Cheesy Acorn Squash

Nice way of preparing acorn squash that isn't a sweet recipe. I subbed out the celery for asparagus. Quick and easy. I would recommend cutting down on microwave time, or at least checking half way through. My squash did not need nearly that much time.

Ginger Glazed Mahi Mahi

Angel Chicken Pasta

I made this pretty much as directed, with the exception that I cubed the chicken and added some sliced mushrooms and asparagus. Big hit at the party. I was a little skeptical at first, it seemed a little it'd come out a little too salty but the guests loved it.

Eggplant Parmesan II

Wow! I made this for a business launch party, and I had a so many compliments and rave reviews. One of the guests said and I quote "That's the best eggplant parmesan I've ever had, and I'm Italian!"

Jenny's Grilled Chicken Breasts

Super juicy, nice and light. I pierced the breasts and let them soak in the lemon juice for about 5 minutes before grilling. I also added a 1/2 tsp of garlic powder and basted the chicken with the lemon juice while grilling.

Lean Steak and Mushroom Salad

Very tasty although I did alter the recipe a bit. I kind of combined this recipe and the Flat Iron Steak and Spinach Salad recipe from A/R. I'm not a big fan of raw mushrooms so I sauteed 1/2 sliced red onion, in about 1 T of olive oil until tender than added 1 sliced portobello and 1 1/2 sliced red bell pepper, and a splash of red wine and cooked until tender. I served this on top of some baby spinach, with the steak, parsley, tomatoes and dressing from this recipe. So satisfying!

Dijon-Tarragon Cream Chicken

This recipe is divine! I did make several adjustments though, but regardless the recipe is great. I actually did this with 2 halibut fillets instead of 4 chicken breasts. I used only 1 T of smart balance olive oil spread. I kept the proportions for the sauce the same. I deglazed with about 1/4 C of white wine and added 2 gloves of garlic, minced. Once the wine had reduced I added the cream (I used fat free 1/2 and 1/2) and tarragon. Then followed the rest of the recipe as described. I served with "Fast and Easy Spinach with Shallots" from A/R and a butternut squash puree. I was in heaven, soooo good!

Fast and Easy Spinach with Shallots

Simple and delicious! What else can I say...I would recommend disregarding the cooking time and only cooking the spinach until it's just wilted. It'll only take a minute or two.

Peanut Butter Easter Eggs

Very cute and easy to make. I didn't find them to be messy at all. I used crunchy peanut butter instead to give it some texture and eyeballed the milk until it was the consistency I liked. People were very impressed by the presentation. A little to sweet for my taste but still a nice little treat.

Vegetarian Korma

OMG!!! This was sooooo delicious! I love it! I cooked it in a wok, and sauteed the onions with the curry powder and salt, and I added one tsp of garam masala. I used lite coconut milk instead of cream. I used only one potato and half a head of cauliflower. Served with some rice pilaf, recipe from the food network, and some garlic lavash. So good!! As some other raters have noted, it does take much longer for the potatoes to cook.

Veggie Fajitas

I really did not enjoy these. I'm not sure if other raters are from areas that do not readily have fajitas but these were really lacking in spice and flavor and way too soggy. Very disappointing! I had my doubts when reading the recipe since it was really missing a lot of common mexican spices. Should have trusted my instincts!

Quinoa Vegetable Medley

This was a good base recipe but the cooking times are very off in my opinion. I hate overcooked veggies. I would make the following changes. Cut down to 1 C of broth, the veggies create a lot of juices which were not completely absorbed by the time the quinoa was done. Let the quinoa simmer for 10 - 15 minutes before adding your mushrooms, zucchini, etc. I would also add the garbanzos at this time. I like adding a cup of quartered cherry tomatoes as well. Simmer for about 5 more minutes. Increase spinach to 3 or 4 cups and add at the end of cooking. The spinach will wilt from the heat of the dish. Adding a few shakes of crushed red pepper adds a nice little bit of heat too.

Homemade Black Bean Veggie Burgers

These were pretty good. I think the chili powder taste was a little overwhelming though. I couldn't really taste the black beans. I would probably reduce the chili powder to 1.5 or 2 tsp. I wouldn't recommend processing the beans as some other raters and myself did. You lose the texture of the beans. Otherwise I enjoyed it.

Margaritas on the Rocks

These were pretty good. Definitely better than store bough mix but not quite perfect. I like a stiff drink but the alcohol taste was a little too much for my guests and for me as well. Will probably still look around for a best recipe.

Moroccan Chicken

I really enjoyed the spice combo. When I measured my spices I used heaping measurements with the exception of the the cayenne. In hindsight I would probably do it as well because it wasn't as spicy as I would have liked. I did turn this more into a vegetable dish because I'm trying to have one meal that is primarily veggies. I subbed the chicken for cauliflower and added it when I did the carrots, onions, and garlic. I added red bell peppers in with the zucchini. It tasted great, I think it'd be even better with peas. I left out the celery. Served over garlic and olive oil couscous.
