Strawberry Shortcake Drink

I used homemade frozen vanilla yogurt and Smirnoff Whipped Vodka. I skipped the ice. This is off the HOOK. For me, I think that it could use double the vodka and a couple more strawberries but as is, I enjoyed it very much. EXCELLENT cocktail.

Herbed French Bread

I halved this recipe. I chose to use margerine because my son is sensitive to butter and I added a heaping teaspoon of garlic powder to the margerine spread. The boys LOVED this--they ate every single piece. Great simple side to a spaghetti dinner.

Marinara Sauce III

I sauteed the vegetables in 1/4 cup of the olive oil before adding to the other ingredients. I ended up throwing all the ingredients in my small slow cooker and letting it cook on LOW for most of the day. This was just what I needed for dinner tonight using bits and pieces of what I had on hand. Next time, I'll throw in some meat.

Bailey's Banana Colada

I used a very large frozen banana as I did not want to add ice cubes (I'm one of those weirdos who does not like ice in her smoothies). Because I did not have coconut cream, I used a jigger or so of Malibu coconut rum and a jigger of fat free evaporated milk to make it creamy. The irish cream I used was homemade. This was FABULOUS. I loved this cocktail.

Thousand Island Dressing I

I increased this recipe to six servings. I used lactose free whole Vitamin D milk and reduced fat mayonnaise in this recipe. Instead of using 1 1/2 of a dill pickle SPEAR (that's what I got when I increased the recipe to six servings), I used two garlic dills. I did taste it after I made it and ended up adding a little onion powder and fresh ground pepper. I used this as a kind-of a dip/side for Potato Reuben Casserole. Kids thought it was fantastic--this would make a great fry dip.

Potato Reuben Casserole

I did make real mashed potatoes for this recipe and I increased the swiss cheese. My kids ate themselves sick on this casserole--I had a small portion and had to hold myself back from eating another one. I served this with homemade thousand island dressing and roasted broccoli. Next time, I think I'll sprinkle caraway seeds on top or add buttered rye bread crumbs--I think that was the one thing I was missing. As is, we loved it.

Beanie Weenie Quesadilla Rolls

This is good with leftover baked beans or even leftover chili. This also works with kielbasa or smoked sausage. Great quick lunch. This is one of the first things I make for lunch next day following a big barbeque or the day after making a big pot of chili. My husband loves this for breakfast, adding eggs to the rollup!

Cheese Quesadilla Lunch

I used homemade salsa, regular shredded sharp cheddar cheese (I don't buy reduced fat cheese) and I omitted butter because I was using a non-stick skillet. This was a great quick lunch that used up a couple tortillas I had to use or lose. I'd make this again but next time I think I would double the amount of cheese and beans only because I would have liked a little more to balance out the salsa amount.

G-Street Surprise

I used Smirnoff Whipped vodka and homemade lemonade (made with Truvia). Both my husband and I adored this cocktail--the Whipped vodka was AH-mazing in this. After we finished off the first, I turned right around and made another. For us, the vodka amount was just right though the second time around we added another glug. ;)

S'mores Pops

This is one of my kids favorite treats because they can make this almost by themselves. Instead of using magic shell topping, I melt a cup or so of semi-sweet chocolate chips with a couple teaspoons of butter or shortening in the microwave until smooth and dip the marshmallows in that. We like using cinnamon grahams or chocolate grahams to roll the chocolate covered marshmallows in. GREAT cheap treat made with ingredients that are in most everyone's pantry.

Tomato Soup Cake II

I had to adjust this recipe slightly to reflect what I had on hand. I used half AP flour and half organic wheat flour. Instead of shortening, I used vegetable oil and because I had some on hand, I also added a couple handfuls of organic raisins. I chose to make muffins out of this recipe. I got 12 big muffins out of one recipe. I baked them at 350* for almost 23 minutes. We have not tried them yet but they look very pretty and smell amazing. I'll update my review once we've had a chance to try them.

