Brooke's Best Bombshell Brownies

I'm a brownie man. I made these using the Brownie pan over at amazon (the one where every piece has two chewy sides). These are the best brownies I have ever had in my life! I added half a cup of walnuts broken up, but that's it. Recipe was perfect! I just won't look at the calorie content :)

No Bake Cookies III

I started making this recipe about a month ago and have since made over ten batches for different people/functions. They take about ten minutes to make including the time to get all the ingredients from the cabinet. I quickly divide up the items to be boiled and separate them from the items to be added (pb, vanilla and oats) so they can be added quickly after removing from heat. I then lay out a sheet of wax paper and then get to work. So easy! Boiling seems to be about 2 1/2 minutes to get just right. This is with adding 3/4 cup crunchy peanut butter (the peanuts are awesome in there!), 1/3 cup coconut (even better texture!) and 1/2 cup less sugar (have to do something about that 170 calories per cookie.. hehe).

So awesome! My only problem with this dish is that my wife doesn't make it enough! We make the dish just as it asks. A little prep required to get the ingreds, but it is very much worth it!

Pumpkin Bread IV

My wife is pregnant and had some pumpkin bread at a patch nearby and loved it so I thought I would make her some. This turned out perfect! I made this at halftime during a Sunday game with almost no effort. Three loafs, 45-50 minutes and a perfect texture. I used 1/2 cup less sugar and added 1 tsp on ginger as well. Next time I will modify just slightly and use 2tsp of nutmeg and cinnamon, 1 tsp of cloves and 1 tsp of ginger. I didn't add ginger as some say, but that couldn't hurt. Also, there is a post saying how a 28oz tin of puree gives an extra 1/2 cup, well I measured a 29oz tin (don't know why they'd have this size) and it just barely filled the three cups.
