About this Cook
My favorite things to cook
i just love cooking for my husband. i like making veggies appealing to people who don't typically like veggie dishes. leeks rock my world. I consider myself to be an adventurous eater and enjoy the odd bits of critters like cheek, jowl, gizzards and tripe. The only foods I don't care for are really spicy foods and green peppers (except in gumbo).
My favorite family cooking traditions
my Mom cooks a great cabbage and chicken dish. my Aunt Mary makes "Burnt Macaroni and Cheese" for most of our family gatherings while Grandma made little pastry butterflies. Nana rocks my birthday with a delicious pecan pie and her broiled sandwich is a favorite of mine. on the other hand, i could always count on my Dad to make his tuna noodle casserole when mom ent out of town. blech!! (love you, Daddy) I enjoy cooking from scratch for my husband. My husband says that every time i make dinner he thinks "oh! my favorite!" Guess he's got a lot of favorites. :)
My cooking triumphs
i've had several dishes that i just threw together. i serve them to my husband with the preamble "i just threw this together, so it may not taste too good." he's loved almost every one of them! I make a pretty good gumbo and so far, my husband raves about almost all of my cooking. I'm even getting good about cleaning while I cook. Thanksgiving was amazing in that the kitchen was almost totally clean when I was done cooking.
My cooking tragedies
every time i make my breaded eggplant dish i set off the fire alarm because of the breadcrumbs that fell off the eggplant burning.

Smoky Cod and Parsnip Chowder
I really enjoyed this soup. I didn't have any smoked cod but i added andoullie sausage which gave an excellent spicy, smokey flavor. My husband loved it as well.

Baked Trout Saratoga
I omitted the wine (none around) and made this with 2 trout. I made sure to drain the tomatoes well so it wouldn't turn out soggy.

Tuscan Soup
I used a large plastic roll of spicy sausage and added a little cyanne pepper. It was delicious! My husband raved about it all through dinner.
