Yellow Squash Casserole

This was absolutely great. I cut this in half for the three in our family. One small/med squash is approx one cup sliced. This is a keeper!

Shoepeg Corn Casserole

I was given this recipe years ago by Beverly Painter of Blue Ridge, GA - who made this for us one night, and I was so excited to find it online here. After reading the other reviewers comments, I used sharp cheddar, 2 cans of green beans, and 4 oz sour cream. Other than that, I made it according to the recipe. This came out of the oven with a nice taste - and raves from my picky family. Thanks for sharing... For next time, I would probably cook the onion, celery, and green bell pepper, prior to mixing the rest of the casserole together.

Apple Dumpling Cake

I read the previous reviews and made it according to the recipe instructions. If I had been able to find organic Mac's, I would have left the peels on - but unfortunately could not find organic apples and peeled the apples. The recipe went together quickly. I used 1/2 cup applesauce, 1/2 cup oil and cooked it uncovered for 45 minutes. This could not have turned out any better! It came out just right - not too moist - and not overdone! Thank you so much for helping make my Christmas brunch a little brighter!!!

Turkey Dumplings

My husband said this was good and had a nice flavor, 4/5 stars. I cut it in half for an easy and quick supper for those nights when you need one. It went great with Carrots Augratin, available on this site. My son was expecting carrots, celery, in the turkey/gravy along with "home-made" drop-type dumplings like he's had before. Thanks Joan!

Ancient Roman Cheesecake (Savillum)

Looking for a easy, low fat dessert? This is it! The cheesecake came out of the pan easily and had a nice taste. It got 4 stars for presentation. Watch carefully, if you get a nice golden top, the edges may burn. The directions didn't say anything about greasing the pan, so I didn't... but probably should have. I didn't even think about it until it was too late and the cheesecake was in the oven. I'd make this again. I probably wouldn't serve this for company until I ironed out the issues of presentation and timing. Also, the cheesecake was only 3/4" high - so doubling the recipe may give it a little more volume.

Tuna Macaroni Salad

My husband and son loved this. I did this on the fly, without marinating and it came out great. He's a big fan of macoroni salad and he loved the lighter dressing! I added 2 cans tuna, green olives, sweet Vidalia onions (from Georgia) and Miracle Whip type salad dressing, because I didn't have any Mayo. You can play with the recipe and it still comes out great!

Shrimp and Octopus Soup (Caldo de Camaron y Pulpo)

I had a pack of surimi, baby shrimp, squid, and octopus that I pulled out of the freezer to make this. This made a good base. I made a couple substitutions: 2 quarts low sodium chicken broth for the water, 1/4 cup green chiles for the pasilla chile peppers, For seasoning, I used flax oil, minced garlic, chipotle red pepper, parsley, and salt.I left out the potatoes... Awesome good. This was a great find for a seafood lover. Thanks for sharing!

Fresh Dill Pasta Salad

My FIL brought up shrimp salad last week, and when he brought it up, it sounded so good to me. It used to be my favorite dish. We bought the ingredients and they cost about $22.00, however, we have a slew of fresh produce and pasta left over for another meal. Considering the spaghetti dish the other night cost much more at the store, I was happy. My husband demands Miracle Whip, so we did not use the mayo. I added another can of shrimp, cut back on the lemon, used dried dill (1/2 Tb) and only used 1 tomato, and 1 medium cuke. It's a nice medley of taste and texture. I could have added more dill, but know that the dish will age over the next two hours, and the 1/2 Tb will be sufficient. Thanks for sharing this recipe, and I hope to find many more recipes to try...

Mary's Roasted Red Pepper Dip

This is a solid hit - for company and family. My son keeps asking for this for dinner one of these nights... As the reviewers suggested, I added extra minced onion, 1/2 parmesan and with some reviewers saying it needed additional spice - I added a few chopped jalopenos. It was easy, fast and delicious on bagel chips from the deli section... Everyone enjoy! Thanks Doreen!

Busy Student's Supper

I started this recipe because I had cooked veggies, salmon & rice to use up - before I read the reviews & looked at the rating (2 star at that time)... It was dry and bland...so like one of the reviewers suggested, I added a can of condensed cream of mushroom soup and 1/2 cup low fat milk and then baked/microwaved til heated thru. Hubby thought it was good, and it was one of those recipes that I would make again if I had the ingredients on hand and needed a meal in a hurry. It's not a company dish by any means, but it is healthy comfort food with the rice & veggies and salmon... Thanks for sharing!

Tomato, Corn and Avocado Salsa

This came together easily and everyone loved it. Some (like my husband) were not sure of the chunky texture, but "the jalopeno junky", said it could have been hotter. Everyone else thought it was just right. My son said, it's surprisingly good!" The avocados at the store were not ripe, so the avocado ended up being left off. Instead, I used a can of black beans, rinsed. For extra bite, I added an extra tablespoon of lime juice, in addition to an extra teaspoon of ground chipotle pepper. Everything else went in pretty much as the recipe called for. Despite the avocados being left out - this came out well. It didn't need the avocado! As the salsa sat on the serving table, it developed its own juices - at least a cup in the bottom of its bowl, so we kept stirring it up. It kept getting better and better! Thanks for sharing!!!

Orange Gelatin Salad

This is home food for me - my mom used to make a similar dish every summer for us growing up. I don't know how many reunions she took this to. She used a blender to give the cottage cheese a smoother texture. I love this although my son prefers his jello just "plain please"...

Be Prepared Five-Bean Soup Mix

This had a nice flavor even without the bacon. I made this for 8 vs. the standard 24 servings, and just added the spices to the pot and let it go. Very easy with 5 minutes prep time.

My husband gave it a 4/5 with hot sauce! This was fun to make and went together easily. Good crockpot meal for a winter family dinner. Serve with salad and cornbread for a complete meal. Thanks Syd for sharing!

My mother made this every year for Christmas as I was growing up, and this year I wanted to make this dish for me - to make my Christmas a little more meaningful! This dish turned out great. I sized it for 2, since it was only my husband and I sharing this... Thank you so much for sharing this and making my Christmas so special this year. There were no alterations - and made it exactly as given.
