My wife is pregnant and had some pumpkin bread at a patch nearby and loved it so I thought I would make her some. This turned out perfect! I made this at halftime during a Sunday game with almost no effort. Three loafs, 45-50 minutes and a perfect texture.
I used 1/2 cup less sugar and added 1 tsp on ginger as well. Next time I will modify just slightly and use 2tsp of nutmeg and cinnamon, 1 tsp of cloves and 1 tsp of ginger. I didn't add ginger as some say, but that couldn't hurt. Also, there is a post saying how a 28oz tin of puree gives an extra 1/2 cup, well I measured a 29oz tin (don't know why they'd have this size) and it just barely filled the three cups.
