Iced Pumpkin Cookies

These were a hit! I love that they are not dense, but very light and fluffy. The only change I made was to use butter-flavored shortening instead of butter. Everything I left exactly as the recipe called for. I will be making these again!

Grilled Tri-Tip with Oregon Herb Rub

This is an excellent rub! The first time I made it exactly as the recipe and it was 5 stars, hands-down the best tri tip I've ever had (and I live in Central CA where Santa Maria Tri Tip reigns supreme!). The second time I made two changes: add 1 tbsp brown sugar and rub the tri tip very lightly with 1/8 tsp worcestershire sauce before applying the rub. Even better!

Quinoa and Black Beans

This was delicious! I had never had quinoa before and this was a great first dish to try it out on. I did add a can of No Salt Diced Tomatoes with Basil, Garlic, and Oregano. Otherwise, kept everything else the same. Definitely will make this again!

Curried Butternut Squash and Pear Soup

WOW! This is amazing! The only change I made was to reduce the chicken broth to 3.5 cups because I like a bit thicker soup. Otherwise, I made this exactly as the recipe states and this is now a permanent recipe in my box!

Red Skinned Potato Salad

I've made this twice: exactly as the recipe states and with the following adjustments, per my personal taste. Both versions were excellent and family & friends loved them! Cut mayo to 1.5 cups / substitute green onion for white onion / add 1/8 tsp. of white pepper

Maple-Glazed Yams with Butter Pecan Topping

This was awesome! I've always made yams the way my mother did, with just a brown sugar glaze, so I thought I'd try something new, but not marshmallows because I hate those on yams. This fit what I was looking for perfectly! The family emptied the platter in record time and were asking for more and the recipe. Definitely a keeper!

Basil Chicken over Angel Hair

Excellent recipe, but I gave it 4 stars instead of 5 because I did make changes based on the suggestions of previous reviewers: 1. Instead of the chopped tomatoes, I used 2 cans of Del Monte Diced Tomatoes w/ basil, garlic & oregano flavor. 2. I used a basil paste (sold in small tubes in the tofu section) because that was all I had at home. 3. Omitted the hot pepper sauce as my family does not like anything spicy. 4. Added 3 oz. (1/2 can) tomato paste to thicken the sauce. 5. Added 1/2 teaspoon sugar. 6. Added a splash of white wine to the onion and garlic saute. Great base recipe that you can add or remove ingredients to suit your taste. Will definitely make again!

Berry Delicious

What a perfect, healthy, refreshing snack. Very thick too! Some changes I made: 1) Halved the recipe (it was just for me) 2) Substituted plain yogurt with no added sugar for the strawberry yogurt 3) Substituted 2 packets Splenda for the sugar. If I could have found no sugar added strawberry yogurt I would have used that, but I could only find plain. It still tasted wonderful!

Banana Pancakes I

I thought that these pancakes were just 'okay'. They had a nice flavor, however, they were very thin and not at all fluffy. I will probably stick with good old fashioned pancakes in the future.

Famous Butter Chicken

I tried this recipe tonight because I wanted something quick and both me and my husband were impressed. As others suggested, I cut the amount of butter in half, which turned out just perfect. I also added 2 tsp. italian seasoning and 2 tsp. grated parmesan cheese to the cracker crumbs and sprinkled just a little garlic salt on top of the chicken before I put it in the oven. This is one I will be making again. Thanks for the quick, easy and DELICIOUS recipe!

Chicken Parmigiana

This is the first time I've made Chicken Parmigiana and this was WONDERFULL! I used Five Bros. Marinara & Burgandy Wine sauce and Italian Bread Crumbs. I also used Foster Farms Tomato & Basil Marinated Chicken Breasts and the chicken was so moist and tender that one of my fiancee's friends was using the back of the knife by mistake to cut the chicken and it worked just fine! Will DEFINTELY be making this again :)
