat the next time I make it but the meatballs were SUPER tender and juicy! This smelled so good that it woke me up and I had trouble falling back asleep!

Garlic Chicken with Orzo Noodles

I thought this was really enjoyable, light and healthy. I didn't think it was too bland but I did cook the orzo in chicken broth instead of water and upped the garlic count a bit.

Lemon Cream Cupcakes

I really liked the density and moistness of these cupcakes. I added a few drops of lemon extract to boost the lemon flavor. I didn't use the frosting from this recipe and instead used the "Whipped Cream Cream Cheese Frosting" recipe on a/r with some added lemon zest and lemon juice. They turned out great.

The frosting tasted great but wasn't as firm as I had in mind. Perhaps if I had whipped the cream until it was firmer it would have held up better. I added lemon zest and lemon juice to it which gave it a nice zing.

Red Skinned Potato Salad

WOW! This is by far the best potato salad I've ever had. I omitted the celery cause frankly I can't stand the stuff. I love the smoked hickory flavor the bacon adds to this salad. A lot of potato salads have a real eggy taste but this one is perfect! I might try adding chives next time as I will be definitely making this again!