Cheesy Chili Mac

Comfort food night (or broke as heck and using what we've got in the freezer/fridge/cupboards). I used red pepper instead of green and added some fresh minced garlic when I sauteed the vegetables. To make it more tomato-ey, I used one can of V-8 tomato juice instead of water and I added an additional teaspoon of italian seasoning as well as fresh ground pepper. I made no other changes. The boys really liked this. My husband made a comment that this was a lot like Hamburger Helper but much better. NO leftovers--the boys ate it ALL.

Old-Fashioned Scalloped Corn

Comfort food night(or also known as broke-as-heck and using what's in the cupboards). I cut this back by half. Instead of using half a can of creamed corn, I used two full cans. I threw in some Frank's Hot Sauce into the creamed corn mixture. I used Ritz crackers because that was what I had on hand. I tossed a couple tablespoons of Kraft parmesan cheese (in the green canister) in with the cracker mixture before I sprinkled it over the creamed corn. My boys LOVED this--my oldest boy had two big helpings and asked for a third but my husband had already finished it off. NO leftovers.

Ginny's Cheezy Macaroni

This is EXACTLY how Mom made her Macaroni and Cheese only she used shredded gov'ment cheese. I get the same result now if I use half Velveeta, half sharp cheddar cheese. Comfort food at it's best. When I make this, my family inhales it. If you have a larger family or want seconds, best double the recipe. Follow the directions exact and it will come out exactly as it should--do not peek at your dish, leave it be for that whole hour it's baking.

Apple Bread

I halved this recipe. I increased both the baking soda, baking powder and vanilla extract in this recipe to full teaspoons. I added a quarter cup of unsweetened applesauce only because some of the reviewer's had mentioned that the recipe was a bit on the dry side without some kind of additional liquid. I made muffins out of this recipe, getting exactly 12 out of one recipe. Before baking, I sprinkled a little cinnamon-sugar over the top of each muffin. I baked them at 350* for 20 minutes. I'm really glad I added the applesauce--if I hadn't these really would have been dry. My husband and kids ate all 12 this morning, either for breakfast or packed in bag lunches and they all commented that they were good.

Potatoes and Corn Soup

This is one of my favorite simple potato/corn chowder soup recipes. What I like to do is instead of cooking on the stove, I layer the potatoes in my crockpot, then saute the celery with the onion and some fresh minced garlic in a little butter before adding it to the crockpot with the chives and some fresh ground pepper. Instead of using chicken bouillion (which for some reason, I rarely have on hand), I cover the ingredients with organic chicken broth. I cook that on HIGH most of the day, then mash with an old fashioned potato masher, then adding the corn. This recipe is very versatile as you can add in your favorites if you like, like shredded cheese, crumbled bacon or more sauteed vegetables or eat it as is. Great "until payday" lunch or dinner food as it costs so little to make.

Pumpkin Butter I

I cut the sweetness back by half and I used Truvia instead of granulated sugar. (When googling the conversion chart, I got 18 packets to equal 3/4 cup of sugar.) I made no other changes. This was very simple and the end result was absolutely perfect--the smell while cooking was fabulous. I'm glad I cut the sugar by half, I think that if I hadn't, it would have been too sweet for us.

Four Layer Delight

I make the filling with reduced-fat cream cheese, "light" whipped topping, sugar-free CHEESECAKE instant pudding and fat free evaporated milk. If I have it on hand, I'll spread another layer of light cherry pie filling over the top. I almost always have at least one person ask me for the recipe.

Healthier Old Fashioned Potato Salad

I ran a small sweet onion (it turned out a little more than a half cup, but not by much) and the garlic clove through the mini-food processor before adding it to this potato salad. I also used dill pickles instead of sweet pickle relish only because we don't care for sweet pickles. It didn't have enough "liquid" for us--I added a quarter cup more of the mayonnaise and a second tablespoon of dijon mustard. This is a great simple potato salad recipe--everyone loved it. Next time, I'll double it and add more garlic. As with any potato salad, the longer it sits, the better it gets.

Beverage Cubes

I like to use a mix of lemonade and black tea to make ice cubes. It's one of the best ideas because you can enjoy your tea but not get cranky over regular water-made ice cubes watering down your tea.
