Ham and Swiss Braid

This was a huge hit at a party I catered. I used Pilsbury Crescent Dough instead of the dough recipe provided to save time. I made 2 kinds, one ham and one roast beef. For the ham I brushed the dough with dijon mustard and added some caramelized onions between the layers. For the roast beef I brushed the dough with a homemade horseradish cream and also used the onions with monterey jack cheese. People were raving about it and fighting for left-overs.

Green Chile Frittata

This was very fluffy and tasty. I did alter the recipe a bit, I used 1/2 egg whites, and 1/2 egg substitute and low fat cheddar cheese. My guests couldn't tell the difference! I also added some sauteed onions and mushroom and diced thin-sliced deli-style ham. I served it on top of some black beans, topped with sour cream, salsa, and avocado slices. Yuummm!

Finger Lickin' Onion Dip

This was ok. I would recommend dicing the onions cause it was a little hard to eat with the long slices on onion. I felt like it was missing something though, needed a little more oomph.

Ratatouille

Most delish! Very easy to make, I followed the recipe. The only variation I made was that I added some low-fat shredded mozzarella in the last few minutes of cooking. I served it with some multigrain angel hair pasta and some fresh ground pepper. I may try adding some fresh basil in between layers next time.

Cranberry Sauce

This recipe is replacing my previous cranberry sauce recipe. It's perfectly sweet. I used 3/4 C OJ and then added 1/4 C Grand Marnier in the last few minutes of cooking.

Jalapeno Corn Bread

These were very moist and everyone really enjoyed them. I gave it 4 stars based on the opinions of others but I personally didn't feel like the jalapeno flavor really stood out though. Next time I might try sauteing the jalapeno first or using the canned variety. I think I'd also add some grilled or sauteed sweet corn.

Gourmet Sweet Potato Classic

I actually enjoyed sweet potatoes this year. In the past I've made the marshmallow variety by request but never again! I also cut down on the sugar, 1/3 of white, and 2/3 of brown. This makes a lot so if your party isn't too many then I'd suggest halving it.

Turkey Brine

This was amazing!! I will ALWAYS brine my birds in the future. The meat was soooo flavorful and the flavors were all the way through the meat. I combined this method with a few others on this website. I used the Rosemary Roasted Turkey recipe for seasoning after brining but instead of olive oil I used butter and then stuffed the bird. I poured chicken stock and white wine in the bottom of the roasting pan, used and roasting rack, I tented the bird for the first 2.5 hours and basted every 30 mins.

Skewered Grilled Potatoes

Decent, not amazing. I think they'd be better with fresh garlic because they weren't quite garlicky enough for me. I wasn't crazy about the wine aspect. It added kind of a funny twang. It just seems like a basic potato recipe to me.

Savannah's Best Marinated Portobello Mushrooms

Very nice. I grilled these instead of baked, and melted some low fat swiss during last few minutes of cooking. Served on some whole wheat sandwich thins with horseradish sauce, spinach, grilled onions, and tomatoes. Tasty burgers!

Southwest Chicken

Very enjoyable, the chicken came out very moist and tender. I sauteed some onions and garlic in the oil prior to browning the chicken, which I seasoned with salt and pepper. I upped the cumin to about 1tsp, added 1/2 tsp chili powder and 1/4 tsp of cayenne. Served with brown rice. I imagine that a dollop of cool sour cream with some minced cilantro would also be tasty.

Sugar Cream Pie I

The flavors were very good but this didn't set up like I expected. It was more of a pudding consistency and I was expecting something firmer. Maybe I didn't cook it long enough before pouring into the pie pan although it was thick and creamy when I poured and I refrigerated it overnight...I will try again though because it seems like it'd be a very enjoyable dessert if I could get it right.

Key Lime Pie VII

So delicious and creamy! And incredibly easy to prepare. It is fairly tart though so it may be overkill for those who aren't big fans. I brought this to a BBQ and it disappeared in a flash!

Garden Pasta Salad

This was a huge hit! I served this at an event I was catering. I used tricolor tortellini instead to make it a more filling salad. I omitted the celery, I didn't think it texture would go with the other ingredients. I added sliced olives and opted for halved grape tomatoes. I also used less dressing as others suggested. Delicious! People came back for third and fourth helpings.
