Healthy Garden Salad

Light and refreshing salad, and surprisingly addicting. The longer it sits the better it gets. Had it alongside some blackened tilapia..nice contrast of hot and cool.

Blackened Tilapia with Secret Hobo Spices

It was good, loved the spicy. The only thing I didn't like was the celery seed...never liked celery..apparently that taste carries over to its seed as well! Even in such a small amount it was a flavor that stuck out to me. Next time no celery seed...otherwise, great recipe.

Amazingly Easy Irish Soda Bread

So moist and tasty! I served this with Beer Braised Irish Stew and Colcannon from this website. We used it to sop up the au jus from the stew. SO incredible!

My only complaint about this was there wasn't enough!!! OMG this was sooo good! The meat was incredibly tender, it melted in my mouth. There was five of us and the whole thing totally disappeared! I also used guiness - no trouble with bitterness. I think this was better than corn beef and cabbage. I added a couple of tablespoons of sour cream to the colcannon to enhance the creaminess. Deliciousness!

Blonde Brownies I

My first attempt at these didn't turn out quite right. They were super raw on the inside and crispy on the outside. But try try again! I think the recipe is written incorrectly. It should actually be written as 1 cup of flour, sifted. The difference being the flour is sifted after measuring a cup out not before. After doing that these came out perfect!

Irish Soda Bread

This was soooo good! I made it for St. Patties Day and brought it to work and it practically evaporated! We couldn't stop eating it and I was very sad when I ate my last piece. Super easy to make, I left out the caraway seeds because while I personally like them I wasn't sure how everyone else would feel about them.

Very flavorful and tasty. I reduced the oil to about 1-2 T and used fresh spinach instead. I think I added a dash of extra cumin as well.

These were okay, a little bland by themselves on the skewers. I'm sure they would have been better with pineapple chunks on the skewers but the actual recipe was lacking.

I made this punch for an Alice In Wonderland birthday party event I was catering. The guests all loved the punch. I used card suit cookie cutters to shape the apple slices.

Tortilla Pinwheels

Pretty good, and easy to make. Nice snack food. I used Ranch Dressing packets in the whipped cream cheese (1 packet for 16oz of cheese) and left out the olives, I thought it'd be too salty with the ham, ranch cream cheese, etc.

Grilled Tuna Steaks with Grape and Caper Salsa

Yum Yum! This is the first time I've worked with tuna steaks and like others I overcooked em a bit but this was still really good. I loved the salsa, I kept eating it by itself. I served it alongside some grilled cheesy polenta, the combo was awesome!

Annie's Fruit Salsa and Cinnamon Chips

I have to rate this more based upon client input than my own taste test. I tasted the salsa and chips separately, which were both good but I'm sure they're better together. I used square wontons instead of tortillas, sprayed each side with the butter spray, then dredged in the cinnamon sugar. I pressed the wonton squares into a mini cupcake pan and baked. Right before serving filled the cups with the salsa. I had people run up to me just to tell me how great they were.
