Creamy Peanut Butter Fudge

I don't like peanut butter and thus, do not like peanut butter fudge. . .but, man, do I LOVE this stuff! Incredible! I took other folks' advice and stirred until it came to a rolling boil over medium heat after which I left it alone for 7 minutes to boil on its own. I took it off the fire and added the marsh. cream, then peanut butter and vanilla, NOT waiting for it to cool (as another reviewer stated)incorporating each before adding the next AND I used a hand mixer. Not too difficult and with great results; beautiful to look at, creamiest texture ever and incredible flavor. Thank you so much for this one!

Maple Walnut Fudge

I took JillP.'s advice regarding extra maple and she was right! This is the BEST MAPLE FUDGE I've EVER had. I gave up fudge about 4 years ago after screwing up 2 batches. Just figured I sucked at it and moved on to other things. This year, however, I decided to try my hand again and am so glad I did. This is not only FAR EASIER than the recipes I'd followed before, it tastes so incredible. . .like Candy Shoppe type fudge! Thanks so much for this great recipe and for your modifications, JillP.!!

Bierrocks III

First- I made my own pastry from scratch and it was fantastic and I will not use anything else now. The filling I thought was incredibly bland (I followed the recipe initially and tasted the filling before coming to this conclusion). I wound up adding extra salt, pepper, some garlic, and about 2-3TB of deli mustard. After these fixes, these were outstanding, wonderful pub food delights!

Fiesta Pinwheels

Great as written but. . .I have taken this recipe and added chopped jalapenos, removed the picante sauce, and added cheddar cheese and it is incredible!!! Tasty enough this way that you don't need to serve it with salsa! I do think the next time I make these I will serve with guacamole, though, I think guac would really compliment these well!. Thanks for a great recipe!

Creamy Oriental Dressing

This dressing is WAY TOO SWEET the way it is written. I have tried it as written and was not happy with it at all. I have taken the mayo, salt, soy, added xtra ginger, a bit of onion and garlic powders, a few drops of sesame oil, some white rice wine vinegar and a bit of ketchup for at tad of sweetness and color. My way, in my opinion anyway, made it much more authentically asian.

Grandma McAndrews' Irish Soda Bread

I have made alot of Irish Soda Bread in my day. I usually use Katie Reilly's mix, but forgot to order it in time for our annual St. Patrick's Day meal so. . . this is why I tried this recipe. This is quite a good recipe. I do still prefer Katie Reilly's as I like my soda bread a bit sweeter than this one came out. But I must say that of ALL the from-scratch recipes I've baked, this one is the best by far!

Fried Corn with Bacon

Used ham as I didn't have bacon on hand + TB butter. Added 1/2 a small onion and a clove of garlic. 1ts salt and about a 1/2 ts of paprika. We found this boring as written but with my doctoring- my family loves it.

Baked Slow Cooker Chicken

I was sick when I made this so I couldn't tast it at all. My husband and kids loved this and have asked me to make it again. BTW- followed the recipe exactly EXCEPT that I used a whole FROZEN chicken and cooked on high for 8 hours. Plenty juicy, I just couldn't taste it because I was so stuffy :(. Looking forward to making it again and being able to taste it!

Simple Salisbury Steak

Slow Cooker Scalloped Potatoes with Ham

Pretty good but I modified it as well: 1ts. salt 3/4ts. garlic 1.5c cheese 2TB butter 1/2c parmesan 1/2c sour cream and i used evaporated milk instead of water. Next time I will follow my recipe but I will use green onions and I think with all of that- it will end up a 5 start recipe.

Corn Tortillas

I thought for sure after the reviews I'd find a way to mess these up but I didn't. My dough started rather dry and crumbly so I added drops of water a couple of drops at a time until the dough stuck together WITHOUT sticking to my hands. I don't have a press so I pressed them between pieces of parchment, flattening them with the bottom of a pan, then rolling them to the desired thickness with a rolling pin. I used a teflon pan as I have a comal but it doesn't do me any good on this lousy sealed electric stove top (Oh, how I've missed gas these past 6 years) and I had no problem, they turned out fine. Lastly, I made sure they went straight from the pan to a bowl with a lid and they were perfect! I will never again buy store bought.
