Baked Apple Turnovers

I'm not a big cooked fruit lover. After accidentally pulverizing my apples (and, incidentally, making applesauce), I REALLY loved this recipe. My only recommendation is to really make sure you cool down that filling. If you put it onto the pie crust warm, you'll have a lot of difficulty putting it onto a cookie sheet. Roll out the crust, position it where you want it on the cookie sheet, THEN fill it. Otherwise, you could end up with a mess. I rolled it out on parchment paper and transferred the turnovers that way. This is really worth trying!

This was AMAZING, FAST, and DELICIOUS! This is a major, major keeper - great for families in a hurry to sit down and enjoy a nice dinner together. Add some garlic bread and salad, and you're good to go!

Easy Sausage Pizza by Johnsonville®

I didn't make this the easy way. I made my own pizza crust and sauce, halved the amount of sausage, and spread it out over two pizzas. Then, I added sliced green and red peppers and onions. The pizza was delicious, and can handle having veggies added to it with ease! It was FABULOUS and didn't last long in our household.

Quinoa and Black Bean Chili

I left out the chipotle, replaced tomatoes with chili tomatoes, cut down the chili powder to two tsp., and the cumin to 1 tsp. I didn't want it too spicy for the kids. It went over well.

Delicious Ham and Potato Soup

I've made a lot of potato soup in my time, and I have to say that this is definitely deserving of the full five stars. I thought the butter may have been much, but made it as directed with the exception of using 2 tsp. of chicken flavored base instead of bouillon (which wouldn't make much of a difference). I love my pepper mill, so I hit the soup up and didn't need any extra salt. This went well with my own recipe for homemade bread....just enough of everything and absolutely wonderful as is. I used white potatoes due to getting them on sale.

Charley's Slow Cooker Mexican Style Meat

I love spicy food, but I knew the ingredients would be overkill for my family. I left out the peppers and cayenne pepper. I added a little more water, and, after cooking everything as directed with the ingredients I left out, I took the meat out, shredded it, and gradually added some of the liquid until it was the way I wanted it. The way I made it was enough heat for us. I didn't think it was over the top, but I think my issue may be with the meat cut. My husband and I both had this desire to put BBQ sauce on it and have no idea why. Maybe I'll try it since we were both considering it.

Turkey Bacon Breakfast Burrito

I think this is a good basic recipe that could use some improvement. The idea behind it is fabulous. However, the instructions regarding the eggs (are they suppose to be scrambled?) don't really make sense. I assumed the eggs were being scrambled, and I added 1/4 cup of water to them so they wouldn't be rubbery. Also, I think two cans of chili beans could be used for this and could be cooked into the eggs after the eggs are done cooking. I would also melt the cheese into the eggs while they're cooking. American cheese would've been a great choice for this. I have a few ideas to make this better and wrote about it in my blog. A person could make this over 50 different ways, and I think that using your own ideas and adding ingredients you love (vegetables, cheeses, etc.) would make it your own. It makes so much that once you have it the way you want it, the burritos would be easy to wrap up and take on the go.

Black Bean Soup

I used dried black beans using the quick soak method. After draining the beans, I added a couple cups of water and followed the rest of the instructions. I simmered (to soften the beans) and added a can of diced tomatoes with chilies. I also substituted a red onion instead of using yellow (just because I love red onions. I loved the bean soup with the tomatoes. I mixed some of it with rice later on for a side dish...so good!

Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad

I used a Mediterranean seasoning with this recipe. This recipe contained such a small amount of ingredients to use and packed with flavor. Don't cook your steaks until they're well done with this! Medium rare to medium is perfect. Some might prefer a bit more salt, but I really enjoyed the simplicity of this dish. Wait until you have it on the table and decide to salt later. I was pleasantly surprised. Also, it might be tempting to add some oil to the salad, but refrain! You won't miss it! I have an infrared grill and put hickory chips in prior to cooking the steaks. I put the steaks on when they started to smoke. This is a simple recipe to make with great end results (especially if you're experienced with the grill).

Quick and Healthy Turkey Chili

This recipe wasn't over the top at all, but it was easy, so that's always a benefit. I have a vegetarian in the house and decided to eliminate the turkey. Instead, I drained an extra can of beans and added it into the mix. I take the whole family's opinion into consideration when reviewing, and when the kids will eat it, it's a winner.

HERDEZ® Mexican Cornbread

This is more of an authentic cornbread with the elimination of flour, no eggs, etc. With that, I will admit that I'm more of a lover of a southern cornbread that combines flour, eggs, butter...did I leave off sugar here? With that said, there's a benefit to this recipe: it could potentially be gluten free...and if you're like me and have someone in the family who has an intolerance to gluten, this is a relatively easy way to give them something with a little more taste than some of the bland things on the market. I'm not clear as to whether or not Herdez is a gluten free product, but surely something could be substituted if not. For those on gluten free diets who are new to all of this, just use caution checking your ingredients to be sure that everything you're putting in does not contain gluten...that would include the cornmeal.

HERDEZ® Creamy Pasilla Enchiladas

This went over well at our house! Instead of cubing the chicken, I shredded it to make sure all the flavors mixed into it. I cut fresh white corn off a cob. I wrapped the enchiladas in a flour and corn tortilla which tasted fabulous. I loved the mixture of cream cheese and sauce for the top...that was really great. In the future, I may mix that in with the chicken and Herdez sauce. Then, I'll use enchilada sauce under and over the top. I would've loved more sauce with this, but it was good as it was!

HERDEZ® Sweet Chipotle Chili Lime Chicken Wings

The chicken wings had a very unique taste - one that I liked! I'm not a cilantro fan (one of those people who think it tastes like soap - heard that's some sort of genetic thing, but it's a curse), but I had to add it because it was pretty. My fridge has been acting up and froze my chicken wings, so I was thrilled that I could make this dish WITH EASE. Yep, and that's the best part of this recipe...super easy! I dumped all the sauce on in the end. Nothing like some finger-licking, good wings. My lime was sold as a LARGE lime, so I may have had more juice than intended, but it was good! Great job on this one!

Grilled Portobello Sandwich with Roasted Red Pepper and Mozzarella

I love mushrooms, so this was a real treat. I didn't have basil on hand, but used lettuce and tomato. I'd advise anyone making this to pat the mushrooms dry or risk having a wet bun. Overall, it was great for a mushroom lover...and I'd even eat it without the bread.

California Grilled Veggie Sandwich

This was great! I used a frozen focaccia bread that made this incredible! I will definitely make this again! We made it vegan for one of my daughters who left of the mayo blend and feta and added a vegan cheese. WONDERFUL!
