Fresh Dill Pasta Salad

My FIL brought up shrimp salad last week, and when he brought it up, it sounded so good to me. It used to be my favorite dish. We bought the ingredients and they cost about $22.00, however, we have a slew of fresh produce and pasta left over for another meal. Considering the spaghetti dish the other night cost much more at the store, I was happy. My husband demands Miracle Whip, so we did not use the mayo. I added another can of shrimp, cut back on the lemon, used dried dill (1/2 Tb) and only used 1 tomato, and 1 medium cuke. It's a nice medley of taste and texture. I could have added more dill, but know that the dish will age over the next two hours, and the 1/2 Tb will be sufficient. Thanks for sharing this recipe, and I hope to find many more recipes to try...

White Bean Soup

This recipe was very flexible, allowing me to adapt it to what I had on hand: oil/butter, frozen diced peas and carrot, ham, garlic, chicken broth, white beans, orzo pasta, frozen whole tomatoes from our summer garden, thyme, and parsley. I added a little bit more butter for seasoning and it was awesome!

Harvest Rice Dish

As some of the other reviewers note, this is a very forgiving recipe. It has a nice flavor and texture because of the nuts. It was easy to make and I was able to substitute items I didn't have from my cupboard. It came out great! I used 1/2 c. pine nuts, 2 c. veggie broth, 1/2 c.jasmine rice, 1/2 wild rice, 3 T. oil (dairy allergy), 1 c. shredded carrots, (no brown sugar), 1/2 c. dried cranberries, 2 c. mushrooms, 1/2 t. orange zest. Thank you Kathy for sharing. It really is a nice dish for company. My family tends to be very "meat and potatoes", but even they enjoyed it, and my vegetarian friends loved it. One of my other guests thought that by adding hamburg, it would be a really good main dish for the meat-eaters!

Tofu Lasagna

This is my favorite lasagna recipe. I've made this over and over. You have to be sure to get the moisture out of the Tofu before going any further.

Macaroni and Cheese III

How do you spell comfort food? I really enjoyed this and will make it again - I loved the taste of the cheese and the tomatoes together. My mother used to make a mac and cheese with sharp cheddar, so I was trying to duplicate what she used to prepare... Like several of the reviewers, after mixing, I sprinkled cheese on the top and popped it in a casserole under the broiler for a couple of minutes. Most of the reviewers suggestions said to increase the cheese, but adding 3 cups of cheddar cheese between the sauce and topping was still not enough. I would suggest next time trying to decrease the macaroni by half which would make it saucier and bring out the taste of the cheese even more... Thanks for sharing!

Hearty Lentil Soup

I love homemade soup and this one is a keeper! It's full of good for you ingrediants, low fat, high fiber and high flavor. My son's girlfriend and I love lentils, but no one else will eat them. So with Nikki was coming over, I made this just for the two of us. I left off the onions (allergy) the leek (didn't have any) and used Italian diced tomatoes and Bragg's Amino Acids instead of the woy and worchestshire sauce. Then like the other reviewer, I used my immersion blender for half of the soup before serving so that it was a more blended consistency. Thanks for sharing!

The Best Mashed Potatoes

My husband and my very picky father-in-law gave these a 5. My own adaptation was to leave the skins on - and they came out great! Per the previous reviewers suggestions, I went with decreasing the Parmesan to 1/2 cup, and decreasing the cream cheese to 4 oz - and then because of the stiff consistency, we added more milk until the consistency was right. Thanks for sharing and making our Christmas brunch a little more special!

Scalloped Oysters I

My mother made this every year for Christmas as I was growing up, and this year I wanted to make this dish for me - to make my Christmas a little more meaningful! This dish turned out great. I sized it for 2, since it was only my husband and I sharing this... Thank you so much for sharing this and making my Christmas so special this year. There were no alterations - and made it exactly as given.

Shoepeg Corn Casserole

I was given this recipe years ago by Beverly Painter of Blue Ridge, GA - who made this for us one night, and I was so excited to find it online here. After reading the other reviewers comments, I used sharp cheddar, 2 cans of green beans, and 4 oz sour cream. Other than that, I made it according to the recipe. This came out of the oven with a nice taste - and raves from my picky family. Thanks for sharing... For next time, I would probably cook the onion, celery, and green bell pepper, prior to mixing the rest of the casserole together.

Apple Dumpling Cake

I read the previous reviews and made it according to the recipe instructions. If I had been able to find organic Mac's, I would have left the peels on - but unfortunately could not find organic apples and peeled the apples. The recipe went together quickly. I used 1/2 cup applesauce, 1/2 cup oil and cooked it uncovered for 45 minutes. This could not have turned out any better! It came out just right - not too moist - and not overdone! Thank you so much for helping make my Christmas brunch a little brighter!!!

Wassail Punch

We have a friend who introduced us to Wassail a few years ago - and it has grown on me! It's become a new festive favorite for my son and I. I resized this for 6 - added additional cider, decreased the lemon and added a cup of cranberry sauce as other reviewers suggested. I would make this again!

Green Salad with Cranberry Vinaigrette

Kim's Ultimate Meatloaf

We did this for Christmas brunch - and I got more compliments than I usually get for doing the traditional turkey! I made it with ground turkey/1/4 ground chuck. I cut back the brown sugar to 1/4, and added red pepper to the top for some additional kick. The family loved it. My husband did not even need any ketchup for his meatloaf!!

Jamie's Cranberry Spinach Salad

I made this for a church dinner exactly as written & it got good reviews & the dish came home empty. 6/2010 Update: I've made this several times for family company and have even experimented with blueberries and walnuts instead of the cranberries and seeds. My husband was quite surprised with how good this turned out. Thanks for sharing Jamie!

Tim's Sausage Stew

This got a 4/5 from my husband who said it would be a 5 if it were spicier. He probably would have liked Tabasco added, but I'm thinking maybe andouille sausage. I think letting it simmer longer would have enhanced the flavor enough. I sized it for 2 servings but it made plenty because I added more veggies. I added garlic, a can of Great Northern beans (w/o juice), green & red peppers (one each), sliced mushrooms and 2 stalks celery. It was a nice presentation with the red/green color combination. I also substituted olive oil for the butter, and veggie broth instead of the chicken. Tim, thanks for sharing!

Busy Student's Supper

I started this recipe because I had cooked veggies, salmon & rice to use up - before I read the reviews & looked at the rating (2 star at that time)... It was dry and bland...so like one of the reviewers suggested, I added a can of condensed cream of mushroom soup and 1/2 cup low fat milk and then baked/microwaved til heated thru. Hubby thought it was good, and it was one of those recipes that I would make again if I had the ingredients on hand and needed a meal in a hurry. It's not a company dish by any means, but it is healthy comfort food with the rice & veggies and salmon... Thanks for sharing!

Zucchini Parmesan

This had a nice flavor and was eaten quickly by my family. Like the previous reviewers, this would be even better with layering like lasagna, with additional cheese & veggies. As the instructions were given, the Zucchini slices were difficult to stir with the sauce, as I had some large zucchini I was using up. Good job and thanks for sharing!
