Chocolate-Pecan Cheesecake

I made this without the pecans, adding orange extract instead of vanilla and finishing with ganache. An easy recipe to modify, it was a hit at my family Christmas party, and is sure to be a repeat.

Blueberry Muffins

I used large huckleberries instead of blueberries, increased the oil to 1/4 cup, omitted the nutmeg, and added a streusel topping. Very nice!

The only thing I would amend with this recipe is to add the seasoning to taste. It will be a bit strong when you first add it, then mellow as it soaks in. I also make it in half batches since I'm the only sushi eater in my house.

Wheat Crackers

Very nice! I added a tablespoon or two of white cornsyrup, and they taste pretty close to wheat thins. The edges were browned and crisp when the center was still soft, though.

Classic Fish and Chips

This batter gives a thick, crunchy coating. I used sunflower oil and kept the temperature at 340-360 degrees. The fish I bought were rather thin, so next time I'll use thicker filets to balance this awesome batter.

Downeast Maine Pumpkin Bread

I added millet to one loaf for some texture, and used applesauce in place of some of the oil. Very moist, the pumpkin balances perfectly with the spices.
