Spanish-Style Quinoa

This was great!! I made a few changes. I used a can of diced tomatoes, yellow peppers instead of green, 1 1/4 C of chicken broth, I doubled the cumin and garlic powder, and a few dashes of salt and ground pepper. I stuffed green peppers with the mixture, baked for 20 minutes and sprinkled with shredded cheese. Served with black beans.

Broccoli Chicken Divan

A nice comfort food dish that you can easily modify to make more healthy without sacrificing taste. I used reduced fat/sodium cream of mushroom soup and reduced fat cheese. I also seasoned the chicken with some lemon pepper. I think you could probably add sliced carrots to this as well to increase the veggie content.

White Chili I

I have mixed feelings about this. There is way too much chicken, I would really recommend using only two chicken breasts. I slow cooked the chicken the green chili/broth mixture until the chicken shredded easily. It was still an odd consistency for chili. I can't imagine dicing it would be much better as it would make it much more runny. The cayenne needs to be increased and adding chili powder improves flavor. The concept is good...execution needs some tweaking to get something delectable.

Asian Chicken Salad

This was light and refreshing. I do think there was too much oil in the dressing and would reduce it next time. I also would recommend adding mandarin oranges, slivered almonds are a good substitute for the fried noodles - healthier and tastier.

Asian Beef with Snow Peas

This was good but not great. It didn't really pop in anyway. I would recommend using sesame oil instead of vegetable oil to anyone making this. I had sprinkled some toasted sesame seeds on top and found that it added much more flavor so I can only imagine that using sesame oil would greatly improve this. I also think this would have been better with a little kick like chili peppers.

Braised Balsamic Chicken

I loved this! I couldn't get enough of it. I honestly literally drank the remaining sauce when I had eaten all the chicken and pasta. I served this over some multigrain angel hair pasta and steamed squash. The chicken was very moist, tender and flavorful.

Mmmmm so tasty! I loved the seasoning! I made it exactly as is and I felt the proportions were perfect. Served with some baked sweet potatoes and steamed broccoli, healthy and delicious!

Cucumber Raita

I was very disappointed with this recipe. I love raita but this was missing a lot of flavor and was the wrong consistency in my opinion. The raita I've had is very soupy and this isn't that way at all, it was too thick. I think 2 cucumbers was way too many, 1 would have been much better but that still doesn't fix the spice and consistency issue. It wasn't terrible but if you enjoy a nice Indian raita then keep looking.

Andrea's Pasta Fagioli

Very tasty and very little prep work required! I did make some adjustments. I used multigrain rotini and 2 cans of diced tomatoes in place of tomato sauce. I also used chicken broth in place of water but I noticed that a few people had said it came out too salty so I used the reduced sodium version. I omitted the salt completely and made sure to drain my beans. I kept the pasta separate from the soup as well. I simmered uncovered and the consistency seemed perfect to me, not too thick at all.

Great Chili! My bf said it was the best chili he's ever had and isn't usually a big fan. I served it with fritos, shredded cheese, a dollop of sour cream, and green onions. Delicious!

White Chocolate Macadamia Cranberry Dreams

This was exactly what I was looking for! This is my favorite combination in a cookie and these were so delicious. The only change I made was to add more cranberries and white chocolate chips, probably about 1/2 C of each but you can estimate to your liking.
